Pins Kytchen's honey glazed sesame chicken is a healthier alternative to the infamous Chinese mall food "Bourbon chicken." The chicken is marinated with house seasoning and then baked with a thin glazed layer of honey. Served with garlicky green beans and fragrant jasmine rice.

It’s been a long time coming but we have decided that it was time for a change. Minymeals started as a meal prep business in my home kitchen in 2017. As we grew, the business itself evolved into something more than we anticipated. Demand grew and we were in dire need of a bigger kitchen and help.

In 2019, we made the big leap and signed the lease with Hope & Main. From there, the business went into many directions to find its identity. We have participated in various pop up markets, farmers market, and breweries. We catered many events & even led team building events. We were featured on a podcast, blogs, TV, magazines and won Rhode Island Monthly Best Pop Up Vendor 2020.

When meal preps brought nothing but burden, stress, time away from family - I knew we needed to pivot. I hated meal prep and the thought of finding motivation to cook again was no longer there. Instead of giving up and quitting, I continued to cook despite how I felt.

It wasn’t until we participated in Pawtucket’s Winter Market where we found our love for food again and our customers! We were no longer a meal prep business but became known for our crispy spring rolls, fresh nime chow and Thai iced tea. Sounds so simple right? And yes, sometimes it’s just that simple. No need to complicate things. Find what you’re good at and excel in it!

So with time, we evolved and became more than a meal prep business. We will always be Minymeals at heart but we are now onto bigger and better things as Pins Kytchen.

It was very hard for me to come to terms with the rebrand & the name change. During my deployment in 2020, I had some down time to work on our rebrand, strategize, plan, and work on the logistics of the business.

Pins Kytchen just made sense. Okay so it’s not the most original name but its ours and it holds more meaning than you think. Notice the “Y” in kitchen. That represents our roots, the Y from Minymeals, our last name Minyvong and the Y in Kaydence’s name.

One memory that popped into my head while contemplating the name change was Kaydence as a baby. In the morning, she’d crawl to the kitchen because she knew that’s where she’d find momma. Anytime she’s looking for me, she knows exactly where I am in the house. When I came home from work, I’d go straight to the kitchen and start making dinner.

The kitchen is where I find comfort, where food is made with love, where family and friends come together, where memories are created, and where stories and laughters are shared.

Everyone has been asking and have been very patient with our reopening. We will see you sooner than you think in Farmers Markets near you, maybe even at your door steps (hint).... but for now, we’ll keep it our little secret.

Here’s my first recipe/tutorial video on how to make fresh summer rolls at home. You can use any veggies you’d like, I just used what I had in the fridge. Simple to make! Delicious and healthy 😊

Ingredients:
- Nime Chow Wrappers
- Baby Spinach
- Chopped Cilantro
- Thin Sliced Ribeye Beef
- Warm Water

Sauce recipe from
- 2/3 cup hoisin sauce
- 1/3 cup creamy peanut butter
- 1/3 cup water
- 3 tablespoons fresh lime juice
- 1 1/2 tablespoons soy sauce
