Christmas time is here!

Those that know me, know I love Christmas. Sometimes to the point that it drives some people mad... My Grinch of a husband for example. 😝 So after a year of many changes I was looking forward to celebrating Christmas with my family. But without a tree, or my decorations my traditions have felt somewhat lackluster.

But this morning, a very dear (and new) friend brought me some baking supplies and her stand mixer to borrow so that I can bake a cake for lil D who has a birthday this week. So I put on my Christmas Carols and cranked out some cookies in the time I had before I had to fetch the kids from school. While I was baking I also received a call letting me know that tomorrow our container items would be delivered! 😁 It feels a little bit like Christmas to me!

So we will have our traditional family Christmas after all.

Happy Heritage Day South Africa!

I meant to post this morning in celebration of Heritage Day but instead I was rather preoccupied with doing 'stuff' as a family. South African has a vast and diverse history and heritage but I believe at our heart one of our core priorities is 'Ubuntu' - I am, because we are.

For about 10 years of my life I was known by my nickname. Given to me by my Matric as part of our standard 6 initiation, usually they fell by the wayside after the first few months. Well mine didn't, it really stuck. Even after I matriculated most people still called me V***n, it was really only family that actually used my real name. So I quite enjoyed the creation of this cake because I grew rather fond of foxes in that time. Although I think this little lady is possibly a lot more demure than I was at the time. 🤣⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ever wondered what goes into making a macaron? What they taste like? Or why these delightful little morsels cost such a sum...

Ask any baker and they will tell you it's because they are devilish little delights! They are incredibly tricky little cookies where sometimes even the slightest variation can go wrong. Many bakers have a love/hate relationship with these little biscuits because even with years of practice and a 'trusted recipe and technique they can sometimes still dissolve you into a puddle of tears. It's kinda like the 'hair' of the baking world, and no matter what you do sometimes you're just having a bad hair day. Or a bad mac day.

I don't often have disastrous mac making days anymore but any time I'm making macs there are always 2 little people hoping to get their hands on any 'macawrongs' in the batch so they can gobble them up. They don't even care if they're filled or not and will eat them straight off the baking sheet given half the chance.

Here's a little time-lapse of the process from start to finish for these pretty pineapple macs. I loved this fun fruity version. What flavour would you like to try?

Lately I've been craving an Old fashioned simple chocolate cake the way my Ouma used to make it. I'll probably end up making it some time this week if life doesn't get too busy, but until then I'll leave you with this...⠀⠀⠀⠀⠀⠀⠀⠀⠀

This is adapted from the same chocolate recipe my Ouma used and I turned it into a coffee cake one day when I was helping her bake and talking too much. I ended up pouring the entire jug of coffee (3 separate batters worth) into one cake. It ended up going to all the cousins to be eaten between our families and Ouma made a new cake, in which I was only allowed to mix for her while talking. 🤣 I can't honestly remember how old I was when this happened but it was in primary school. I have since made many, many more refined versions of the original 'flop-tjokkoffie-koek' and do both a Mocha Chocca version (this one) and a plain coffee version. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Memories are made in the little moments and sometimes the biggest mistakes can lead you to triumphs. Do you start every week feeling like this? No?

The irony is, as a baker Mondays are generally my quietest days so not really so Manic except for the part that it's a weekday. For the last 3 years we have been home schooling my eldest and to say that this Mom was not exactly cut out for being a Teacher is an understatement. But the thing about Moms is we will do just about anything for our babies so when that means homeschooling then that's what we do. Needless to say the pandemic has made our Mondays a heck of a lot more MANIC!

So I often end up catching up on admin I have been neglecting on a Monday morning, mostly because at least then it has something to do with cake! And who wouldn't be more cheerful starting a week off with cake! Or cupcakes, cookies, doughnuts, macarons anything really as long as it's pretty to look at and delicious to eat.

This gorgeous Carrot cake was made - what feels like - ages ago for one of my Mama Tribe friends for the baby shower of her precious baby girl. The theme was bees and centered around a very special item that was specially designed, printed and made for her by other talented WAHMs. So instead of completely destroying the delight that is Carrot Cake with loads of icing/fondant so we could match the theme I suggested a more abstract route. Where might a precious honey bee want to be? A gorgeous garden of flowers of course. Cherise absolutely loved the idea based on my explanation and I got to play to my hearts content.

All the blooms in the garden are edible and grown in my own garden so that I can be completely sure they are food safe and the scene wouldn't be complete without honeycomb and buttercream honeybees searching for sweetness.

I hope you will like my treats I have to share, they're homemade with love specially for you. I'm a bespoke home baker, meaning everything you order is made fresh just for you and completely unique. My recipes have been tried and tested (and improved upon - sshhh, don't tell my grans) for as many years as I've been baking until I'm completely happy with them.

Everything that comes from my kitchen is made by hand and uses only the best quality fresh ingredients. No packet mixes or shortcuts here, just yummy bakes made the old fashioned way but with all the colorful sprinkles that modern life brings. While I will always try my best to accommodate clients within their budget, my focus is on quality not quantity. I like to think of myself as the one stop shop for all things sweet or baked. So you can plan your whole party or event from cake to themed party treats from 1 place.

My menu's are built on what my customers most often look for but even if it's not on a menu I'm happy to bake for you. Whether it's the soetkoekies your Ouma used to make using her secret family recipe (because every family has one) or treats from heritages abroad that you can't find locally. I can quote for exactly what you want.

My focus has always been and will always be on flavour first. A beautiful cake is wonderful to look at but what is the point if you don't actually want to eat it? This is one of the main reasons I turned my hobby into a small business, life is too short to eat bad cake! But don't take my word for it, check out the reviews from my customers to see for yourself.

Costing is dependent on size, flavour and complexity in most cases so if you want a formal quote pop me a message and I can give you an accurate estimate. In the mean time use my menu's as a guideline for pricing. Due to all items being baked fresh I have limited availability so it is always best to book in advance where possible. Late orders may incur an additional service fee.

Could you live without your favourite foods for a week? It's torture, I tell you! What I wouldn't give to be able to munch on a cookie right now. But alas, no muching for me at the moment just lots of sipping and slurping. Post-op liquid diet day 3. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Thankfully I love soup, like I really do but any time you aren't allowed to eat something then of course everything else just makes you miss that even more. So choc chips cookies (probably dunked in coffee) are definitely going to be in the production line when I am back on Monday, as well as Jammy Dodgers (because husband came home from the shops with jolly jammers which are taunting me) he also brought me yoghurt and yogi-sip and all sorts of other nice (soft) treats. But right now, I swear my cravings for cookies, macarons and all things crunchy and sweet are worse than my own 2 little cookie monsters on any day! 🤣⠀⠀⠀⠀⠀⠀⠀⠀⠀

Bluetiful Birthday Cake!

Blue has always been my favourite colour, I love all the different shades and depths so I absolutely loved doing this cake.

It just so happens that this one was also one of my favourite types of cake and flavours from my menus. A classic lemon Chiffon with fresh blueberries. These flavours work so beautifully together and with the soft airy Chiffon sponge it becomes simply irresistible. Paired with a light lemon frosting and hand painted roses.

Seeing as I'm slowly approaching the 1200 mark and there are a few new faces around here I thought I would 're'introduce myself. 😉⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
I'm Tasha, the baker behind all of these sweet treats all over here. I've always had a sweet tooth and grew up with a mom that was a great cook and 2 grandmothers that were avid bakers. Many of my fondest memories are founded in food, and although I love eating I REALLY do not like cooking. I would be quite happy if one could sustainably live off of baked goods. I started baking when I was about 13 and no longer content with my Mom's less than stellar decorating skills. Although at the time mine were definitely questionable too. Think 'Nailed It' but with a bit more finesse. 🤣⠀⠀⠀⠀⠀⠀⠀⠀⠀

I am also Mom to 2 boys who keep this Mama Bear on the absolute tip of her toes, thankfully years of dancing means I've had lots of practice. We've been a homeschooling family since 2017 so my mornings are dedicated to trying to encourage both of my sons to do their school work in very different ways. Needless to say it looks a bit like a circus in our home currently given that the pandemic threw the whole world into disarray. 🙈 We are blessed to have the privilege of being able to stay safe and home and still receive an income.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Once I had Dylan (our first) I started baking for friends and family as a sideline. My focus has (and always will) been on flavour above apperance. A gorgeous cake is worth nothing if you don't want to eat it. I love baking and I'm incredibly happy to be able to do something I love and that allows me to make other people happy.

Angel Cake! It's like eating a cloud. It's a type of cake I love because it shines in its simplicity.

What it is NOT though is a cake that should be made in a hurry - like this one was. 🙈 As is the norm in my life I was rushing around between homeschooling, life and baking (for orders) and made this at the last minute on a whim before the nieces, nephews and my sister in laws arrived for a birthday picnic for a very special Oumie.

Annemé loves her Aunty Tasha's cookies and cupcakes so we couldn't help but snap this gorgeous pic of her devouring a death by chocolate cupcake at our family picnic to celebrate Oumie's birthday. Makes me think of a similar picture of me as a baby with a face full of chocolate cake and also my boys doing the same when they were younger.

Better late than never... It's Macaroon day!!!

So for those of you that guessed macaroons, you were right! Not to be confused with Macarons!

These little morsels are nothing lile their smooth topped colourful cousins. In fact, other than the fact that their main ingredients are egg whites and nuts that's about where the similarities end. But if you are a fan of coconut then I guarantee you will be powerless to resist these yummy bites. Crispy and golden on the outside and with a sweet chewy centre. They are just slightly addictive!

When the autumn weather starts to roll into winter I seem to have a need for all things "fall" inspired. Think rustic reds, oranges and browns like you see at Thanksgiving in America.

I've been dreaming about things like pecan pie and a caramel & spiced apple cake. So this week after the orders are done I may have to have a baking for the heck of it kind of day. Which isn't so great for my diet attempts, but I'm sure I'll be able to find some friends and neighbours willing to help me gobble down the goodies. 😜 Anyone keen to volunteer?

In the mean time I will just have to be content with the last caramel and pecan bake which is my delicious caramel pecan choc chips.

My luscious lemon cake is an absolute must for lemon lovers. The lemon juice and zest really comes to life in this classic cake and with a lemon cream cheese icing and a lemon curd drip you really just can't go wrong! I always find that this is a crowd pleaser for my clients that aren't huge fans of sweet things. Although I don't really think any of my cakes are overly sweet but the citrus really does help add a tangy zing that hums through the sweetness.⠀⠀⠀⠀⠀⠀⠀⠀⠀

A rich and moist chocolate sponge with a homemade salted caramel centre and chocolate mousse frosting! It's everything you love about the classic chocolate but it's cake! I call that a win. 😉⠀⠀⠀⠀⠀⠀⠀⠀⠀

Those of you who know me, know that I am famous for my (very fussy) sweet tooth and love of baking up some special treats.

I'm a stay at home mom who loves to bake. I have been baking for many years now, ever since I started taking over decorating my own birthday cakes from my mom because I decided she wasn't achieving the results I wanted. LOL! I love trying new recipes and testing out different flavour combos whilst playing with design changes of good old fashioned bakes. My love languages are acts of service and gifts so the people I love get lots of baked goodies. That is if my 2 most beloved little munchkins and hubby dearest don't eat everything up first!
