SCONES
3 cups cake flour
3 tsp baking powder
1/2 tsp baking soda(bicarbonate of soda)
150g margarine/butter (cold/frozen)
1/2 cup sugar
Salt
1 tsp vanilla essence
1 egg
1 cup inkomazi (u can use freshmilk)
In a bowl Sift in flour & baking powder, add salt, soda, sugar and mix.
In another bowl add vanilla essence, milk & egg mix well & set aside
Add your 150g margarine to the bowl with flour and rub in using your fingertips till you get a crumbly mixture.
Pour in the eggs & milk mixture & use a fork to mix jus to combine don't overmix.
Transfer the dough to a floured surface. Don't knead.
Spread the dough and lightly flatten it using your hands(palm) or a rolling pin. I use hands. Don't put pressure on ur dough.
Dip your cookie cutter in flour as you cut out each piece. Don't twist ur cutters, place cutter on the dough, press down, lift it up. Place scones on a greased baking tray.
Brush the top with milk or egg wash . I use milk.
Bake in a preheated at 180 until golden brown on top .
