Besides pap and curry..... Samp has my full attention. Charne would have Samp for breakfast If she could. Hahahaha

Best dish for a braai

Stampmieliegereg / Samp side dish

500 g cooked samp
400 ml cream
400 g bacon (diced or cut in pieces)
250 g chopped mushrooms
1 chopped onion
1 and a half packet of mushroom soup powder
Black pepper and garlic as preferred
1 can of pitted sweetcorn
250 g cheese (or as preferred)

Fry the onions, bacon and mushrooms until cooked.
Add black pepper and garlic (I also added parsley).
Remove from heat and place in a casserole (oven proof)

Add the cooked samp and half of the cheese.
Mix the cream and the soup powder and add to the mixture in the casserole.
As well as your other variations of ingredients.
Finish off with the rest of the cheese.

Put in the oven just to heat everything up for about 20 min on 180°C.
Grill the cheese just before serving.

CURRY-SPICED COTTAGE PIE

A family-pleasing classic with a twist. The turmeric addition to the potato topping gives a beautiful colour. It is a whole meal in one pot.

500g beef mince (I sometime use lamb mince)
1 medium onion, finely chopped
1 Tbsp vegetable oil
½ tsp turmeric
2 tsp garam masala
½ tsp cumin seeds
2 garlic cloves, grated or minced
2 tsp fresh root ginger, grated
2 red chillies, finely chopped
400g tin chopped tomatoes
300g frozen peas
25g fresh coriander leaf, chopped
For the potato topping:
1kg peeled potatoes, cut into chunks
150ml milk
80g butter
1 tsp turmeric
1 egg yolk
1 x 24cm round deep pie dish. I’m using a round Pyrex casserole dish.
Preheat the oven to 180C fan / 200 C / gas 6 / 355F
1. Heat the oil in a frying pan on a medium heat, add the onion and fry for about 10 mins until it starts to go golden brown. Add the turmeric, garam masala and cumin seeds and toast for a further 2 minutes. Then add the garlic, ginger and chilli, and cook for a further 5 minutes until all is soft and lightly brown.
2. Add the beef mince and cook until any liquid has evaporated, then add the tinned tomatoes and continue cooking for a further 15 minutes. Add a little water only to stop the mixture from catching/burning, otherwise you don’t want it too wet or liquid.
3. Add the peas and coriander leaf. Taste to adjust the seasoning, add salt and pepper now if you want.
4. Decant the cooked meat mixture into the ovenproof pie dish, level the surface and leave to cool. (Putting potato topping onto a hot meat mixture is difficult to spread).
5. For the potatoes, boil them for 15-20 minutes until soft in the middle, then drain. Mash well with the milk, butter and turmeric. Lastly, fold in the egg yolk and mix well to combine.
6. Spread the potato over the beef mixture, fork up the surface for brown bits and texture.
7. Bake in the oven for 30 minutes until the potato topping is crisp and golden, and the beef mixture is bubbling up the sides.
Serve immediately.
You can also freeze this, make it up to step 6 and freeze. Defrost before cooking.

Good day ALL you Beautyful people. Another chicken recipe. I would also try a semi sweet wine as my taste buds go ape for sweet an sour or sweet and salty.

Easy Lemon Chicken Recipe

Ingredients

1/4 cup olive oil
3T minced garlic
1/3 cup dry white wine
1T grated lemon zest
2T freshly squeezed lemon juice
1 1/2t dried oregano
1t minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on
1 lemon

Method

Preheat the oven to 180C.

Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.

Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.

Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

"Hierdie sous kan jy vries as jy klaar die sosaties gemaak het en dit is heerlik as jy dit net weer opkook en gebruik oor krummelpap. Die resep kan jy maklik halfveer of selfs ver"kwart". Mens mismaak nie 'n sosatie met allerhande vrugte en groente nie, vleis en vet, dit is die regte ou manier.

(Ek sal natuurlik 'n skyfie ui tussen inwerk maar dis my opinie. Ek het hom sommer vir julle klaar verminder, maar ek sal die grootmaat ene aan die einde gee, hierdie een lewer so +-60 sosaties)

Oos-Vrystaat Sosaties
11kg vleis blokkies (skaap, bees vark, wild of hoender)
4 kg brisket of vark spek blokkies
Sous:
2kg uie, gekap kook tot sag in 4k water. Voeg water by in die nog nie sag is nie.

Voeg by:
750ml bruin asyn
1 klein blikkie stroop
1 klein blikkie appelkooskonfyt
1 k suiker
50g matige Kerrie
25g sout
1 t steak and tjops spice
5 gekneusde suurlemoenblare of lourierblare
1 kaneelstokkie
1/2 botteltjie borrie
1 e geel voedselkleursel
Kook als saam tot gaar.

Meng 1 k koekmeel met water tot pasta en verdik sous hiermee.
Sous moet vleis heel bedek. Moenie 'n staalbak gebruik nie. Bêre in yskas vir 7 dae. Roer elke dag om. Ryg vet en vleis om die b***t op die stokkie.

Hier volg die oorspronklike resep. Dit lewer ongeveer 250-300 sosaties, hang af hoe vol jy die stokkie laai.
Oos-Vrystaat Sosaties
33kg vleis blokkies (skaap, bees vark, wild of hoender)
17kg brisket of vark spek blokkies

Sous:
7kg uie, gekap kook tot sag in 12k water. Voeg water by in die nog nie sag is nie.

Voeg by:

200g matige Kerrie
100g sout
4 t steak and tjops spice
1 groot handvol suurlemoenblare of louriesblare

Kook als saam tot gaar.

Bacon & Kaas Potbrood

4k Selfraising flower
2t sout
2e suiker
1pkt yeast
Lou warm water v knie

Ekstra vir die broodjie
400g Kaas
1 x 250g back Bacon
15ml Pietersielie

Nou hier gaan hy
Knie die die droe bestandele tot n lekker deeg. Knie nou so 100g kaas en so 3 velle gesnipperde bacon in.

Laat die nou verdubbel in grote

Nou smeer jou pan goed ek spuit wel ook sray & cook ook.

Plaas jou deeg in die swaarboompot en gooi die res van die kaas bo op.

Nou voer jy jou pot uit met die Bacon en laat vir so nog vir so 10-15min.

Nou vat jy hom kole toe en bak hom tot jy hom ruik.- die pot se deksel moet op die pot geplaas word gedurende bak porses . gooi ook so paar warm kole bo op sy deksel vir volkome hitte in en om die pot.

*(Jy kan dit ook oond toe vat op so 180'c vir so +~40-45min.)

STEWING BEEF CURRY

INGREDIENTS
400 ml coconut milk
2 kg stewing beef cut up
3 tablespoons oil
2 onions sliced
6 garlic cloves chopped
1 1/2 teaspoons ginger
1 1/4 teaspoon cumin
1 1/4 teaspoon coriander
1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
1/4 teaspoon garam masala
2 cardamom pods crushed
2 star anise
2 bay leaves
4 cinnamon sticks
2 chilies chopped
1 1/2 tabelspoons tomato paste
1 teaspoon salt
1 cup plain yogurt
1/2 cup coriander chopped

INSTRUCTIONS
Heat the coconut milk until boiling point in a large pot.
Add in the beef cubes and lower the heat.
Boil for about 35-40 minutes with a lid on.
Drain the coconut milk off the beef cubes into a bowl.
In the same pot with the meat add the oil over medium heat add in the garlic, ginger and onion, cumin, coriander, cayenne pepper, turmeric, garam masala, cardamom pods, cinnamon sticks, star anise, chillies and bay leaves and stir fry.
Add the tomato paste and reserved coconut milk and cook for about 8-10 minutes stirring frequently.
Stir in yogurt and salt and cook, covered for about 18-20 minutes.
Garnishing with the coriander and serve with rice OR PAP. hahahaha

Cajun Corn On The Cob

Ingredients :
4 ears of corn husked
2 tablespoon olive oil
salt and pepper to taste
4 tablespoon mayonnaise i used vegan mayo
⅓ cup sour cream or Mexican crema
1 ½ teaspoon cajun spice
1 ½ teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon cilantro chopped
½ cup feta or cotija crumbled
1 tablespoon lime juice
1 teaspoon chipotle or chili powder optional
Instructions :
Oil and spices. In a small bowl, whisk olive oil, half of the cajun spice, half of the paprika spice, garlic and onion powder, salt, pepper to taste.
It is fine if you have extra oil-spices mixture left, you can brush the corn later, right before brushing with the mayo sauce.Place each cob on a piece of foil. Brush each corn generously with the mixture. Wrap in foil.
Transfer the corn to the oven and bake for 30 minutes at 425 F. If you like the corn to be softer, remove it from the oven after 30 minutes, brush it with more oil-spice mixture and bake another 20-25 minutes.
While cajun corn on the cob is baking, prepare the mayo sauce. In a medium bowl, mix mayo, sour cream, leftover cajun and paprika, lime juice (or squeeze it later directly on the corn as needed), salt, and pepper to taste.
Take the corn out from the oven, let cool slightly and brush with leftover oil mixture (optional) and finally mayo mix all over the corn. (If you want to get the corn slightly charred without using a grill, a grill pan would be a great option here. Transfer the baked corn directly to a lightly greased grill pan and let all the sides grilled until the desired result, don’t overcook it though!).
Top with crumbled feta or cottage cheese, chopped cilantro, cajun spice. Serve warm

Good day ALL you good people. I will never ever grow tired of Curry or Pap. Here is another post of the curry in a hurry. Lol. Yes, there are many curries. A very special one I love is Lyton Pretorius wors curry he makes. Man oh man. Too Good. Ja..... With pap. Hahahahah

LAMB OR BEEF CURRY

1 kg lamb of your choice cut up into curry pieces
1/4 cup oil
2cinnamon sticks
2bayleaves
2 star aniseed
1/4 tsp roasted and ground fennel seeds
1 onion chopped
Curry leaves
1full tsp ginger and garlic paste
1/2 tsp tumeric powder
2 tbsp mixed masala
2 to 3 tbsp Kashmiri chillie powder
3 grated tomatoes
Salt to taste
3 potatoes halved 2 green chillies split halfway
1/4 tsp garum masala
Chopped dhania

METHOD

Heat oil in a pot
Add whole spices
Onions and curry leaves
Lightly brown and add ginger/garlic paste
Add tumeric and masala and chilli powder
Add in the lamb..mix well
Add grated tomatoes and salt
Cover and cook on medium heat for abt 10mins or when liquids dry a bit and oil surfaces
Add 500ml boiling water and cook till softened ..add more water as needed
15mins before end of cooking time,add potatoes and green chillies
Cook till potatoes are done
Sprinkle garum masala over and a gentle shake of the pot
Then add chopped dhania and curry leaves

Setimes a quick and simple noodle meal is all you need.

Masala Noodles :
Ingredients :
1 cup frozen mix veg
3 pkts noodles
2 cups water to cook in

Sauce :
2 TBS oil heated in a small frying pan
1/4 onion sliced
3 garlic cloves chopped fine
pkts of noodle spice mix
2 tsp sugar
2 tsp soy sauce
2 tsp peanut butter

Method :
Add the hot oil to the sauce ingredients and mix well.Pour over noodles in pan,garnish with dhania,almonds and sesame seeds.

SPEK EN AARTAPPELPOT

Bestanddele:

1 kg middelslag aartappels
’n groot blok cheddarkaas
3 pakke blokkies spek
’n paar wit uie en een rooi-ui
sout en peper
’n 500gr blok botter (dit klink baie maar dit is reg want dit is jou "smeersel" in die pot vir die aartappels
1 pakkie vars sampioene
1 pakkie wit uie soppoeier
’n bietjie water om die soppoeier mee aan te maak
Vars grasuie
1 houer vars suurroom (250 ml)
’n handvol gerasperde cheddarkaas

Metode:
Verhit die platboompot en smelt die botter.
Braai die spek tot krakerig.

Sny aartappels in skywe (ongeveer 3 cm dik) en die uie in dik skywe.

Skep die spek uit maar los die “vetterigheid” in die pot.
Pak die pot met lae van die aartappels, gevolg deur ’n laag uie.
Voeg sout en peper by na smaak.

Plaas die sampioene heel bo-op.
Meng die soppoeier met die water en gooi bo-oor die lae aartappels, uie en sampioene.

Kook vir 30 min.

Voeg gekapte rooi-ui en suurroom by en kook vir ’n verdere 15 minute totdat aartappels sag is. Sit spek bo-op.

Voeg ’n laag gerasperde kaas bo-oor en prut vir 5 minute.

Good day ALL you good people. This Salad is great with a braai and some garlic bread.

CORN AND ASPARAGUS BAKE

Ingredients:

460 g Asparagus Cuts drained
410 g Cream Style Sweetcorn
2 Eggs
125 g Cheddar Cheese grated
5 ml Robertsons Spice For Rice
5 ml Robertsons Thyme

Instructions:
Mix the drained asparagus cuts and cream style sweetcorn together.
Add the beaten eggs and half the cheese, spice for Rice and mixed herbs.
Place in a shallow greased dish.
Top with remaining cheese and bake at 180 c for about 30 minutes or until cooked through.

Delicious served as a light lunch or as a vegetable dish with a braai.

Ingredients needed are :
For filling
- minced meat 800g
- olive oil or vegetable oil 1 tbsp
- onion 1/2 cup
- garlic 1 tsp
- salt 1 tsp
- beef bullion seasoning 1 tsp
- thyme 1 tsp
- Rosemary 1/2 tsp
- carrot 1/2 cup
- peas 1/2 tsp
- corn starch or flour 3 tbsp
- water 1 cup
-Tomato paste 1 tbsp
For potato purée
- 1.5 kg tomato
- butter 1 tbsp
- milk 1/2 cup ( 120 ml) sorry not 1 cup as said in the video .
- 1/3 cup cheddar or Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- egg yolk 1
-potatoes 1.5kg

Flippen Lekker Romerige Texas-Kaassteak

Genoeg vir 4 mense
Bereiding: 20 minute
Rustyd: sowat 1 uur of oornag
Gaarmaaktyd: 5-10 minute

STEAK EN MARINADE

2,5 kg Texas-steak
sap en skil van 2 suurlemoene
25 ml (5 t) worcestersous
vars gemaalde swartpeper
4 knoffelhuisies, fyn gekap
45 ml (3 e) olyfolie
sout

BOLAAG
100 g cheddarkaas, gerasper
100 g mozzarellakaas, gerasper
145 g bloukaas, gekrummel
2 eiers, geklits
35 ml heelkorrelmosterd
sout en gemaalde swartpeper
30 ml (2 e) gekapte pietersielie
gebakte aartappelwiggies en roketslaai vir voorsit

STEAK EN MARINADE Sny die steak in porsies van 200-230 g.

Meng die res van die bestanddele vir die marinade behalwe die sout en mariner die steaks oornag of ’n paar uur.

Verhit die oond tot 230 °C en verhit ’n riffelpan tot baie warm.
Braai die helfte van die steaks in die verhitte riffelpan. Braai 2-3 minute aan albei kante en sout sodra die steaks geseël is.

Wag tot die pan weer baie warm is voor jy die volgende steaks braai. Dit is belangrik om die steaks teen ’n baie hoë hitte te seël.

Skep die gebraaide steaks op ’n voorbereide bakplaat en laat ’n paar minute rus.

BOLAAG Meng al die bestanddele vir die bolaag en deel die vulsel tussen die steaks.

Skep die vulsel op die steaks en rooster sowat 5 minute in die oond.

Sit voor saam met gebakte aartappelwiggies en roketslaai.

Any salad will be amazing with this dish.

Good morning all. Another yummy steat maranade. Just love it.

Best Steak Marinade In Existence

Ingredients:
1/2 cup olive oil
1/3 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
2 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon black pepper

Instructions:
In a small bowl, whisk together the olive oil, soy sauce, Worcestershire sauce, balsamic vinegar, Dijon mustard, garlic, rosemary, thyme, and black pepper.
Place the steak in a large resealable bag or a shallow dish and pour the marinade over it, making sure that the steak is well coated.
Marinate the steak in the refrigerator for at least 2 hours, or up to 24 hours. The longer you marinate the steak, the more flavorful it will be.
Preheat your grill to medium-high heat. Remove the steak from the marinade and discard the remaining marinade.
Grill the steak to your desired level of doneness, about 5-7 minutes per side for medium-rare.
Let the steak rest for a few minutes before slicing and serving.

Good day ALL you good people. Ribs is like KFC...... Both are finger licking good. Just saying.... Today I'm posting this ribs recipe and last night i was with Allan, Marie and Mel who were enjoying ribs and chips for dinner. Lol

GRILLED SHORT RIBS

Chopped chillie can be added or some tabasco sauce for some kick

INGREDIENTS
6 tablespoons white vinegar
½ cup soya sauce
½ cup dark brown sugar
½ cup water
2 tablespoons black pepper
8 tablespoons white sugar
½ cup garlic chopped
3 kg short ribs cut across the bones
4 tablespoons oil
1 large onion grated
2 tabelspoons rosemary chopped

INSTRUCTIONS
Mix together the vinegar, soy sauce and water in a glass or bowl.
Add in the two sugars, oil, onion, pepper, and garlic, rosemary and mix until the sugar has melted.
Place the ribs in the sauce and cover with cling wrap and place in the fridge to marinade for 8 hours.
Remove the ribs from the marinade and braai over medium coals until done.

Nothing wrong with the good old faithful noodle salad. I think Janine Pretorius can make this with her eyes closed. She has made this so many times with the Spitz......
Still stays a popular salad.

KERRIE NOODELSLAAI

500g Gaar Skroefie Pasta/ Noodels
1 Koppie Sultanas geweek vir 3 min in kookwater.
1 Green Pepper in klein blokkies
1 Ui in klein blokkies
1 Klein Blikkie ingelegde geel perskes in blokkies sonder stroop.
250ml Tamatie Sous
125ml Bruin Asyn
100 ml Witsuiker
30 - 50 ml Kerrie poeier
1 Teelepel growwe Swartpeper
1 Teelepel Sout
125ml Canola Olie

☆ Meng al die sous elemente saam en gooi oor die res en meng alles goed deur, bedek met selofaan of deksel en plaas in yskas.
Roer slaai na 12 ure goed om.

Roer slaai weer net voor jy dit bedien.(Slaai is soos meeste kerries beter as dit 24 uur voor die tyd gemaak word.)
Hou vir maklik 'n week in yskas.

Add the tomato paste and reserved coconut milk and cook for about 8-10 minutes stirring frequently.
Stir in yogurt and salt and cook, covered for about 18-20 minutes.
Garnishing with the coriander and serve with rice.
Don't forget the putu too. Lol

Good day ALL. Personally I think this is a dish most of us grew up with, but sadly it is not promoted with our younger generation.

MELKKOS Condence milk

1 tin condensed milk. 2 cups water
1 liter of milk 1 cup flour
125 ml butter pinch of salt
Mix the condensed milk, water and milk in a saucepan. You can add sugar if not sweet enough.
Rub the butter into the flour so that it looks like crumbs. Add the salt.
When the milk mixture is hot, add the flour mixture and stir everything together until boiling and it thickens. Serve warm with cinnamon sugar.

𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗦𝗮𝗹𝗮𝗱 𝘄𝗶𝘁𝗵 𝗳𝗿𝘂𝗶𝘁𝘀 𝗮𝗻𝗱 𝗠𝗮𝘆𝗼𝗻𝗻𝗮𝗶𝘀𝗲

INGREDIENTS :

3 cups chicken, chopped into small pieces
3 tablespoons lemon juice
3 stalks of celery, chopped
1/2 cup walnuts, toasted or grilled
Pepper powder
Salt
15 tablespoons of mayonnaise
1 1/2 cups of grapes, cut in halves
1 1/2 apples, peeled and cut into small pieces

METHOD:

1_ Add chicken and water into a pot and cook until the chicken is cooked through. Transfer chicken to a plate, let it cool.

2_ Meanwhile, toast the walnuts in the oven for about 8 minutes. Remove from the oven and let it cool.

3_ In a bowl, add lemon juice, apples, celery, grapes, cooked chicken, toasted walnuts and mayonnaise, then add a pinch of salt and pepper powder. Stir well to combine all the ingredients.

4_ You can serve immediately or you can refrigerate this Salad for 30 minutes to an hour before serving.

I am sure by adding a table spoon or 2 of sweet chilli chutney will move this to the next level. A table spoon of condensed milk added may just promote it into varsity level.

GEBAKTE KAAS STEAK

BENODIG:
1kg tenderised steak (sny in stukke) geur met speserye van jou keuse.

Sny 2 uie in dun skywe. Sny 1 bakkie mushrooms in skywe. Pak lae om die b***t van vleis, uie en mushrooms in 'n oondvaste bak.

Meng:
200ml melk
250ml room
1 eetlepel worcestersous
1 eetlepel chutney
1 eetlepel tamatiesous
1 pakkie wit uie sop

MAAK SO:
Meng goed en gooi oor vleis in bak.Strooi 1 koppie gerasperde kaas bo-oor en bedek met foelie of maak toe met deksel. Bak vir 60 - 90 minute teen 160°C.

You can enjoy this with rice, Pap or on a roll/ toast. Lol

Good day ALL.

This is a treat that would remind me of my Pizza Girl Melonie Bryant . She is a to go to for any good meal or treat.
It's so cheesy and cooks in just 5 mins in a pan.

INGREDIENTS
1 egg
500ml (2 cups) of water
800g (6 3/8 cups) flour
2 tbsp olive oil
1kg boiled potatoes
50g butter
1/2 tsp salt
1/2 tsp black pepper
250g cheese
140g salami slices

METHOD
In a bowl mix together egg with olive oil, water, flour and salt. Let the dough rest for 10 minutes.
In another bowl mix together boiled potatoes with butter, salt, and pepper.
Divide the dough into the 4 pieces and roll it out, fill with prepared potatoes, cheese and salami.
Fry in the pan from both sides until golden brown, about 4-6 minutes.

Good day all you good people. Pap is my weak spot . I will eat it with any meal. Love it big time. Funny how myself and Lyton Pretorius loves it but Charné Pretorius will not eat it. Lol. She is just not cool.

BULLYBEEF MIELIEPAP

Bestanddele:
5 x 250ml Water
5 x 250ml Mieliemeel (wit of geel mieliemeel)
10ml Sout
1 x Blikkie Bullybeef
1 x Blikkie Sweetcorn
1 x Blikkie Mieliepitte (water afgegooi)
500ml Gerasperde Cheddar Kaas.

Metode
Maak pap met die eerste 3 bestanddele,
Meng Bullybeef, sweetcorn, mieliepitte en kaas saam, voeg by die pap en meng goed deur en laat dit op lae hitte prut tot die pap gaar is.

Geniet dit saam met braaivleis.

Good day ALL you good people. You can do so much with potatoes. I think Roxy will add bacon and cheese with a sweet chilli sauce for Ly and Mason. Hahahaha.

Rocky Road potatoes:

500g baby potatoes cooked in salt water until just tender,
Put in a shallow baking tray sprayed or buttered so it does not stick
Lightly smash with the bottom of a drinking glass
Slice 1 garlic clove into fine slices and put over smashed potatoes
Pour 1/4 cup of good olive oil over
I added fresh Rosemary leaves finely chopped by sprinkling it over the dish
Add salt and black pepper to taste
Sprinkle smoked paprika over to give depth to the dish
Bake in a pre-heated oven at 220 degrees Celsius for 8 minutes,
Gently turn the potatoes over, give another sprinkle of all the spices and put back in the oven for another 8 minutes.

CREAMY BILTONG POTJIE

YOU NEED:
1 punnet of white sliced mushrooms
1 finely chopped onion
250ml thick cream
2 cups of sliced biltong cut in half (not dry)
Health O’Mat/Himilayan salt
butter
Olive oil
crushed fresh garlic
tbls dry mixed herbs
1 cup finely grated cheddar cheese

WHAT TO DO:
Add a little butter and olive oil to the pot. When heated sauté the onions and the garlic for a few minutes. Add the mushrooms and make sure there is no water once they are cooked. Add the herbs, the biltong and a little salt. Mix well.
Turn the heat to low and add the cream mixing it gently.
Once the cream is heated through, add the grated cheese and stir then leave to melt completely.

And don't even ask.....
I will have mine with pap,thank you.

Easy macaroni salad

Ingredients

500g macaroni (cooked)
1 cup tomato (chopped)
1 cup cucumber (chopped)
1/2 cup sweet corn
1 medium red onion (chopped)
1/4 cup parsley (chopped)
1 and 1/2 tbsp honey
6 tbsp mayonnaise

Seasoning salt of your choice

Preparations

In a bowl add macaroni,tomato,cucumber,sweet corn and onion .

In a separate bowl add parsley,mayonnaise,
honey and seasoning salt mix well.

Add mayonnaise mixture into macaroni and combine everything.

I am going to try this recipe with 2 Tablespoons of condensed milk in place of the honey.
Serve as salad or main.

Good day all you good people. Yes..... Another chicken dish. I just love the chicken thingy.

Melt In Your Mouth Chicken is EASY and packs so much flavor into tender chicken breasts.

Ingredients
4 boneless, skinless chicken breasts
1 cup mayonnaise (for a healthier option, use plain Greek yogurt instead of mayonnaise)
1/2 cup parmesan cheese
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1 teaspoon garlic powder

Directions
In a bowl, mix the mayonnaise (or yogurt if you replace it), cheese and seasonings.Spread the mixture over each chicken breast.Place the chicken in a baking dish and bake in a preheated 375 degree oven for about 45 minutes or until cooked through.Serve hot!

Spaghetti & Meatballs

Ingredients
1kg Beef or Steak mince
1/3 Cup bread crumbs
2 tsp Italian Herb Seasoning
1 egg
2 tsp minced garlic
1 tsp chilli flakes
3 tsp chopped parsley
1 tsp salt
Spaghetti cooked to packet instructions
2 tbs Olive Oil
1 small onion chopped finely
1 can crushed Onion, Herb & Tomatoes
1 can tomato puree
1 sprig fresh thyme
2 Bay leaves
2 tsp fresh or dried basil sliced
Ground black pepper

Method
In a bowl combine Beef Mince,Breadcrumbs, Egg, Parsley, Garlic, Salt and Chilli flakes. Mix well and form between 14 -16 balls.

Heat oil in a pot over medium heat. Add the meatballs turning occasionally until light brown in colour. Once done remove from pot and set aside.

Now add the onions to the same pot and cook until translucent.
Add the Bay leaves, Thyme, Canned tomatoes and tomato puree, salt and Pepper and bring to a low simmer.

Add the meatballs and the sliced basil to the sauce and simmer until the sauce thickens

Lastly garnish with Grated parmesan Cheese.

It could be expensive to make, but so worth it.

Lekker Oxtail Potjie (without the potjie!)

Ingredients
750-1kg Oxtails
1 large white onion
3-4 large carrots
300gram green beans
3-4 medium/large potatoes
2 garlic cloves
250ml Beef stock
2 tablespoons of tomato paste
Small can chopped tinned tomatoes
Flour
Rice or Fresh bread rolls
1 packet of brown onion soup powder
2/3 Sprigs Rosemary and Thyme
Parsley to garnish.

Method
Roll your oxtail pieces in flour.
Heat large pan with generous amount of oil. Add salt, pepper and I put a little brown sugar over them to caramelise the meat abit. Braai and brown your meat.

Once your meat is browned, remove from pan and set aside on a plate. Slice your onions and get this into the pan with a tablespoon one or two of tablespoons of butter. Salt, pepper, some sugar and cook on a medium heat until your onions are soft. Add crushed garlic to your onions and cook for further two/ three minutes until fragrant.

Pour over your stock, stir and transfer this to a deep stew pot. Carefully place your oxtails pieces over your onion and stock mix. You can add a cup of red wine at this point for extra depth both. I didn’t and added 30 ml of white wine vinegar. This helps to break down the fat and tissue. Pour over enough boiling water so your meat is covered. Bring to boil. Turn down your hob to the lowest heat and allow to simmer for 2 hours. It should be gently bubbling away. So your own applicance may vary. I covered the steam holes of my pans lid to get the potjie effect.

After two hours you need to separate the fat and oil from your liquid that will have formed at the top of the potjie. I used a spoon and transferred to mug.

Add tomato paste, tinned tomatoes, packet of brown onion soup (make a paste with water before adding to your stock. I stupidly ended up with lumps because I didn’t do this, not fun), herbs. Stir together,Salt and pepper as needed. I brought to boil again and then on the lowest heat to continue simmering with lid on. Cook for further one hour.

Peel and chop your veggies. Add to your potjie and cook for enough hour or two until the veggies are nice and soft. I added my green trimmed a little afterwards as I still wanted a small bite to them but this if down to preference.

Once the veggies are soft, the meat should be so succulent a gentle breeze and it will fall from the bone.

Taste and season according to taste.

Serve with white rice as traditionally done, or with fresh bread rolls with lashing of butter.

Garnish with some parsley and enjoy! (Don’t forget the Mrs Balls if you are a fan and have this with everything as I do!

ENJOY!

It’s even better the next day reheated.
