The first time I had a chicken salad sandwich was at a place called First Crush in Potsdam, NY. It had grapes and was served on a croissant, and was so delicious I decided I had to learn how to make it on my own to taste as much like that sandwich as possible!
The dressing is mayonnaise based and the filling has chicken, fresh grapes, toasted almonds, and celery. There is a touch of fresh dill and dijon mustard bringing the flavors together to make your tastebuds happy!
This is a great way to use up any leftover chicken you have and can be served in lettuce cups, pita bread, a croissant (obviously my fav!) or pita bread. It makes a perfect lunch sandwich, or a light dinner.
You can also just skip the grapes if you want, or you can substitute with dried cranberries or cherries. I love that touch of sweet with the savory!
