This was a fun dish we put together using the best bits from Sophie .veg - The last of Sophie’s nasturtium leaves back in November, along with her last kilo of tomatillos. We cured some spanking fresh mackerel from in some tomatillo juice & salt, barbecued the mackerel, roasted the remaining tomatillos and made a salsa with lime, green chilli and coriander. The nasturtium leaf took the contents to the mouth 🫶🏻

Here we have a new dish we wanna talk about.
Chicken liver parfait tart.
We made pastry with 50% buckwheat flour and 50% plain. Poured in our parfait mix, cooked to wobble, when set covered the tart with a Madeira glaze, when that was set we sieved dried fig leaf over the top 👊🏼

Still reminiscing on our birthday bash, hard to believe that thk is 10!!? Considering we’re only 32 years old 😂 (combined). Feels like a lot more glasses will be raised over the next couple of weeks so cheers from us as we get that Christmas table ready. An absolute massive thank you to everyone that helped us turn 10 last week!. We couldn’t have done it without you!. We reached a milestone of 10 years, that’s a lot of knocks and scrapes, fires, events and public speaking (😂) - So what better way to celebrate than by hosting 3 nights at THKHQ. The pictures taken by definitely capture the atmosphere of the 3 nights 🙏. To all friends and THK fam, thank you for letting us cook for you x x x
