I grew up in a Portuguese household and in my teen years, I was eager to help my mother in the kitchen. She was a great cook and taught me to eat healthy, use quality ingredients, and take the time to create magnificent dishes. When I left my parent's home at the age of 18, I continued to cook for myself, family and friends. I was further motivated by great Chefs: Michael Smi
th, who says that "recipes are but words on paper"; Rob Rainford and his many BBQ techniques; and, Jamie Oliver who wants the world to eat right. I began to create my own dishes, and I was brave enough to experiment on my invited guests, consistently receiving praise and inspiration. My dear wife has a very sensitive digestive system, and as a result, much of the food she consumes causes her severe discomfort. We experimented over time with different foods and observed the results, concluding that the chemicals in foods today were the cause. We began to read the "ingredients" label on all products we purchased, avoiding everything that had modified or chemical ingredients. The results have been astounding. I use only quality and natural ingredients. My meats are purchased from Alan's Butcher Shop in Whitby and are of the highest grade from Ontario. I use fresh pasta, fruits, vegetables and herbs... all to compliment a truly magnificent dish for your enjoyment. Please feel free to email any comments or suggestions you may have.
