Pancake Recipe
Ingredients :
°1 cup flour
°Two eggs
°½ c water or milk
°¼ tsp salt
°2 tsp butter, melted

Instructions:

In a bowl, combine flour, butter and eggs. Gradually add milk or water, stirring to consolidate. Add salt and beat to smooth till you get a running consistency

Heat oiled iron pan or skillet on medium-high heat. Pour the batter over the frying pan, using about 1/4 cup for each pancake.

Tilt the dish in a circular motion so that the batter evenly coats the surface.

Cook the pancake for about 2 minutes, until the base is lightly golden and bubbles appear on the dough

Release with a spatula, flip and repeat on opposite side. Serving hot.

LONDON FISH & CHIPS by D’lish Cuisine


BATTER
600g fresh hake or freshly frozen hake fillets, skinless and deboned
1 egg
½ cup flour
¼ cup cornflour
2 green chillies, ground
¼ teaspoon salt
¼ teaspoon egg yellow food colouring
½ cup soda water (cold)
½ teaspoon baking powder

Add everything to a mixing bowl except the baking powder. Whisk until smooth, add the baking powder and whisk in. (Do not over mix the batter)
Sprinkle salt over the fish and then sift flour generously over each piece of fish. Dip the fish into the batter and deep fry on medium heat until golden brown and crispy. Serve immediately.

TIP: fry all the pieces of fish and then place all back in very hot oil, it will crisp even more and it will stay crispy for longer.

Tartar Sauce

¾ cup mayonnaise with cream
2 sweet & sour gherkins, chopped
2 tablespoons chopped onion
2 tablespoons grated carrots
¼ teaspoon salt
¼ teaspoon freshly ground black pepper

Mix all the ingredients together and serve. Enjoy
