What happens when you have an adventurous combination of creativity and talent? Well, if you are John Colón, you embark on a new gastronomy adventure. With his blend of creativity, talent, strategy and perseverance, Chef John has conceptualized his next culinary venture located in North Naples.
Get ready to enjoy a new Spanish/Latin cuisine restaurant, named Islas Modern Caribe (Modern Caribbean Islands). Using the great recipes from his childhood, Chef John wants to showcase his parents’ Puerto Rican heritage as well as elevating recipes from the “Old Caribbean”, Cuba, Bahamas, Haiti, Puerto Rico, and Dominican Republic.
Chef Colón wants to create a space where people gather to enjoy meticulously crafted dishes, and where every detail from the ambiance to exceptional service is standard fare. “I want to take the old recipes that I grew up with and showcase them with the best ingredients: free range and organic farm raised proteins. I want to use tubers from the Caribbean such as Malanga, Yuca and Yautia, they are absolutely flavorful, but no one knows it” says Chef Colón when describing what will be on the menu. “Mofongo will be a standout dish, plantains mashed with proteins such as lobster and seafood in a flavorful tomato broth. No one is doing that here.
I want to serve elevated Caribbean cuisine but with the feeling of the Islands, like you are dining at an old Cuban mother’s house or an old Puerto Rican grandmothers’ house.”
