A few images from the wedding we catered for at Pilgrims Rest on Monday. Canapés, bbq main with lots of salads and then a trio of desserts…. lemon posset, chocolate brownie and sticky toffee pudding with rum toffee sauce …. The sticky toffee pudding actually won me the job when we met at a wedding fayre back at the start of the year.

Evening All,

Hope you are all well and the year has started on a positive note.

Business is good but it can always be better lots of events booked in for 2024 and also 2025 but there is always room for more.

Two cracking wedding over the last few days (Saturday and Monday) at the beautiful The Cherry Barn !

Over the two days we had hog roasts, boneless lamb legs, loads of salads, graving boards for both canapés and breakfast platters for the bridal parties, potted desserts, finished off with breakfast in the camping field this morning.

Have had a great five days, couldn’t have done it without my awesome staff, thank you !

Such a pleasure working with Rachel and David planning for their wedding that took place last Friday in a lovely location in Farnham.

Hog roast with loads of salads a cheese tower with bread, crackers and fruit and then a smoked beef chilli, served with rice, nachos ans all the trimmings.

Thank you to Lois Sam and James for making the trip to work with me on the job.

It was a quick turn around and then off to a wedding as a guest the next day 🥱

I love a beef chilli but an “over the top” beef chilli is just on another level.
The beef smokes above the sauce for hours and then you add it all together, I had tomatoes left over from a job at the weekend so I smoked the beef above those and some garlic bulbs with some hickory wood.
You will have to wait until Friday for the final product …

BCS have had a fair few events this year already and more to come in the coming months, very much looking forward to this weekend's where we have a Spanish inspired menu catering at the beautiful Montague Farm in Hankham ….. Just look at those sirloin steaks !!!!!

Who loves a steak??

I had this old dairy cow, cote de boeuf steak in the freezer, so invited the parents around for dinner.

Reverse sear at 110c up to 48c then rest then crank it up to 250c+ and back on.

Tasted so so good with home made chips and peppercorn sauce….. so much much fun cooking like this !!

Dropped off a lovely spread for a birthday celebration tonight.

10hr+ smoked pulled pork, roasted potatoes, salads and home made apple sauce!

Very much welcoming back my rolls from Cavendish Bakery after their new shop fit out, by far the best rolls in Eastbourne!

Nice sauce selection from Sauce Shop too
