No Bake Orange Pineapple Swirl Cheesecake 🍊🍍
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
3 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla extract
1/2 cup orange juice
Zest of 1 orange
1 cup whipped cream
1/2 cup pineapple chunks
1/2 cup mandarin orange slices
Fresh mint leaves and berries for garnish
Directions:
In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes.
In a large bowl, beat the cream cheese and 1 cup sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition.
Mix in the sour cream, vanilla extract, orange juice, and orange zest until fully combined.
Pour half of the cream cheese mixture over the crust.
Evenly distribute half of the pineapple chunks and mandarin orange slices over the cream cheese mixture.
Pour the remaining cream cheese mixture on top.
Create a swirl pattern with additional orange juice if desired.
For a fresh, subtle flavor, use orange juice. For a sweeter, more intense flavor and thicker swirl, use orange jelly.
Refrigerate for at least 4 hours or until set.
Top with whipped cream, pineapple chunks, mandarin orange slices, fresh mint leaves, and berries for garnish before serving.

1/4 cup (60 ml) fresh lemon juice 🍋
Zest of 1 lemon 🍋
1 tablespoon culinary lavender buds 🌿
1 teaspoon vanilla extract 🍦
For the Honeycomb Topping:
1/2 cup (120 g) granulated sugar 🍬
1/4 cup (60 ml) honey 🍯
2 tablespoons water 💧
1 teaspoon baking soda 🥄
📖 Instructions
Step 1: Prepare the Crust
1️⃣ Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
2️⃣ In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
3️⃣ Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove and let cool.

Step 2: Make the Cheesecake Filling
4️⃣ In a large mixing bowl, beat the softened cream cheese until smooth.
5️⃣ Add the sugar and beat until well combined.

Instructions

Ingredients:

8 oz cream cheese, softened
4 oz goat cheese, softened
1/2 cup black olives, pitted and chopped
1/2 cup green olives, pitted and chopped
1/4 cup sun-dried tomatoes, finely chopped
2 tablespoons capers, drained and chopped
1 tablespoon fresh parsley, chopped
1 tablespoon fresh rosemary, chopped
1/4 cup walnuts, finely chopped
1 clove garlic, minced
1 tablespoon olive oil
Fresh thyme sprigs, for garnish
Crackers or pita bread, for serving
Instructions:

Mix Cheese Base: In a bowl, mix the cream cheese and goat cheese until smooth and combined.
Prepare Tapenade Coating: In a separate bowl, combine black and green olives, sun-dried tomatoes, capers, parsley, rosemary, walnuts, minced garlic, and olive oil.
Shape the Cheese Log: Spoon the cheese mixture onto a piece of plastic wrap and shape it into a log. Wrap tightly and refrigerate for at least 30 minutes.
