Cutizza
Cutizza is a dessert popular in the Italian province of Lombardy. Cutizza is a simple and beloved local delight made with a mixture of flour, water, eggs, and milk, fried in oil, and dusted with powdered sugar. When combined with a sweet white wine like Moscato, the dish is frequently consumed as a snack or dessert.
Ciaffignone
Ciaffignone is a classic Tuscan pancake made with fat and thin enough to be virtually transparent. Ciaffignone is thought to be the predecessor of the French crêpe, according to locals. The pancakes are usually sprinkled with grated Pecorino cheese after they've been prepared, but if you want modern versions, icing sugar can be used instead.
Chisciöl
Chisciöl is a classic buckwheat pancake made in the upper Valtellina, particularly in the Tirano area. This classic meal goes well with wines like Blanc de Morgex or Erbaluce di Caluso and can be eaten on its own or as a complement to grilled meat.
Necci
Necci are thin Italian pancakes prepared with chestnut flour and water in a batter. Pancakes can be eaten plain or loaded with a variety of ingredients such as pancetta, ricotta cheese, sausage, chocolate, honey, or sugar. Necci are a typical Tuscan snack known for its crispy edges, which are achieved by baking the pancakes in flat, cast-iron pans known as testi.
Crespolini
Crespolini are packed pancakes that are traditionally served in Italy. The pancakes are topped with a mixture of spinach, eggs, cream cheese, grated cheese, and chopped chicken livers fried in butter once they've been prepared. The pancakes are then rolled, sliced into three triangular pieces, and layered with béchamel sauce on a buttered baking dish. They're topped with mozzarella, Parmigiano-Reggiano cheese, and butter.
