Get the largest stainless steel (heavy bottom) you can get your hands on (20L min) and loads of mason jars or reuse your jars with good tight fitting lids. Used ones are cheap on Facebook Marketplace, Kijiji, thrift stores, etc or ask your canning loving friends!

Remember to render and roast quality pasture raised bones! Elk, bison or simple beef and chicken will do!

I like to make a 48 hr bone stock (low and slow, covered is the way to go!) and the flavoured tallow on top is perfect for cooking with and/or top off every jar with a thick layer of fat to preserve for weeks in the fridge!

Makes some of the best tasting nourishment you’ll ever have and makes great gifts too!

Fincicles were sold at 5 different festivals this past summer and the very last one was the best one at where Igal showed up with his camera and his creative eye and captured a lot of beautiful photos! These are just a few of the many that I wanted to share with you that he compiled to give you a glimpse of summer and what you have to look forward to next year.

This is one of my favourite cakes growing up.

My mom made it often and while it was always made with white flour and white sugar, luckily I’ve created a healthier, just as tasty and satisfying variation that can be made anytime of the year with any kind of apple, served cold or warm, and can be made with or without eggs. It can be made a day or two in advance (if it lasts).

The traditional recipe is sponge cake style while the egg-free variation is similar to a coffee cake and is just as tasty. Both variations included. This is the recipe that I’ve taught at both The Depanneur years ago and for a filming the Toronto International Film Festival did 5 years ago to compliment one of their Russian films.

Use a 9” springform pan or an 8” square baking pan, or a Bundt cake pan (as seen in the picture). Scroll for the recipe, prep and variation. Then make sure to save this post for a delicious Rosh Hashanah dessert recipe!

2 delicious ways to use plain coconut yogurt.
A delicious nutritious option for both dairy and non dairy lovers, carnivores and omnivores. Plus they offer other flavours like vanilla and raspberry too…all natural 😜 🥇

Tzatziki
Mix the following in a bowl. Taste and adjust seasoning if needed. Keeps for a week airtight refrigerated. Serve with any protein you like, or as a dip for veggies, crackers, chips.

* 1 cup Simpla plain coconut yogurt
* 1/2 cup squeezed (strained) and packed grated cucumber (1/2 English 🥒 )
* Juice & zest of 1 large lemon
* 1/4-1/2 tsp unrefined salt
* 1/4 cup finely chopped dill, packed

AND a trick to tender chicken fingers: coat in Simpla’s yogurt with a little lemon juice and salt for at least 1 hour before dipping into your coating and baking/frying.
