Smoked fish and charred corn chowder mise en place under way today for this week’s gourmet frozen meals menu.First stop curing some lovely hake fillets in a salt/ sugar solution infused with all spice, black pepper, garlic and the best saffron hand selected by my mother in law in Morocco. Smoked over oak and flaked, waiting to be reintroduced at the very end as to hold shape and texture.Corn charred and ready to be infused in milk with the smoked fish trim to create the base!

Roasting chestnuts on an open fire… jeez it feels like Christmas in England. Roasting and purée ing chestnuts for the dumplings going in our roasted chicken, mushroom and griddled onion and pancetta casserole on this week’s gourmet frozen meals menu. Also we have a Malaysian Rendang beef curry made with beef short rib and a rich coconut curry broth. Also watch this space for the home cured and smoked hake and charred sweet corn chowder….

Prawn spring rolls and fruit sorbets underway for our sharing boxes… prawns, dried shrimps, wakame (seaweed) rehydrated in prawn shell stock for that extra hit of the sea, celery, white cabbage, been shoots, coriander, ginger, garlic, seasame, soy….the full Monty spring rolls!!! Mango & mint and litchi & lemon grass sorbet to clear the palate.

Thai green curry paste. Homegrown garlic, homegrown lemongrass, homegrown chillis, ginger, coriander and dried shrimp. Can’t seem to be able to get coriander and ginger to take in our garden… any suggestions welcome 🤗. Today I will be creating a silky Thai green chicken and coconut curry to add to the fresh frozen gourmet meal menu which we’ll be selling at the Underberg Country Club market this Saturday 9am-1pm. Don’t miss out as we have very limited stock and orders are rolling in thick and fast!

A little insight to the process that goes into making a traditional homemade osso buco (beef shin) lasagne. Beef shin slow braised with tomato,celery,onions, garlic, origano, and red wine for 8 hours to make the meat sauce. Pasta made with 00 flour and our own free range eggs.

Thank you and Underberg country club for giving us the opportunity to show case what we do best… cooking from the heart! Around 80% of our menu on the day was local and entirely home made and hand reared, except for the chick peas in the falafel! I couldn’t find any local wild ones roaming about 😜🤣. But seriously we had such a blast and hope to pop up again very soon in this stunning place we call home. Also a big thanks to for some great fresh veg and herbs and a huge shout out to Rozelle for the best lamb I have cooked with in all my years as a chef.
