How to describe this bean to bar? The makers say that this is the Dutch version if gianduja... crafted with Dutch Hazelnuts and Basterd dark sugar.

Tasting...
Looking and observing as well!
One if the 1st step that I explain in chocolate tastings is to observe. Look. Analyse the color. The texture. The surface. The glossy. The shininess. Seek for tiny details. Look at the sides to see the inner structure. Is it dense? Do you see bubbles? Or stripes? Can you guess the texture of this chocolate by how it looks!
Next to smelling of course, that’s always an important step before actually tasting the chocolate and putting it into our mouth.

Delicious 76% dark chocolate by @hasnaachocolats. Origin: Mexico, Chantuto’s plantation.
2 ingredients only. Made from beans to bar in Bordeaux, France.
A strong smell: vegetal, flowery and fresh and some hints of red wine.
Once in the mouth: a mix of acidic waves mixed with strong and butter chocolate heart: like little kicks of berries or red wine in the middle of a strong dark chocolate mass! You end up with a strong bitter dark chocolate aftertaste that only asked you to go and take another piece!
