A Commitment to Quality
Making food is a labour of time and love. It requires investing a little bit of yourself into everything you make. From my perspective, running a successful small catering business also requires a commitment to quality - if I wouldn’t eat it, I won’t serve it.
My mom has often suggested I use less expensive ingredients, or that I substitute margarine for butter as it brings down costs: this is a small margin, large investment and labour-intensive business. The answer: I won’t compromise! In simple terms, if a recipe calls for butter, I use butter.
I am also committed to cooking meals from scratch. I am the first to admit that I frequent the isles of supermarkets looking for readymade meals when I am too tired to cook - yes even caterers get tired of cooking. But I have found that the food is full of preservatives, additives and ingredients I can’t pronounce. So when I cook the meals I serve and deliver, I make everything from scratch, unless I can find a better whole food, good-quality option, like pasta for example. Sometimes I couldn't do it better myself, so I don't.
I also grow some of my own ingredients - most of the herbs I use in my cooking are organically grown in my own garden. I also only use free range eggs in everything I make (I have free range and Halaal options available for all my meals, obviously at a slightly higher cost.) I also only use butter in baking and good quality olive oil in most of my meals (curry aside!)
