Braised Beef Short Ribs

Ingredients

1 kg Beef short ribs
2 Tbsp Seven Colours Grill SeasoningTM
2 Tbsp Flour
2 Tbsp Oil
1 Onion, diced
1 large Carrot, sliced
1 tsp Garlic, crushed
1 Tbsp Tomato paste
1 cup dry red Wine
300 g Baby potatoes
1 tsp fresh Thyme
2 cups Beef stock

Method

Preheat the oven to 180 °C.
Rub the short ribs with Seven Colours Grill SeasoningTM, then dust them with flour.
Heat the oil in an ovenproof pot/pan and brown the meat.
Remove the meat, then add the onion, carrot and garlic and sauté for a few minutes.
Add tomato paste and mix well.
Add wine and cook until it has reduced by half.
Return the short ribs into the pot, with the baby potatoes, thyme and stock.
Cover with a lid and cook in the oven for about an hour and a half.

Beef and Barley Soup

Ingredients

600 stewing beef
1 Tbsp Oil
1 Onion, diced
1 large Carrot, chopped
3 Celery sticks (no leaves), chopped
100 g Mushrooms, chopped
1 Tbsp Seven Colours Grill SeasoningTM
1 tsp Paprika
1 tsp Cumin
1 tsp Mixed herbs
1 Tbsp Garlic and ginger paste
1-2 green chillis
2 Bay leaves
3 cups Beef stock
½ cup Barley
Pinch each salt and pepper


Method

Heat the oil in a pot and brown the beef.
Add onion, carrot, celery and mushrooms to the beef and sauté until the vegetables turn slightly golden.
Add Seven Colours Grill SeasoningTM, paprika, cumin, mixed herbs, garlic and ginger paste and chillis.
Add bay leaves and beef stock and allow everything to simmer on medium heat with the lid on for about 30 minutes.
Add barley and cook for 20 more minutes, or until it’s well cooked.
Add salt and pepper.
Serve warm with crusty bread on the side.

Chicken Burger

Ingredients
500 g Chicken mince
1 ½ Tbsp Seven Colours Grill Seasoning™
1 tsp Garlic powder
2 Tbsp fresh parsley
2 Tbsp chopped Peppadews
1 tsp Paprika
4 Tbsp Mayonnaise
5 rashers Bacon
½ cup Flour
2 Eggs, whisked
½ cup Breadcrumbs
1 cup Oil
2 Tbsp Sriracha sauce
5 Burger buns
1 Red onion, sliced
1 cup Lettuce, diced
5 Cheese slices

Method
In a bowl, mix the chicken mince, 1 Tbsp Seven Colours Grill SeasoningTM, garlic powder, parsley, peppadews, paprika and 2 Tbsp mayonnaise.
Using your hands, make patties to the size of your liking. Freeze for about 30 minutes. Crisp the bacon in a pan.
In three separate bowls, place flour, whisked eggs, and breadcrumbs, seasoned with remaining Seven Colours Grill SeasoningTM.
Remove patties from the freezer, cover with flour, then dip in the egg, and lastly coat with breadcrumbs. Fry the patties in oil until well cooked, golden and crispy.
For the dressing, mix remaining mayonnaise and sriracha.
Layer the burgers with chicken patty, sauce, crispy bacon, onion, lettuce and cheese slices.
Enjoy with fries seasoned with Seven Colours Grill Seasoning™.

Lamb chops in creamy Tomato gravy

Ingredients

6-8 Lamb chops
Pinch each salt and black pepper
2 Tbsp Oil
1 large Onion, chopped
1 Tbsp crushed Garlic
1 tsp crushed Turmeric
1 tsp crushed Ginger
1 tsp crushed Chilli
2 Tbsp Seven Colours Grill SeasoningTM
1 Tbsp Sweet basil
1 tsp Paprika
2 large Tomatoes, grated
500 ml fresh cream

Method

Season the chops with salt and pepper. Heat oil and fry the chops on both sides until cooked. Remove from the pan and set aside.
In the same pan, fry the onion until it is cooked then add garlic, turmeric, ginger and chilli. Add Seven Colours Grill SeasoningTM, sweet basil and paprika.
Add tomato and cook on low heat to about 15-20 minutes.
Add the cream and cook until it thickens, then add the lamb.
Let this simmer for a few minutes.

Tip: Serve with savoury rice and side salad.

panko chicken and bacon waffles

Ingredients:
2 cups Flour
3 Tbsp Seven Colours Grill SeasoningTM
2 Eggs
¼ cup Hot sauce
1 cup Panko bread crumbs
2-4 Chicken breast fillets, cut into halves
2 cups Oil
¾ cup Sugar
1 Tbsp Baking powder
3 Large eggs (separated)
1 ½ cups Milk
1 cup Unsalted butter (melted)
6 Bacon strips, cooked and chopped
1 cup Cheddar cheese, grated
Chives

Method:
Mix 1 cup of flour and 2 Tbsp Seven Colours Grill SeasoningTM in a bowl. In a second bowl, mix eggs with hot sauce, and lastly, place the panko bread crumbs in a third bowl.
Dip the chicken fillets in the egg mixture first, then dip in the flour, and finally press the chicken into the panko breadcrumbs to coat thoroughly.
Heat oil in the pan over medium-high heat.
Add two breast fillets at a time and cook 3 minutes per side or until golden brown.
For the waffles, preheat your waffle maker machine.
In a large bowl, whisk the flour, sugar, Seven Colours Grill SeasoningTM and baking powder. Set aside.
In another bowl, whisk the egg yolks, milk, and butter. Set aside.
In a large bowl, use a hand mixer to whip the egg whites to soft peaks.
Add the wet ingredients to the dry, and mix until they are almost combined. Add the egg whites, bacon, cheese, and chives to the bowl, and gently fold them in until combined.
Portion the batter into your waffle machine, and cook for about 5 minutes, until golden brown.
When the waffle has finished cooking, place directly on the wire rack. Finish cooking the remaining waffles. Place chicken on top of waffles and enjoy.

Cooking for loved ones in the month of love

Breakfast Bake

Ingredients
2 Tbsp Butter
8 English muffins
8-10 Bacon slices
7 Eggs
2 cups Milk
1 Tbsp Seven Colours Grill Seasoning
1 tsp Garlic powder
1 tsp Onion powder
½ tsp Paprika
1 pinch Nutmeg

Method:
Grease a baking dish with the butter. Slice open the English muffins. Arrange them in the baking dish, slightly overlapping each other. Position the bacon slices in between the muffin halves.
Whisk together the eggs, milk, Seven Colours Grill Seasoning, garlic powder, onion powder, paprika and nutmeg.
Pour this mixture over the muffins. Gently press down on the muffins so that they are mostly covered with the egg mixture. Cover with plastic wrap and refrigerate for 1 hour.
Preheat the oven to 180 °C. Remove the plastic wrap and cover the baking dish with aluminium foil. Bake for 20 minutes.
Remove the foil and bake for a further 10 minutes or until lightly browned.

Chicken Livers and Spinach

Ingredients:
2 Tbsp Oil
1 Onion, chopped
500 g Chicken livers
1 Tbsp Seven Colours Grill SeasoningTM
1 Yellow pepper, chopped
1 Red pepper, chopped
300 g Spinach, chopped
1 cup Garlic sauce

Method:
In a pan, heat the oil and fry the onion until soft, 3-5 minutes.
Add the chicken livers and Seven Colours Grill SeasoningTM and cook for about 5 minutes. Keep an eye on them as they cook quite fast.
Add the peppers and leave to simmer for 1 minute. Remove from the heat and set aside.
In a different pot, boil the spinach until well cooked. Drain and set aside to cool.
In a bowl, mix together the livers, spinach and garlic sauce.

TIP: Serve with rice or bread.
