To our loyal customers and friends. It has finally happened! Within the space of two short weeks, our Chef Dylan has accepted a position on a super yacht and aims to spend a year or two travelling the world, learning new cuisines, and expanding his horizons. Consequently, Salt of the Earth Food Company will be taking a long term vacation but we hope to send some photos of what our chef is producing on the high seas, so stick with us!
We cannot thank you all enough for your amazing support over the last three years and for all your comments and likes. We hope that one day we will be back with even better menus for you all.

We're thrilled to announce that due to popular demand, we're now offering our Beetroot and Citrus-Cured Salmon available for purchase for a limited time! This delectable dish undergoes a meticulous 12-hour curing process, infusing it with a symphony of flavours from carefully crafted mixtures of salt, sugar, lemon zest, orange zest, lime zest, and raw mashed beetroot. The result is an extraordinary balance of citrusy zests and earthy beetroot that will tantalise your taste buds.
To complement this exquisite creation, we serve it with a simple yet bold horseradish sour cream. The creamy richness of the sour cream meets the zing of horseradish, forming a perfect union that enhances the overall experience.
Recipe for the horseradish sour cream:
- 2 tablespoons creamed horseradish
- 1 tablespoon crème fraiche
- 2 teaspoons whole-grain mustard
- 1 teaspoon honey
- 1 tablespoon chopped dill
Mix all ingredients together in a mixing bowl until well combined. Season to taste with a little salt and lemon juice.

We recently had the pleasure of catering a truly special 50th birthday celebration in beautiful Constantia.
The 6-course menu included the following:
🍢 Canapés:
Hot smoked mackerel pate with cider jelly and crispy flatbreads
Soy-cured tomatoes with sticky rice, sesame mayo, and wasabi
🍽 Main Menu:
Rooikrans coal oil beef tartare, served with apple and caper purée and hot mustard mayo
Seared tuna with an exquisite apple and ginger dressing
Rice-fried trout with Nam pla Garum, buerre noisette, hazelnuts, mint, and naartjies
Cured and steamed hake accompanied by pickled mussels, baby leeks, and fish bone sauce
🍨Dessert:
A trio of mousses: Granadilla, cream cheese, and chocolate, covered with pumpkinseed brittle. Enjoyed with a refreshing green tea and roasted strawberry sorbet.

Guests had the pleasure of diving into platters of mouthwatering smoked line fish paired with pickled beets and Gribiche sauce. Their tastebuds also got to savour the richness of roast beef mingling with charred artichokes and wild garlic emulsion. Plus let's not forget the BBQ aubergines and red pepper salad, featuring confit garlic and a wild rocket explosion!

For breakfast we delighted guests with: compressed melon, mint soup, air-dried ham, freshly baked croissants with rocket pesto, and baked Brie.

Get ready for an explosion of flavour while upping your condiment game with our irresistible crispy, toasted garlic and rosemary mayonnaise! This homemade masterpiece is a harmonious fusion of rich flavours using pantry staples! Give it a go!
🌿Ingredients:
- 200ml canola oil
- 35g peeled garlic
- Small sprig of fresh Rosemary
- 10 black peppercorns
- 10g hot English mustard
- 15g white wine vinegar
- 1 whole egg
- 1 egg yolk
👩🍳Method:
Pour 200ml oil into a small saucepan.
Add the garlic and cook over a low temperature until the garlic is golden brown and very soft.
Add the rosemary and black pepper and remove from the heat.
Rest and infuse the flavour until cooled.
Remove the Rosemary and black pepper corns and discard.
Strain the garlic and reserve the oil.
Add the yolks, cooked garlic, mustard and vinegar to a blender and blend untill smooth.
Place into a vertical container and using a hand blender, slowly blend the garlic infused oil into the egg mixture untill a mayonnaise consistency is achieved.
💡Top tip: if you want to thicken the mixture, simply add another 50-100ml extra canola oil.

To achieve the perfect balance, we then add a touch of rice wine vinegar. We kick it up a notch by infusing the sauce with a blend of red chili flakes, fragrant garlic and ginger.
