Poppyseed Slice

🔸For the dough:
400g flour
200g margarine
150g powdered sugar
½ packet baking powder
2 tbsp vegan sour cream
2000g poppy seeds

🔸For the cream:
4 tablespoons flour
400ml milk
250g margarine
250g powdered sugar
200g sour cherry
2 tbsp rum

🔸Crush the flour with the margarine, add the powdered sugar, baking powder, a little salt, ground poppy seeds, and knead with sour cream.

🔸Roll out into 3 sheets and bake on the back of a buttered baking sheet.

🔸In the meantime, prepare the cream: boil the milk with the flour and a little salt until thick. Mix the powdered sugar with the margarine, add the sour cherry and in rum. Mix with the cooled milk mass.

🔸Fill the 3 sheets with the cream, sprinkle the top with powdered sugar, and cut into slices, as desired.

Cherry Tomato, Olives and Capers Spaghetti - for 4 people

500g vegan spaghetti
2tbsp salt

🔸Begin heating a large pot of water for the pasta. When the water is boiling, add a generous amount of salt and spaghetti. Cook until al dente. Reserve some pasta water for the sauce around 1 ladle.

Sauce - in the meantime make the sauce
1 tbsp extra-virgin olive oil
400ml diced tomatoes
2 cloves garlic - crushed
90g Kalamata olives - halved
50g small whole capers
1 tsp kosher salt
Freshly cracked black pepper
Fresh basil

🔸In a large skillet over medium-high, heat oil add diced tomatoes, fresh basil, salt, pepper and garlic, cook this around 15 min with occasionally stirring. Then add olives and capers mix under heat for 3-5 min. Let sit on the side until everything is ready.
When the pasta is ready add the pasta water.

Toppings
1 tbsp extra-virgin olive oil
10-15 cherry tomatoes - halved
3 cloves garlic - chopped
90g Kalamata olives
50g small whole capers
1 tsp kosher salt
Freshly cracked black pepper
Fresh basil

🔸In a large skillet over medium-high, heat oil and add garlic, whole olives and capers mix under heat for 3-5 min then add cherry tomatoes and a pinch of kosher salt and fresh basil, cook for 5 min. Let sit on the side until everything is ready.

🔸When everything is ready add the pasta to the sauce and after serving on a plate add the topping and some fresh basil. Ready to eat!

Quince Good Morning Drink
1 banana
1 tbsp cane sugar
150g quince compote
1 tsp cinnamon
1 juice of lemon
100 ml water
200ml coconut milk or of your choice of plant based milk
You can sprinkle with some extra coconut cream for more creaminess.

🔸Quince compote
5 large quinces
2 lemons
10 tablespoons cane sugar
a piece of cinnamon, or cloves

Clean the outside of the quinces with a brush and water. After cutting them in four, remove the seeds.
Cut them into pieces of your choice and pour enough water over them to cover the fruits. Add the sugar, lemon juice and the washed, chopped peel of the lemon. Cook the quinces until soft, about 3/4 hour. Ready to serve as a compote.

🔸Quince Cheese

But if you take out the compote pieces, blend them and cook them further with sugar, you can also make quince cheese from them. Once the mixture has reached a thick consistency, pour the mixture into molds and cool it in them. After it has set, squeeze it out of the molds. And dry it by turning it daily. This is important because it molds easily.

Famous Hungarian Lángos

400g of bread or fine flour
30g of yeast
2 boiled potatoes
1 tbsp of oil
½ dkg of salt
lukewarm non-dairy milk
oil for frying

Topping
Vegan sour cream
Vegan grated cheese
Fresh garlic
Salt to taste

🔸The yeast is made to rise in 1 dl of lukewarm milk, with a pinch of sugar.

🔸Make a well in the middle of the flour, pour in the risen yeast, add the boiled, mashed potatoes, a spoonful of oil, and knead a softer dough with lukewarm, salted milk. Beat well. Sprinkle the top with flour, cover with a cloth and let rise for approx. 1 hour.

🔸When the dough has risen well and doubled in size, heat the oil in a pancake pan. The dough is rolled out into palm-sized pieces, placed in hot oil, and first covered, then, when turned over, fried without a lid until crispy.

🔸Lángos is quick to make, and rises quickly in small quantities.

🔸It can be served in several different ways. My favourite is with sour cream, cheese and fresh thinly sliced garlic.

Lentil soup

1 medium onion
250g lentils (soaked the night before)
half a can of canned chopped tomatoes in juice
5 bay leaves
2 tbsp vegeta
2 tbsp paprika powder
1 l water
2tbsp flour
1 dl sunflower oil
vegan sour cream

🔸Fry the diced onion in the half of the oil. Then I add the lentils that I soaked the night before and washed well, as well as the bay leaves. I pour water on and cook until soft around 10 minutes.

🔸In the meantime, I make a thickener, heat the other half of the oil and add the flour, fry it a little, then remove from the heat, add paprika powder and pour in cold water.

🔸Add the previously made thickener to the lentils, pour in more water to make it soupy, if necessary.

🔸Add the canned tomatoes. After tasting, I season with vegeta or salt. I cook the soup for another 10 minutes to let the flavours meld well.

🔸Serve it with vegan sour cream. Ready to eat.

Baked potatoes - for 2 people

- This recipe was out of this world 😋❤️

2 leeks
9 medium-sized potatoes
100g Ráma margarine
200g vegan cheese
200g coconut cream
150g vegan cream
salt, ground pepper
vegeta and red pepper powder

🔸After peeling and washing the potatoes, cut them into thin slices, sprinkle with vegeta and divide into three parts.

🔸Mix the sour cream with the vegan cream, then salt it to taste.

🔸Grate the cheese on a large grater. Set aside a good handful of grated cheese, which will be added to the top at the very end, when toasting.

🔸Cut the leek into rings.

🔸Grease a small baking sheet with margarine, then layer the ingredients. Potato rings on the bottom, leeks, margarine pieces, grated cheese, sprinkled with pepper and paprika, then half of the sour cream is spread evenly, repeat the previous action and finish it with the last layer of potatoes. Then put aluminium foil on top and bake in a preheated oven at 200 degrees for 1 hour.

🔸Then remove the foil, sprinkle with grated cheese, and put it back in the oven, raising the temperature for about 10 minutes, so that the top browns.

🔸You can also put freshly ground pepper on top.
Serve with mixed fresh salad. Ready to eat!

Homemade Pizza - 6 small thin pizza

❗️You need to rest the dough for 2 hrs, it sounds a lot at first, but in this time you can do whatever you wish too

600g all purpose flour, some extra for dusting
11/2 tsp active dry yeast
1 1/2 tsp salt
530ml COLD water
1 tsp extra virgin olive oil
Semolina flour

Toppings
Arrabbiata sauce
Vegan mozzarella
Cocktail tomatoes - cut in half
Rucola
Balsamic vinegar
Your choice of other toppings, I like capers so one of the pizza is topped with it.

🔸In a large bowl, mix flour, salt and dry yeast together. When is mixed well add the cold water and stir it with a wooden spoon until is combined after sprinkle some flour on a kitchen counter and place the dough. Using your hand start kneading the dough for 10-15 minutes. The time is necessary don’t give up. It is possible that you need to add more water, if it is dry or more flour, if it is sticky.

🔸When the dough is ready, cut it into 6 pieces and form them into rounds. Place them on lightly oiled tray and drizzle with 1 tsp olive oil each, cover with plastic wrap and let the it sit at room temperature and rise let rise for 2 hours in a draft free area, lightly warm place.

🔸Dust your kitchen board with semolina four place your pizza dough on it, make sure it is slides easily when moved, when is the right shape place on a baking tray with backing paper on it. Pour 2-3 tablespoon of Arrabbiata sauce in the centre and spread it around with the back of your spoon, make sure leaving 1- 2 cm of space at the edges.

🔸Sprinkle with mozzarella and then add your favourite toppings. Don’t add to much topping, as it is a thin crust.

🔸Preheat your oven on the highest 205 degree for 30 min, before backing it, bake your pizza for 10-15minutes, until is golden brown on the edges.

🔸When is ready, remove from the oven and decorate it with rucola and drizzle it with balsamic vinegar. Ready to eat!

Cucumber Salad - for 4 people

4 continental cucumber
4tbsp vegan sour cream
8tbsp vegan feta cheese
A big handful walnuts
3tbsp freshly squeezed lemon juice
A big handful dill - finely chopped
Salt, pepper to taste

🔸Cut the cucumbers half lengthwise and spoon out the seeds part.

🔸Place cucumber to a large bowl, add lemon juice, dill, sour cream and salt, pepper to taste, mix well and sprinkle with feta and walnuts. Ready to serve.

Broccoli Rissoles - for 4 people

1 kg broccoli
170g bread crumbs
2 tbsp flaxseed add 5 tbsp room temperature water mix well leave it for 15-20 min (egg substitute)
Vegan hard cheese - medium size cubes for the middle of the patty
2 tsp garlic powder
Salt, pepper to taste
Vegetable oil

🔸Boil the broccoli in a salted boiling water for 3-5 minutes, drain the water, add cold water to preserve the beautiful green colour, let to drain excess water, and puree it with a hand blender. Add to the puree the bread crumbs, prepared flaxseed, garlic powder, salt and pepper.

🔸With your hand form a ball of the mixture and place the the mozzarella cubes in the middle and for a ball. Place the ball in the preheated pan with oil and with your spatula press it down gently. Cook each side for 2-3 min.

🔸Place on a plate lined with a paper towel to absorb any excess oil.

Serve it with mash potato and cucumber salad. Ready to eat!

Yellow pea cream soup - for 4 people

150g of yellow peas
1 medium size onion - finely diced
50ml of oil
1 liter of water
2 tsp salt
Pepper for seasoning
2 slices of bread

Thickener for the soup
50ml of oil
1 tbsp flour
1 tbsp Hungarian paprika powder

🔸Soak the chickpeas in water overnight and wash them several times the next day.

🔸Fry the onion in oil until glassy, ​​then pour the washed yellow peas over the onion with 1 l of water and salt.

🔸Cook for an hour and stir it occasionally.

🔸Make the batter, heat oil over medium heat and drizzle in the flour, which we constantly stir until it is lump-free. When it is light brown, remove it from the heat and sprinkle with Hungarian paprika powder and add 100ml of COLD water. As soon as it is mixed, there are no lumps, add it to the soup and boil for another 5-10 minutes.

🔸Then strain the soup through.

🔸Dice the bread and fry it in a little oil, stirring constantly.

🔸Serve the soup in a bowl, decorate it with freshly ground pepper and toasted bread cubes. Ready to eat.

Asian Style Cauliflower Wings for 4 people

For the cauliflower
70g flour
1 tbsp baking powder
2 tbsp nutritional yeast
1 tsp garlic powder
1 tsp salt
250ml plant based milk such as almond milk
1 big head cauliflower

For the sauce
2 tbsp tomato paste
2 tbsp squeezed lemone juice
1.5 tbsp Worcestershire sauce
4 tbsp soy sauce
4 tbsp Hoi Sin sauce
2 tbsp maple syrup
½ tbsp Sriracha sauce
1 tbsp cornstarch
120 ml water
1 tbsp sesame oil
1 large onion diced
2 cloves garlic minced
2 tbsp ginger freshly grated
Sesame seeds

Cooked rice (400g) - according to description

🔸Preheat the oven to 180 C and line a baking tray with baking paper.

🔸Add the flour, baking powder, nutritional yeast, garlic power, salt and plant based milk to a large mixing bowl. Whisk together until no lumps remain.

🔸Prepare the cauliflower florets. Trim the leaves from the cauliflower and then remove the stem, before chopping it into bite-sized florets.

🔸Dip the cauliflower florets in the batter and shake off any excess batter before laying them out on the baking tray. Make sure to leave enough space between the florets. Bake in the preheated oven for 40-45 minutes, until crispy and golden brown.

🔸Meanwhile, prepare the sauce by whisking together the tomato paste, lemon , all the sauces, maple syrup. In a separate mixing bowl, make the cornstarch slurry by mixing together cornstarch and 2 tbsp of water.

🔸When the cauliflower is almost done, heat the sesame oil in a pan over a medium-high heat. Add the onion, garlic and ginger, cooking for 3-4 minutes, until fragrant.

🔸Add the sauce and the water, lowering the heat and cook for about 5 min, then add the cornstarch slurry, whisk continuously for another 5 min, until the sauce thickens. Remove from the heat and add the cauliflower wings, stirring together.

Serve it with cooked rice and decorate it with sesame seeds on top. Ready to eat.

Lentil Anelletti

2 tablespoons extra virgin olive oil
1 medium onion finely chopped
1 rib celery finely chopped
1 large carrot grated
3 cloves garlic finely chopped
2 tablespoons tomato paste
½ teaspoon rosemary
2 bay leaves optional
1 liter vegetable stock
1 can (240g) diced tomato
250g dried lentils green or brown
1 teaspoon salt or more to taste
¼ teaspoon freshly ground black pepper
3 tablespoons balsamic vinegar or soy sauce
Fresh basil for decoration

🔸Heat 2 tablespoons extra virgin olive oil in a large pot. Add the chopped vegetables and sauté for 3 minutes on medium heat, stirring often.
Add tomato paste, rosemary, bay leaves, salt, black pepper, and sauté for 5 minutes, stirring occasionally.

🔸Rinse dried lentils and look for foreign objects such as stones, soil, or dirt.

Add rinsed lentils, vegetable stock, and diced tomato to the pot and simmer for 30 minutes or until the sauce thickens and the lentils are cooked. Stir occasionally.

🔸Discard the bay leaves and stir in 3 tablespoons balsamic vinegar. And finally, blend some of the sauce, 1 quarter with a hand blender until you reach your desired texture.

🔸Lastly, taste and adjust the salt, balsamic vinegar and decorate in with fresh basil. Ready to eat.

Creamy White Bean Stew

1 small yellow onion, sliced
300g cherry tomatoes, halved
4 garlic cloves, minced
30g sun-dried tomatoes, chopped
1 tablespoon tomato paste
600g caned white beans of choice, drained and rinsed
350ml vegetable broth
1 tablespoon arrowroot starch, tapioca starch, or cornstarch
2 cups baby spinach
150g vegan cream cheese
Salt and pepper, to taste
1 small lemon, juiced
1 handful fresh basil, sliced, to garnish

🔸In a medium saucepan over medium heat, add 1 tablespoon avocado or olive oil. Add the onion, and saute for 3 minutes. Add the cherry tomatoes and cook for another 5 minutes or so, until softened, stirring frequently.

🔸Add the garlic, sun-dried tomatoes, and tomato paste, and cook, stirring constantly, for one minute until the colour has darkened.

🔸Pour the broth into the pan and add the beans. Cook for 10-15 minutes at a low simmer.

🔸In a separate small bowl, whisk the arrowroot starch with a splash of water then add into the stew, mix it constantly until slightly thickened, around 2-4 min.

🔸Stir in the cream cheese and stir until it’s melted into the stew. Mix in the spinach and cook about 1 minute, and then mix in the lemon juice. Add salt and pepper to taste.

🔸Serve it with toasted sourdough bread and decorate it with fresh basil. Ready to eat.

The appearance of pistachio indicates a time of balance and generosity that encourages both giving and receiving.

Hungarian Potato Pasta

🔸Potato stew
100ml oil
1 big onion - diced small
500g potatoes - peel the skin and cut in small cubes
1 tbsp paprika powder
Salt to taste

Choose a medium size pot add oil and onion on a medium heat and stew the onion until glassy add the potatoes, season in with salt and pepper. Steamed under a lid, stirring frequently for about 20-25 min. At least sprinkle it with paprika powder, do a quick final stir and turn off the heat.

🔸Pasta
400g flour
200-250ml water - it depends how much the dough takes

Knead the flour and water together, let it rest for a bit. Roll out the dough thin - with the pasta maker and cut the pasta in shape. Cook it in a boiling salted water. When the pasta is cooked add it on the top of the potato stew and mix it. For decoration you can use some greens like parsley or celery leaves and sprinkle it with freshly ground pepper. Ready to eat.
