Today, we are presenting the Ultimate layered Chocolate Entremets called "Le Concorde".

A delightful decadent dessert composed of chocolate meringue and a delectable chocolate mousse topped with delicate dark chocolate shavings to bring some texture.

Mr. Gaston Lenôtre created this Entremets as a tribute to the legendary Concorde Aircraft in the 70's, while the Chef was designing menus for the Air France Concorde Passengers.
