Change is a good thing.
It’s always been something I believe in even though it’s difficult to do. This is the first Friday with my new shaped challah and though it’s a change, I feel like it’s a good thing. Same weight, same recipe, new shape.

SUN Oct 20 Cooking Class: The Art of Challah by Alissa Kondogiannis

Challah — a golden, egg-enriched bread that is often braided, and typically eaten on ceremonial occasions such as Shabbat or Jewish holidays — has adorned tables since biblical days. It is an easy, forgiving bread to make; a versatile yeasted dough that can be made sweet or savoury. Ideal for French toast and bread pudding, challah is also the perfect bread with dips like hummus, to mop up soups and stews or just to eat hot and tender, straight out of the oven.

In this class, participants will learn how to make a quick, simple, and forgiving yeasted dough and the art braiding bread. Each participant will will make and braid their own challah to take home with them. In addition, there will be demo of shwarma-spiced roasted cauliflower and an easy to make hummus to be a shared as a light lunch with your oven-fresh challah.

Alissa Kondogiannis has been eating challah her whole life but it was only after a travelling experience that she really got on the path of challah making. Her aim is to introduce everyone to the joys of bread making and and show that people don’t have to be intimidated by yeasted doughs. I’m teaching a challah class this coming Sunday and would love to see you there. If you’ve always wanted to learn to make your own challah or just want to up your challah game, this is the class for you!
You’ll make your own dough, learn a number of braiding techniques, eat a light vegetarian lunch (challah included) and leave with your very own bake-at-home challah. I can’t think of a better way to spend Sunday afternoon.

Whether for friends and family or for your own table, it’s time to order your Rosh Hashanah challahs.

These beauties stuffed with apples and cinnamon or dates and walnuts are wrapped around a colourful, hand painted bowl and beautifully boxed and bowed. Each challah comes with a card from and make the perfect gift or centrepiece for your table.

Orders are being taken up until Saturday September 28th for delivery on Wednesday October 2nd.

After all the challahs and babkas are made, I get a chance to play with the last bit of dough, making challah just for us. I’ve been wanting to change the shape of the challahs that I’ve been making, playing around with different shapes and I finally feel ready to take on a new style.

In between the big jobs, the hectic hustle of food making, there have been some lovely little jobs that have reminded me how much I love what I do. Today’s job was 90 mini babkas- packaged, ribboned and stickered, to hand out as wedding favours. Such a beautiful gesture, sending something sweet home with your guests after they have shared in your simcha. , Mazal tov! Thank you for giving me this special job.

My Bubby was a great baker.
Before she passed away, she taught my cousin and I how to make our favourites: kokosh and cheese danish.
This week I demoed cheese danish using my Bubby’s recipe for filling and my challah dough. The result-something she would have been proud of. I only wish she were here to taste it.

I love my job.
There’s something about offering a part of yourself every time you make a meal, a dish or even just a bite. That hope that what they are about to have is seen as beautiful, both to look at and to eat.
If you know what I’m talking about, then you know the joy it brings to have someone say “that’s so good.” The pleasure derived from someone else’s pleasure and to know that it’s the food you created that has caused that.
