"Ever since our first planting of cacao trees in 2002, I’ve had a dream to make Hawaii the Napa Valley of Chocolate. This vision was at the time quite impossible — we didn’t know if our chocolate was any good yet! But it was the seed of an idea. And like any good idea, it persisted.
I became fascinated with wine, and the wine business. I read that in the mid-1970’s Napa’s Judgement of Paris upended the idea that only the French could make great wines. That idea was picked up by some in Napa and they cultivated it into a multi-billion dollar agricultural industry.
Since Lydgate Farms was first awarded Top 50 Best in the world (and for every award in Europe since then) it’s been hard for me not to see the parallel — American upstart cacao region gives a world-class performance, old world doubters be darned. This was our Judgement of Paris, the seed to be planted and cultivated. But how could we make Hawaii the Napa Valley of chocolate?
A few years ago, I decided to take on the role of President of the Hawaii Chocolate and Cacao Association. As I worked on the organization, I made frequent trips to Napa Valley, making deep study of the wine and food business there. My thinking was, how did Napa Valley become what it is today? And how could we learn from them? We follow their path, using their formula.
Our vision is to make Hawaii the global center of excellence for cacao quality, research and education, and Chocolate Tourism. We’ll never produce the volume of cacao other places can, but I believe we can produce the best. We can be a place where people come to learn — a center for much-needed science. And, we can be a global destination known for good chocolate — much like one takes a visit to Wine Country, visitors can come to Chocolate Country. And this will help to preserve our agricultural lands and care for our aina." ~ Will Lydgate
Just prepared and served a great Mexican Meal for Bahelorettes in Palm Springs this weekend! Kimm was Bartender Extrodinaire and Server of Ceviche, Fantastic Guac, Carne Asada and Chili Lime Chicken. Borracho Beans and Rice were some of the sides and Key Lime Pie for everyone! Salud!
Braised Short Ribs Roasted Salmon Rosemary Petit Potatoes. Impeccably sautéed Broccolini, and an Herb Magic Salad with Garlicky Lemon Vinaigrette
Another fabulous fun dinner in the books in Palm Springs Great group of girls. Mediterranean menu did not disappoint!  this lemon ricotta cheesecake with cream and berries, was a Great end to  the meal
I’m not sure how I feel about this. 🤣

To say this man’s songwriting and novels lended to a particular chapter of my life may be an understatement
On a personal note… This is my breakfast sandwich with egg cheddar bacon, and a little arugula basil tomato salad. Magnifique. 
Serving Carpaccio with Orange and Olive Salsa and delicious Brushetta before Filet and Scampi with Mushroom Risotto.
Carmelized Fig and Orange Salad Tomatoes with Chard and Toasted Almonds Roasted Chicken Jerusalem Artichoke and Lemon. And….Honey Roasted Carrots with Tahini Yougurt. Incredible ingredients in each dish! Yotam Ottolenghi recipes. He’s a Genius
