Today, let's have a bowl of soto for lunch or dinner...hmm...or even on a wet weather day for a hot soup meal.

Soto Soup

Blended ingredients:
▪︎ 4 red onions (red onions give a nicer sweet taste)
▪︎ 3 cloves garlic
▪︎ 1 inch ginger
▪︎ 1 inch fresh turmeric (you may use 1 - 1.5 tsp turmeric powder as substitute)

○ Fry in hot oil till it starts smelling good and "garing" and add in other ingredients below.

Other ingredients:
▪︎ 1 whole chicken - cut into 4 or 500g chicken breast (this will cook till tender in the soup, then cooled and shredded)
▪︎ 1 tsp fennel seed powder
▪︎ 1 tsp cu**in seed powder
▪︎ 1 tbsp coriander seed powder
▪︎ 2 tbsp white pepper
▪︎ 1 thin stick cinnamon
▪︎ 4-5 cloves
▪︎ 2 star anise
▪︎ 4 cardamom seed
▪︎ 4 kaffir lime leaves
▪︎ 3 stalk lemongrass, bruised
▪︎ 1 cup coconut cream
▪︎ Salt to taste
▪︎ Chicken stock
▪︎ water for the soup, don't make it too watery or thick; to your preference.

Garnishes:
▪︎ Fried shallots
▪︎ Coriander leaves, finely cut
▪︎ Boiled eggs
▪︎ Beansprouts
▪︎ Shredded chicken (prepared in the soup earlier)

Kicap Chili
▪︎ Red & Green chilli padi, coarsely bruised
▪︎ ABC Sweet Soy Sauce
▪︎ Lime juice, a bit will do
▪︎ Garlic, blended
▪︎ Fried shallots, crushed

○ mixed the kicap chili ingredients together, seasoned with salt and sugar to taste. For the chili padi, the more spicier you want, you may more. Done!

Since we started our confinement package in First quarter of 2015 we have served nearly 250 mummies.

Most of the feedback have been positive and encouraging.
