Oven Fried Feta Rolls with Chili Honey
Ingredients:

For the Feta Rolls:
8 sheets phyllo dough, thawed
1 cup crumbled feta cheese ½ cup cream cheese, softened 1 teaspoon dried oregano 1 teaspoon garlic powder 2 tablespoons olive oil or melted butter (for brushing)

For the Chili Honey :
¼ cup honey ½ teaspoon red chili flakes (adjust to taste) 1 teaspoon fresh lemon juice

Directions :

Prepare the Feta Rolls: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small bowl, mix together the feta cheese, cream cheese, oregano, and garlic powder until smooth and well combined.
Lay one sheet of phyllo dough on a clean surface. Brush it lightly with olive oil or melted butter. Place another sheet on top and brush it as well.
Spoon about 2 tablespoons of the feta mixture onto one end of the phyllo. Roll tightly, tucking in the sides as you go, like a spring roll or burrito. Repeat with the remaining phyllo sheets and filling.
Place the rolls seam-side down on the prepared baking sheet. Brush the tops with olive oil or butter.
Bake for 15-20 minutes, or until the rolls are golden brown and crispy.

Prepare the Chili Honey: While the rolls bake, combine the honey, chili flakes, and lemon juice in a small saucepan. Heat gently over low heat for 1-2 minutes, just until warmed and the flavors meld. Remove from heat.

Serve:
Drizzle the warm chili honey over the baked feta rolls just before serving. Garnish with additional chili flakes or fresh herbs if desired.

4 x Perfekte Deeg Resepte wat jy moet he.

1. SAMOOSA-DEEG BESTANDDELE
3 koppies meel, 1 teelepel sout 4 eetlepels gesmelte botter, 3/4 koppie koue water, meer as dit nodig is.

METODE :

Voeg gesmelte botter en sout meel, meng goed. Stadig gooi in die helfte van die water en meng met jou hande.

Hou die res van die water, of om meer by te voeg, totdat ‘n sagte, gladde deeg vorm.

Knie die deeg vir 10 minute, of in ‘n menger vir 5 minute.
Laat staan in ‘n liggies geoliede bak, bedek, totdat gereed vir gebruik.

Breek golf bal grootte rondes van die deeg.
Rol in ‘n 6 “sirkel in die helfte gesny, die lengte met jou vinger liggies vee die reguit rand van die half-sirkel met water en vou oor.
Druk plat kante saam versigtig lig.

Hou in die een hand en vul met ander, . Gebruik water om kante versigtig te seël .

2. SKUD EN SKOMMEL PIZZA DEEG
750 ml bruismeel200 ml kookwater200 ml sonneblomolie5 ml sout.

METODE :

Plaas bruismeel, kookwater, olie en sout in ‘n groot plastiekhouer met deksel watdig seël.
Sit deksel op en skud dit goed op en af, heen en weer totdat dit ‘n deeg vorm.
Druk deeg liggies in twee sirkels van sowat 25 cm in deursnee.
Plaas ‘n vulsel van jou keuse op en bak op matige rooster vir sowat 30 minute lank.

Of in voorverhitte oond by 180 grade C vir 30 minute.

3 kop……6 KOP koek meel125g…….250G margarine1………….2 eiers2 ½………5 t bakpoeierBietjie sout.

Vryf botter in meel, voeg bakpoeier, sout en eiers by, maak aan met water . rol uit.. bak in oond vir 25-30 min by 180 c

4. Lekker Vetkoek Deeg
5 kopppies meel,1 pakkie droe gis,3 koppies louwarm water,1e olyfolie,1/2t sout,1e suiker.

Los die gis, olie, en suiker op in 1k water..
Voeg die droe bestandele bymekaar in n mengbak en maak gaatjie in die middel. Giet die koppie water by en meng deur.

Gooi gedurig water by tot jy n gladde deegmengsel het.
Op n gemeelde oppervlak, bewerk die deeg vir 8 tot 10 minute.
Sit in gesmeerde bak en laat rys tot dubbel die grootte. (45 min tot 1 uur)

Klop deeg af en rol uit. Sny in blokke en laat staan vir 10 min.
Bak in matige olie tot ligbruin.

Draai gedurig om. (As die vetkoek swaar voel wanneer jy hom uithaal is hy nog rou binne.)

Die groot geheim is om die boonste deel van die deeg soos hy op die blad lê, ondertoe in die olie te sit.

Good day everyone. Who would not need this treat during our hot summer days...
Coffee and condensed milk ice cream recipe

Ingredients :

- 2 cups heavy cream
- 1 can (410 g) sweetened condensed milk
- 2 tbsp instant coffee granules
- 2 tbsp hot water

Instructions :
In a small bowl, dissolve the instant coffee granules in the hot water. Set aside to cool.
In a large bowl, whip the heavy cream until it forms stiff peaks.
Gently fold the sweetened condensed milk and dissolved coffee into the whipped cream until well combined.
Pour the mixture into a loaf pan or a freezer-safe container. Cover with plastic wrap or a lid and freeze for at least 6 hours or overnight until firm.
Scoop and enjoy your creamy coffee and condensed milk ice cream!

SPICY GEBAKTE VARKTJOPS:

Benodig :
4 lekker vark tjops 2 groot uie, geskil en in ringe gesny klein bietjie olie

Maak So :

Braai uie ringe in olie in n pot of pan wat sommer in die oond kan gaan. Wanneer sag, skep eenkant uit. Verbruin nou die vark tjops in dieselfde pan.
Skep uie by tjops en gooi die volgende sous oor.

Meng Saam :

1/4k chutney
1/4k tamatiesous
1/4 t kerrie
sout en peper na smaak
knippie chillie vlokkies of 1 vars chillie fyngekerf
2e worchestersous

Rond Af :

Gooi oor tjops en bak so 30-40min in die oond @180 grade. Bedien saam met pap, rys of kapokaartappels.

Bereidingtyd: 10 minute
Gaarmaaktyd: 20 minute
500 ml (2 k) rys, gekook en verkoel 2 blikke (170 g elk) tuna, gevlok 250 ml (1 k) bevrore ertjies, ontvries 1 rooi soetrissie, in blokkies gesny 2 tamaties, gekap 3 sprietuie, in skywe gesny ’n hand vol pietersielie, gekap 60 ml (¼ k) mayonnaise sap van 1 suurlemoen 30 ml (2 e) olyfolie sout en vars gemaalde swartpeper

1 Plaas die rys en tuna in ’n groot bak. Meng die ertjies, rooi soetrissie, tamaties, sprietuie en pietersielie in.

2 Roer die mayonnaise, suurlemoensap en olyfolie deur en geur met die sout en peper.

Here is one for the corn lovers......

Crunchy on the outside, cheesy on the inside – these Mexican Street Corn Fritters are the perfect snack!

Ingredients :
2 cups corn kernels (fresh, frozen, or canned, drained) 1/2 cup all-purpose flour 1/4 cup cornmeal 1 teaspoon baking powder 1/2 teaspoon chili powder 1/2 teaspoon garlic powder 1/4 teaspoon smoked paprika 1/4 teaspoon salt 1/4 teaspoon black pepper 1/2 cup grated Cotija cheese 1/4 cup fresh cilantro, chopped 1 large egg 1/4 cup milk Vegetable oil, for frying
Lime wedges, for serving
Additional Cotija cheese, for garnish

Directions :

1. In a large bowl, combine the corn kernels, flour, cornmeal, baking powder, chili powder, garlic powder, smoked paprika, salt, and pepper. Mix until the dry ingredients are well distributed.
2. Stir in the grated Cotija cheese, chopped cilantro, egg, and milk. Mix until a thick batter forms.
3. Heat about 1 inch of vegetable oil in a deep skillet or frying pan over medium heat.
4. Once the oil is hot (around 350°F or 175°C), carefully drop spoonfuls of the batter into the oil, flattening them slightly with the back of the spoon.

Roasted Lamb Chops with Potatoes and Onions

Ingredients :
6-8 lamb chops 4 medium potatoes, peeled and cubed 2 large onions, sliced 3 tbsp olive oil 4 garlic cloves, minced 2 tsp paprika 1 tsp dried oregano 1 tsp dried rosemary Juice of 1 lemon Salt and black pepper, to taste Fresh parsley, chopped, for garnish

Instructions :

Preheat Oven:

Preheat your oven to 375°F (190°C).

Season the Ingredients :

In a large mixing bowl, combine potatoes and onions with 2 tbsp olive oil, 1 tsp paprika, and a pinch of salt and pepper. Toss well.
Rub the lamb chops with 1 tbsp olive oil, garlic, remaining paprika, oregano, rosemary, lemon juice, and a sprinkle of salt and pepper.

Assemble the Dish:

In a large roasting pan, spread the seasoned potatoes and onions evenly.
Arrange the lamb chops on top of the vegetables.

Roast in the Oven:

Cover the pan with foil and roast for 30 minutes.
Remove the foil, flip the lamb chops, and continue roasting for another 15-20 minutes until the lamb is golden and the potatoes are tender.

DOPPIE RESEP VIR SOET EN SOUT HAPPIES :

(Vir alle vinger-etes, soet en sout)
750ml meel 5ml bakpoeier 3ml sout 250gr botter 2 eiers 15ml suiker

METODE :

Sif droe bestandele saam. Vryf botter in
Klits eier en suiker tot skuim. Voeg by droe bestandele
Meng goed tot stywe deeg.

Rol uit - nie te dun -
Druk met koekievorm 'n ronde sirkeltjie uit.

Gebruik kolwyntjie pannetjies, en druk degie in pannetjie.
Jy hoef nie jou pannetjies te smeer nie.
Bak 8-10 min by 190 grade.

*1. Pizza in a Mug*

- 1 tablespoon flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 tablespoon mozzarella cheese
- 1 tablespoon milk
- 1/2 teaspoon oil
- 1 tablespoon pizza sauce
- Toppings (e.g., pepperoni, bell peppers, onions)

Mix ingredients, add sauce and toppings, microwave for 2 minutes.

*2. Omelette in a Mug*

- 2 eggs
- 1 tablespoon diced bell pepper
- 1 tablespoon chopped spinach
- 1 tablespoon diced ham or cheese
- Salt and pepper to taste

Whisk eggs, add ingredients, microwave for 2-3 minutes, check with fork.

*3. Mug Pancakes*

- 1 tablespoon melted butter
- 1 tablespoon milk
- 1 tablespoon flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon sugar
- 1/4 teaspoon vanilla extract

- 1/4 cup elbow macaroni

- 2 tablespoons shredded cheese

Cook pasta in microwave (about 1-2 minutes), add cheese and milk, microwave for 30 seconds.

*6. Mug Chocolate Cake* (added bonus recipe!)

- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon sugar
- 1/2 tablespoon flour
- 1/2 tablespoon milk
- 1/4 teaspoon vanilla extract
- 1 tablespoon chocolate chips

Mix ingredients, microwave for 1-2 minutes, enjoy!

Sherrie Lamskenkels

Hierdie is Smul lekker Lamskenkels op die stoof, ook heerlik vir potjie op die vuur (gebruik swart plaboom pot as jy een byderhand het).

Wat jy benodig :
1 heel lamskenkel per persoon 1 kop koekmeel 4 el botter 1 el olie 1 groot ui opgekap 4 knoffeltoontjies – gekneus en opgekap 250 ml OBS (old brown sherry) 1 x 400g blik heel tamaties 500 ml aftreksel 1 el bruinasyn
ekstra kookwater 2 tl bruinsuiker 1 tl droë tiemie kruie swartpeper na smaak sout na smaak

So maak jy :
Verhit die botter tot hoë hitte in ’n groot swaarbodem kastrol.
Rol die lamskenkels in koekmeel Braai die lamskenkels tot mooi bruin albei kante – haal uit en hou eenkant In dieselfe kastrol voeg olie by en braai die uie, knoffel en tiemie tot sag en geurig.
Voeg nou die sherry geleidelik by tot als kookpunt bereik, prut vir 5 minute.
Voeg nou jou blikke tamaties, asyn, aftreksel en bruinsuiker by Voeg nou die lamskenkels terug in pot, sout en peper na smaak, sit deksel op bring tot kookpunt.
Verlaag tot medium hitte en laat vir so twee ure stadig kook tot die skenkels murgsag en sous verdik het

Hierdie is een van die lekkerste bykosse wat jy saam met enige familiegeleentheid kan bedien as 'n bygereg.

Sweetcorn Tert

Wat jy benodig :
2 Koppies melk 1/2 Koppie suiker 4 Eiers geklits 2 Blikkies Soetmielies 4 Eetlepels Maizena 2t Bakpoeier 3 Eetlepels botter Sout na smaak

So maak jy :
Klits eiers en melk saam.
Voeg res van die bestanddele saam in gesmeerde oondbak.
Bak vir 30min of tot ligbruin op 180°C.

This will do well with a cuppa at any time of the day.

LEMON MERINGUE CAKE

Ingredients...

For the base :
1 egg 50 g sugar 50 g flour 40 ml oil 3 g baking powder Lemon zest

For the lemon mousse :
2 eggs 2 lemons juiced 50 g sugar 15 g butter 1 sheet gelatin (3 g) 200 ml unsweetened whipping cream

For the meringue :
150 g sugar 50 g water 2 eggs 1 pinch salt

Preparation...

1. Base: beat the eggs with the sugar and lemon zest. Then add the oil, flour and baking powder.

2. Pour the batter into a mould and bake at 180° for 9 minutes.

3. Mousse: mix the sugar, lemon zest, eggs and lemon juice in a saucepan. Cook until thickened.

4. Then add the butter and hydrated gelatin. Cover with some cling film and leave to cool.

5. Now whip the cream and add the lemon cream from before.

6. Moisten the base with a little milk and cover with a layer of lemon mousse.

7. Refrigerate for at least 4 hours.

8. Meringue: make the syrup by boiling water and sugar.

9. Start beating the egg whites, then pour in the syrup.

10. Decorate the cake with the meringue and burn with a blowtorch"

𝗖𝗿𝗲𝗮𝗺𝘆 𝗠𝘂𝘀𝘁𝗮𝗿𝗱 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝘄𝗶𝘁𝗵 𝗖𝗿𝗶𝘀𝗽𝘆 𝗣𝗲𝗿𝗳𝗲𝗰𝘁𝗶𝗼𝗻

Ingredients :
4 boneless, skinless chicken thighs Salt and pepper, to taste 2 tbsp olive oil 1/2 cup chicken broth 1/2 cup heavy cream 2 tbsp Dijon mustard 1 tsp whole-grain mustard 1 garlic clove, minced 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme) 1 tbsp unsalted butter

Directions :

Prepare Chicken :

Season the chicken thighs generously with salt and pepper on both sides.
Sear the Chicken:

Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook until golden and crispy on both sides, about 4–5 minutes per side. Remove chicken and set aside.

Make the Sauce:

In the same skillet, melt butter. Add minced garlic and sauté until fragrant, about 30 seconds. Stir in chicken broth, heavy cream, Dijon mustard, and whole-grain mustard. Mix well and bring to a gentle simmer.

Combine and Cook:

10 LEKKER POTJIEKOS RESEPTE.

1. SOUSERIGE BEESSTERT POTJIE

BESTANDDELE :
Olie 2 groot uie geskil en in ringe gesny koekmeelblom sout en varsgemaalde swartpeper na smaak 1.7 kg beesstert, in stukke gesaag 250-500ml(1-2kop) kookwater 60 ml (¼kop wit druiwe-asyn 60ml (¼ kop) bruinsuiker 5 middelslag geelwortels skoongeskraap 4 groot aartappels, geskil en halveer 1 pakkie (50gr) beesstert soppoeier 50ml gekapte vars pietersielie

METODE :
Verhit ' n bietjie olie in die swartpot en sorter die uie daarin tot sag. Meng die koekmeelblom, sout en swartpeper. Rol die beesstersstukke in die gegeurde meel
tot dit goed bedek is.
Braai 'n paar op 'n slag in verhitte olie tot bruin.
Giet net genoeg kookwater by om die beesstert te bedek.
Voeg die asyn en bruinsuiker by en laat die vleis 2-3 ure prut tot dit amper sag is.
Voeg nog kookwater by, indine nodig. Voeg die geelwortels en aartappels by en laat prut tot die groente en die vleis sag is.
Voeg die helfte van die soppoeier by (maak pasta met water) en prut tot die sous effe verdik het.
Voeg nog soppoeier by indien nodig.
Geur met nog sout en peper, indien nodig, en strooi net voor opdiening die pietersielie oor.

Sit voor met rys
Genoeg vir 6 mense. .......................................................

(vir 8 tot 10 mense)
Vleis :
1 kg skaapskenkels ½ kg skaapnek ½ kg skaapdunrib 12 skaapstertjies

Groente :
2 groot uie, fyn gekap 300 g sampioene 3 bakhande vol gekerfde groenbone 2 groot tamaties, in kwarte gesny 1 groen soetrissie, grof gekap 5 wortels, gesny 3 koppies groenertjies 2 selderystingels, gesny 1 groot raap, in ringe gesny 6 vlapampoentjies, in kwarte gesny 2 hande vol pietersielie, fyn gekap 10 klein aartappels, heel en geskil

Geurmiddels......... ½ glas droë witwyn 8 heel naeltjies 10 wonderpeperkorreltjies ½ teelepel sout ½ teelepel grofgemaalde swartpeper 1 kaneelstokkie 1 klein rooi brandrissie 4 knoffelhuisies, fyn gekap
'n paar takkies vars tiemie

Metode :
... Braai die skaapstertjies in ’n bietjie olie in die pot.

Sodra die vet uit die sterte kom, voeg die res van die vleis by en braai dit totdat dit bruin word.

Voeg al die geurmiddels by die vleis en braai alles saam vir ’n halfuur.

As dinge droog begin lyk, kan jy water of wyn bygooi.
Jou vleis moet in ’n sousie swem.

Ná ’n halfuur pak jy die groente bo-op die vleis, in die volgorde soos dit genoem word.

Die pot word nie nou geroer nie.
Laat hom vir sowat twee uur prut.

Hou die pot toe, maar skuif die deksel elke halfuur vir 5 minute half-oop sodat die rook die kos kan geur.

Roer die pot net voor bediening één keer voordat jy dit met rys voorsit.

2 kg wildsvleis, in porsies gesny – verkieslik nek, rib, skenkel en lendetjops rooiwyn druiweasyn

Sous :

1 groot ui, grof gekap 20 klein aartappeltjies, geskil 8 wortels, in dik skywe gesny 250 g ontpitte pruimedante 250 g droëperskes 250 g knopiesampioene 16 piekeluitjies halwe rooi soetrissie, in groot blokke gesny halwe geel soetrissie, in groot blokke gesny 12 songedroogde tamaties 250 ml vars room

Metode :
Marineer die vleis oornag in n mengsel van gelyke dele rooiwyn en druiweasyn. Meng die bestanddele vir die sous en hou dit eenkant.Verhit die olyfolie in die potjie en roerbraai die vleis 5 minute lank.Voeg die knoffel, brandewyn en spekvleis by en roerbraai dit nog 5 minute lank. Voeg die soetrissie, seldery en ui by en dan roer jy nie weer nie.
Voeg die aartappels en wortels by.
Roer die sous deeglik en giet dit bo-oor.
Sit die deksel op en laat prut dit vir ongeveer 1 uur 30 minute oor matige kole.
Voeg die pruimedante, perskes, sampioene, piekeluitjies, rooi en geel soetrissie en songedroogde tamaties by.
Sit die deksel op en prut dit vir no 30 minute lank.

Voeg die room by roer dit deur.
Graneer dit met pietersielie en bedien dadelik.

Wenk...........

4. Spek-&-Aartappel-Potjie
1kg Medium-aartappels
Groot blok cheddarkaas
3 x Pakkies spek
Pak uie
Sout & peper
Blok botter
Vars sampioene
Pakkie wituiesoppoeier
Vars grasuie
Vars suurroom

Metode :
Stap 1: Verhit die platboompot en smelt die botter.
Stap 2: Braai die spek tot krakerig.
Stap 3: Sny aartappels in 3-5 cm-skywe en die uie in dik skywe.
Stap 4: Braai die spek en los die “vetterigheid” in die pot.
Stap 5: Pak die pot met lae van die aartappels.
Stap 6: Volg met ’n laag uie en bedek finaal met aartappels.
Stap 7: Voeg sout en peper by tot smaak.
Stap 8: Voeg sampioene by (bo-op die uie-laag).
Stap 9: Kook vir 30 minute.

Stap 10: Voeg gekapte rooiuie en suurroom by en kook vir ’n verdere 15 minute totdat aartappels sag is. Sit spek bo-op.

Stap 11: Voeg ’n laag gerasperde kaas by en prut vir 5 minute.

5. Beesvleis potjie

Al wat ek kan sê wat die resep aan betref is daar is amper 'n halwe bottel OBS in saam met rooiwyn asyn om die soet so bietjie te breek. So 1 tot 9 verhouding. (9 is die OBS).

Potjie bees vleis (genoeg om nommer 3 pot half vol te maak),
Olyf olie na smaak.
1 tsp gemaalde Coriander1 tsp Turmeric1 tsp Cumin600 ml OBS4 tbsp Maizena2 blokkies Beesstert aftreksel.Klein aartappeltjies heel met skil.
Wortel 2 cm blokkies gesny. (Genoeg vir een laag.)3 klein rooi kool koppies, kwarte gesny, en opgebreek.5 gemiddelde rooi uie, kwarte gesny en opgebreek. 2 groot rooi soet russies. groot opgesny. 8 gemiddelde grote Patats (3 cm blokke gesny) 2 pakkies sampioene Heel gelos

Metode :

Braai vleis in genoeg olyf olie en voeg speserye by. Braai tot bruin.
Gooi nou 200ml OBS met Rooiwyn Asyn in die verhouding hier bo.
Roer die uie en soet rusie in die vleis in.
Maak toe en prut vir 1 uur.

Na 1 uur sit ander bestanddele in die pot in die volgorde:
Aartappels, wortels, kool, patats en sampioene.

Los blokkies aftreksel op in klein bietjie kook water. Net genoeg om te bedek. Gooi by die res van die OBS en rooiwyn asyn soos verhouding. Meng twee eetlepels Maizena in.

Voeg dit by die bot. Sit die deksel op en prut vir 2 uur.

Los twee eetlepels Maizena in 100ml water op en voeg by die bot roer in en prut nog so paar minute om sous dik te kry.
Geniet saam met Samp of Rys of sommer net so........................................................

6. Kamp Biltong-Pasta Potjie
450g Cheddar kaas, gerasper 2 uie gekap 500g skulpie noedels 1 pakkie kaas sous 1 pakkie wit sous 1 koppie melk Sout en peper R200 gekerfde biltong 2 pakkies mushrooms 500g gekapte streeky bacon

Metode :

1. Kook pasta in water, olie en sout tot gaar. Drein die water af.

2. Meng kaas poeier met 200ml kook water tot opgelos.

2.1. Meng wit sous met 200ml kook water
tot opgelos.

2.2. Gooi kaas sous in kastrol, melk, sout en peper en witsous, saam 2 hande vol gerasperde kaas. Prut tot glade sous vorm.

3. Smeer swaarboom pot duk met margarine aan die kante

4. Braai uie en mushrooms wat gekap is in bietjie olie.

5. Gooi helfde van paste In pot, en gooi toe met biltong. Gooi dan mushrooms en uie oor.

6. Braai bacon tot gaar in bietjie olie

7. Gooi helfde van die sous oor die mengsel in pot.

8. Gooi weer pasta in die pot.

9. Gooi die bacon oor.

10. Gooi die res van die sous oor.

11. Gooi die res van die biltong oor.

12. Gooi die res van die kaas oor.

13. Laat prut op die kole tot kaas gesmelt het

7. Toks Van Der Linde Se Biltongpot
(Bedien 10)
. 3 uie, gekap 1 pakkie vars sampioene, opgesny 1 pakkie spek, opgesny 1 pakkie frankfurter worsies, opgesny 1 pakkie kaasworsies, (cheese grillers), opgesny 1 pak skroefnoedels 1 pakkie Tastic sampioenrys 1 pakkie Tastic Spaanse rys 720g gekerfde beesbiltong 250g gerasperde kaas

Metode :
Maak 'n swart pot warm oor die vuur en braai die uie en sampioene in olie. Geur met sout. Gooi spek by en braai 2 minute, voeg dan worsies by.
Braai 5 minute.
Gooi skroefnoedels en rys by en een ketel kookwater. Maak pot toe en prut 20 minute (hou 'n oog en gooi nog water by indien nodig). Gooi biltong oor, maak deksel toe en stoom 5 minute.

Maak oop en roer pot deur, kyk net dat dit nie droogkook nie. Gooi gerasperde kaas bo-oor en laat staan 5 minute. .......................................................

8. SKAAP-AFVALPOTJIE
2 klompe skaappens (goed skoongeskraap) water om in te kook
250ml halfsoet wit wyn sap van ½ suurlemoen
sout en varsgemaalde swartpeper 1 skaapnek
6 groot uie (gekap) 12 klein aartappeltjies
25 ml matige sterk kerriepoeier 2ml rissiepoeier
10ml donkerbruin suiker asyn om mee aan te maak
250 g droëperskes 3 tamaties, ontvel en gekap
30ml tamatiepasta

Metode : Spoel pense goed af onder lopende koue water. Sny pense in blokkies en plaas in driepootpot saam met water, wyn, suurlemoensap, sout, peper en skaapnek.

Sit deksel op, plaas pot oor matig warm kole en laat kook tot inhoud sag is-ongeveer 3-4 uur. Wanneer pensblokkies sag is en vleis van nekwerwels afval, verwyder nekwerwels, en bene van skaapnek.

Voeg uie, tamaties, en aartappels by inhoud en stowe vir nog 30 minute lank. Maak kerriepoeier, rissiepoeier, tamatiepasta en suiker met asyn aan en voeg saam met perskes by inhoud van pot.

Sit deksel op en plaas weer op vuur vir 30 minute. Roer een keer goed om en dien op........................................................

9. Beesstertpotjie

‘n Potjie kan jy nie afjaag nie, maar as jy ‘n nag in ‘n kamp oorslaap, is dit beslis die moeite werd. Laat die bevrore beesstert vakuumverpak en hou dit onderin die vrieskas totdat jy dit nodig kry.
3 eetlepels olyfolie 1kg beesstert 1 groot ui, gekap 1 koppie beesvleisaftreksel 1 koppie rooiwyn 2 eetlepels tamatiepasta 3 heel naeltjies 1 lourierblaar 1 teelepel droë tiemie sout en peper 10 heel baba-uitjies, geskil 4 selderystokke, gekap

Só maak jy...............

Tyd vir braai, ou bees! Verhit die olie in ’n pot en braai die beesstert bruin.

O, moenie huil nie… Voeg die gekapte ui by en braai dit tot sag. Gooi die aftreksel, wyn, tamatiepasta, naeltjies, lourierblaar, tiemie en sout en peper na smaak by.

Bak mooi kooltjies. Laat die vleis vir twee tot drie uur prut. Gooi nog aftreksel by as die bredie te droog word.

Kul jou hier… Wanneer die vleis van die bene af loskom, voeg die uitjies en seldery by en laat dit vir nog 20 minute prut totdat die groente sag is.

Sit die beesstertpotjie voor met rys en koolslaai.
Weg sê: As jou seldery­stokkies op pad die gees gee, kan jy selderysout gebruik........................................................

10. Lamb Potjiekos.
10 ml oil 800 g lamb 2 medium onions, chopped 5 medium carrots, sliced 1 bunch green beens, cut in half 10 normal patti pans 250 g mushrooms (1 punnet) 10 baby potatoes, peeled 3 medium mielies, each mielie cut in 3 pieces 5 g salt and pepper each

Instructions :

1.Heat the oil in a large, heavy black pot and fry the meat and onions until brown. Season to taste while frying.Add enough water to cover the meat (and a touch of red wine if you prefer), lower the heat and let the meat simmer for about 60-90 minutes (until tender).Add the potatoes and mielies (and any other veggies that take a long time to cook).

Make a mix of mushroom and brown onion sauce, add a bit of chutney and add this to the pot (just enough to cover the meat).

Close the lid and leave to simmer.When the first set of veggies are halfway done, add the green beans, patti pans and mushrooms – arrange these in layers over the other veggies. Add a bit of salt and more sauce if necessary.

Serve with rice or samp.3 Potjie secrets:Don’t stir the pot. Ever. You are allowed to move things around ever so slightly but never stir!Always make sure there is enough liquid at the bottom of the pot – just enough to cover the meat.

There is a difference between a potjie and a stew – don’t mix everything together, it shouldn’t look like a stew once you’re done! The meat etc. should be at the bottom with the veggies in layers – steamed to perfection. The veggies should be soft but still firm.

Good day all. The silly season calls for all kinds of roast recipes......

Succulent Roast Beef :
2kg Rump Roast 5 small Garlic cloves A few sprigs fresh Thyme 1 tbs Olive Oil 1 tbs Salt
1 tbs freshly ground Black Pepper 1 tbs Steak & Chops spice 1 Onion (quartered) 1 Celery Stick randomly chopped 1 Carrot randomly chopped 1 cup low sodium Beef Stock or plain water if you prefer.
Preheat the oven to 190 degrees celsius. Make sure the meat is at room temperature. Make 5× 1-2 cm deep slits in the roast and fill the holes with the garlic cloves and thyme. Rub the meat with the oil then with a mixture of the salt, pepper & steak & chops spice. Sear the meat evenly on all sides on a hot non stick frying pan to brown & seal.
Add the remaining ingredients into a suitable oven tray then place the seared meat into the pan.
Roast for 30 mins per kilogram for a medium roast.
, Remove from the oven.

Place on a serving dish, cover lightly with foil to rest for +-15 mins.

Then carve & serve.
