This time of the year, you can make hearty and nutritious in one pot. I smoked a turkey breast. Used the carcass to make a stock with some other aromatics. Had a taste for ramen or pho and had a bounty of veggies. Mixed Light Soy Sauce, Sweet Miso, Garlic Chili Paste, Mirin, Rice Wine Vinegar and Sesame Oil. Ladeled the stock into my Wok, added the seasoning mixture, Let it rise to a simmer, added veggies (Broccoli, Bok Choy, Onions, Snow Peas, Carrots, and Beech mushrooms) for one minute. Added a few pieces of smoked turkey and placed my noodles in the bowl. Using tongs, I removed veggies from Wok and into the bowl. Ladeled my desired amount of broth into the bowl and viola! It was amazing.

Breakfast: Sunny side up eggs over pepperoni and potatoes in tomato pesto. In hindsight, i should've cooked the potatoes...

Breakfast: Sunny side up eggs over pepperoni and potatoes in tomato pesto. In hindsight, i should've cooked the potatoes and Turkey Pepperoni separately and cooked the eggs in the pesto directly. I would've achieved a better texture contrast. It was delicious. I just was missing that crisp crunchy note. The mind of a chef.

Making Kimchi. I am looking forward to the finished product. Very Simple yet flavorful recipe. I put my own spin on it and as I always say, have fun with your food. Great for your gut health. It helps remove bad bacteria and replaces it with good bacteria for better absorption of vitamins and minerals in the foods we eat. It also helps lower blood sugar and pressure.

1 Napa Cabbage
1 Garlic Clove
1/4 Yellow peppers
1/2 Carrot shredded
1/4 cup Cilantro
Lime Zest
1/2 tsp Fish Sauce
1 Cup Chili Paste
1 tbsp Sugar

2 Tbsp Salt to render water from cabbage

Chop and Salt Cabbage for 2 days in the fridge. Drain and rinse Cabbage. Add all other ingredients, place in a seal container (preferably a Mason jar), place in a cabinet, or a dark cool space for 5 to 7 days. Pop the top and enjoy.

We are still rolling! Today's menu was an Egg Nog French Toast w/ chicken sausage links and Handmade Turkey Sausage w/ Strawberry, Blueberry and a Blood Orange Aperol and Shish*to Pepper Compotes. We on next week with out Super Bowl function and guess what....women are allowed!!!! Just for next week only.
