Spicy Prawn curry with coconut cream and green beans.

Blueberry Scones

-Ingredients

- 2 cups Cake Flour
- 4 tsps baking powder
- 1 cup milk, cold
- 1/3 cup sugar
- 1 tsp Salt
- 5 tablespoons of frozen butter
- 3 cups blueberries, fresh


GLAZE:

- 1 cup icing sugar
- 1/4 cup water
- 1 tsp vanilla
- 1/2 tsp fresh lemon juice

Directions Preheat oven to 180*C. Mix salt, sugar, flour, cold butter and baking powder in a bowl. Add milk into dry ingredients and mix. Fold dough, and knead for 3 min. Carefully fold in the blueberries. Move dough to floured cutting board and roll flat desired thickness and cut using a cookie cutter or a glass dipped in flour first. Place in greased Swiss roll pan or oven roast pan. Bake for 20-25 min or until they are slightly golden brown.

Mix glaze ingredients in a bowl, and drizzle over cold scones with a fork.

Enjoy with beverage of your choice.
