Tis the holiday season and sometimes you just can't show up empty handed. Why not make a treat that looks great and taste great too...leaving everyone impressed by our baking skills! We're making a pineapple upside down cake and it is truly the easiest cheater dish you can make.

You’ll Need:
cake pan
1 box yellow cake mix
1 cup rum (I use Rhum Barbancourt)

1 can pineapple rings
1/3 cup pineapple juice (use the juice from the can)
3/4 cup brown sugar
1/3 cup vegetable oil
2 eggs (whatever the yellow cake mix box)
Maraschino cherries

Directions:

1. Preheat oven to 350. Lay out cake pan and grease pan liberally — you have to turn this sucker upside down and still make it look pretty, so this is important. Sprinkle brown sugar evenly throughout pan, then place pineapple rings in the bottom of the pan, organizing them in rows. Add maraschino cherries in the middle of the pineapple rings, if you want — I’m just not a fan.

2. In large mixing bowl or stand mixer, combine yellow cake mix, vegetable oil, eggs, rum and pineapple juice. Mix until well-blended. Pour cake mix over pineapple rings in cake pan.
3. Place in oven for 35-40 minutes (this will cook a bit faster because of the alcohol). When cake is done, lay out a sheet of wax paper on countertop. You will want to immediately flip the cake on to the wax paper, or else the cake will start sticking to the dish. Remember — flip it while it’s hot!

It's Pancake Monday...making your own is easy as 1...2...3

2 cups flour
5 tsp baking powder
4 T sugar
1 tsp salt
2 eggs
1/2 cup oil
2 cups milk

Preheat a griddle or large skillet over medium heat. Combine dry ingredients in a medium bowl, and whisk with a fork to combine. Mix eggs, oil, and milk together until well combined. Add to dry ingredients, and mix with a fork until mostly combined, with some small lumps of flour remaining. Lightly butter the preheated griddle and pour the batter by 1/4 cup scoops onto the griddle (I always use a measuring cup so they're all the same size). Cook 3-4 minutes or until there are bubbles throughout the top of the pancakes, and the edges of the pancakes look dry. Flip the pancakes and cook for another minute or until lightly browned on the bottom.

Happy Memorial Day Weekend!

Invited to a last minute barbecue and you need to bring something. But have no desire to really cook, why not make an easy dessert out of the box…let’s make Red, White and Blue Strawberry Shortcake.

Ingredients:
Packaged cake mix
Whipped topping
Fresh strawberries
Fresh blueberries or fresh blackberries

Steps:

Prepare cake according to package directions and bake in a 9x13 inch pan. Cool completely. Get fancy: replace the water in the mix with buttermilk and add a teaspoon of good vanilla extract

Once cake is completely cooled.
Frost cake with store bought whipped topping.

Place blueberries or blackberries in a square in the corner, and arrange sliced strawberries as stripes to make an American flag.

Chill until serving.

Haitian Flag Day...now lets make a snack! We're making Bannann Peze (Fried Green Plantains).

Ingredients
• Plantains
• Oil (vegetable or canola)
• Salt (salt water mixture 2 cups water an 3 table spoons salt)

Instructions
Peeling Plantains:
1. Cut off each end of the plantain.
2. Use a knife or to cut the plantains skin.
3. Find the ridge running lengthwise on the plantain.
4. Insert the knife under the ridge and cut length wise along the plantain.
5. Find another ridge and cut length wise along that ridge too.
6. Peel the skin from the plantain. Repeat until the skin is off
7. Slice plantains into 5-7 slices (slice will be about 1/2 ins wide)
8. Place plantain slices in salt water mixture (get fancy add some adobo seasoning and a pinch of chili powder to the water)

Frying Plantains:
9. Heat oil about 3-4 inches deep in a skillet on the stove over medium heat.
10. Drain plantains from salt water mixture (6 slices at a time, leave uncooked plantains in water)
11. Place in hot oil (slowly and carefully) and cook on one side for about a 1.5 minutes (watching for plantains to turn golden).
12. Flip the plantain slices with a fork
13. Fry on the backside. Remove from the hot oil.

Flatten Plantains:
14. Use a Plantain Press to smash the plantains. I’ve used a large mug, plantain peel or flat bottom salad plate (when I did not have or couldn’t find my plantain press)
15. Put back into the oil and fry for another minute.
16. Remove from oil and salt.
17. Serve

Happy National Margarita Day!

Classic Margarita

Serves 1

1 ½ ounces silver tequila
1 ounce Grand Marnier
½ ounce triple sec
1 lime Splash of bar sugar to taste Salt (optional)

Fill a mixing glass with ice; add ingredients (squeezing lime juice into drink); stir until chilled. Strain into a salt-rimmed glass over rocks. Alternate: Shake all the ingredients with cracked ice in a cocktail shaker until the exterior frosts. Strain into a glass over rocks.

Garnish with a wedge of lime.

Baby it’s cold outside…Warm up with YHP’s favorite chai spice mix!

Ingredients:
1 tbsp. Cinnamon
1 tbsp. Ginger
1 tbsp. Cloves
1 tbsp. Star anise
1 tbsp. Cardamom
1 tbsp. Peppercorn

Add all the spices to a mixing bowl. Mix together until well combined. Funnel into a small jar or bottle. And at anytime you can sprinkle a little or a lot into your black tea.
Enjoy!

We’re making Kremas!
Kremas is a popular drink in Haiti and is often served at social events and the holidays.

INGREDIENTS:
1-Can of Evaporated Milk
2-Cans of Sweetened Condensed Milk
1-Can Cream of Coconut
1-Teaspoon Grated Nutmeg
1-Teaspoon Cinnamon
1-Teaspoon Anise Star Extract
1-Teaspoon Almond Extract
1-Teaspoon Vanilla Extract
1-Teaspoon Fresh Lime Juice
1-Teaspoon Fresh Lime zest
2-Cups of High Proof White Rum (Preferably Barbancourt)

DIRECTIONS:
1. In a large mixing bowl add can of evaporated milk, 2 cans of sweetened milk and cream of coconut and mix the ingredient thoroughly
2. Add vanilla, almond, anise star extract, cinnamon, nutmeg and lime zest to the mixture stir together
3. Add the Fresh lime juice to the mixture to slightly thicken it.
4. Finally add rum into the mix and mix thoroughly.
5. Let sit for a few min then use a funnel to pour mixture into bottles.
6. Get fancy with it: We designed and printed labels for our bottles. Also added ingredients labels on the back, just in case if giving them as gifts

Orange Engagement Chicken…it’s easy and a crowd pleaser!

INGREDIENTS:
1. 1(5 lb) whole chickens
2. 1small orange
3. 1teaspoon salt, divided
4. 1small red onion, cut into 8 wedges
5. 1bay leaf
6. 1⁄4teaspoon thyme
7. 1⁄4teaspoon black pepper

GLAZE:
1. 1tablespoon honey
2. 1tablespoon orange juice
3. 1⁄2teaspoon Dijon mustard
4. 1pinch salt

DIRECTIONS:
1.Heat oven to 425°F.
2.Remove giblets and neck from chicken.
3.Rinse chicken inside and out with cold running water; drain well.
4.Pat dry with paper towels.
5.Grate 1/2 teaspoons rind from orange and set aside.
6.Cut orange into quarters.
7.Sprinkle ½ teaspoons salt inside cavity of bird.
8.Stuff chicken with onion, orange quarters, bay leaf, and thyme.
9.Place on rack in large foil-lined roasting pan.
10.Sprinkle with remaining salt and pepper.
11.Roast chicken 1 hour and 15 minutes.

12.In small bowl, combine reserved orange rind with glaze ingredients, and brush over entire chicken.
13.Roast 15 minutes more, or until meat thermometer inserted in thickest part of chicken thigh reaches 175°F and juices run clear.
14.Let the chicken rest for 15 minutes before slicing.

It's cocktail Friday!

We are heading to Florence, Italy and learning to make a classic negroni!

INGREDIENTS:
2 oz Campari
2 oz Gin (I use Bombay Sapphire)
2 oz Sweet vermouth (I use Dolin)

GARNISH:
1 Orange half-wheel

HOW TO:
Add all the ingredients to an Old Fashioned glass and fill with ice.
Stir until cold and garnish with an orange half-wheel
Drink…Enjoy…Repeat!

It's cocktail Friday!
And we are going to Kenya for this treat...because it is 5:00 pm in Kenya!

We are making Dawa!

INGREDIENTS
2-tablespoon brown sugar
3-4 fluid ounces vodka (I use Ketel One Vodka)
Crushed ice cube
1 whole lime, quarter with skin on
Dawa stick (A wooden honey stick or other type of stick twisted in honey will work)
Honey

DIRECTIONS
Put lime and sugar into a tumbler
Crush limes slightly, add ice and pour in the vodka.
At this point you twist a dawa stick into some honey and add the stick to the drink.
Muddle limes with dawa or honey stick.
The more you crush the limes into the mixture and stir the sweeter the taste.
