I have always had a real passion for food and growing up in an Irish household, there was no chance I was going to get out of helping my mum in the kitchen! It was through helping my mum, (even though at the time I protested and had a strop) that I learnt the foundations of good home cooking from scratch. I also got my love of dinner parties from growing up, where many weekends our dinner table would always have at least 1 extra guest in not many more.
Over the years at uni studying art, as well as working and living in shared houses, I loved to host regular dinner parties and found, as I do now, I am at my happiest cooking for others and seating around the table for hours chatting with friends. From this regular hosting and working in restaurants, I soon developed my skills and abilities to cook and develop menu’s for larger events, catering for a mixture of dietary requirements and often creating these meals in field kitchens at festivals and outdoor events. This is where Sound Bites was born from, originally and formally a festival cafe I started up in 2014 and traded at a variety of music festivals and large private outdoor parties. Since this I have gone on to produce catering for weddings, parties, corporate events and conferences, which is how Sound Bites Festival Cafe has grown into Sound Bites Catering.
When I first started to cook my main influences and style was predominately Mediterranean food. However, from spending time volunteering in the refugee camps of Norther France and getting to sample many amazing meals cooked on open fires with the real basic ingredients, sparked my interest and love of middle eastern food. More recently my husband and I took 9 months out and traveled around California for a short period, and then SE Asia for the rest of the time. During our time in SE Asia we got to sample so many new flavours and I was in heaven with fresh food markets dotted everywhere. Due to this crazy mishmash of cuisines, I wouldn't like to put my cooking style or menu’s into one box, but instead bring all these influences to the table and work from there :-)
