Sunday is the only day of the week when we really have time to sit down and enjoy a nice breakfast. This morning, we made a lovely soft egg with "Sudwala Stew." Now everyone knows a version of this breakfast by a different name, but the basics stay the say.

The Sudwala Stew is something that comes from childhood. Even before I was born, my grandmother and her family used to camp at Sudwala during their vacations, back when there was nothing there. You had to bring EVERYTHING with you.

Somewhere along the way, my grandmother decided it was easier to chop everything up for breakfast and throw it in a pan to fry on the gas stove. Onions, bacon, leftover braai meat, tomatoes, sometimes even the egg... And that’s where the name "Sudwala Stew" came from (as far as I know).

My parents were avid campers, and we regularly spent school holidays at every dam with the caravan. The breakfast tradition always tagged along...

In later years, as my parents grew a bit older (and their salaries probably got a little better), we started spending the July holidays in an apartment at St Lucia or Fanie's Island, and of course, the breakfast tradition stayed.

We still make it now, and it's always a hit. You can use anything that’s in your fridge. Whatever you're in the mood for. Fry your onions and mushrooms, and then add all your other ingredients from there. Quick and easy!

Oven-Roasted Pork Belly with Crispy Crackling, Jissie Sussie Hot Honey Glaze, Bread Salad, and Aromat Corn

Ingredients:

For the pork belly:
- 1 kg pork belly, with skin
- 2 tablespoons meat spices
- Salt, to taste
- Olive oil
- 2 tablespoons Jissie Sussie Hot Honey
- 1 tablespoon soy sauce

For the bread salad:
- 3 slices of bread, cut into cubes
- Oil for frying
- 1 small onion, finely chopped
- 1 tablespoon sweet mustard
- 2 tablespoons jalapeño mayo

For the corn:
- 4 whole corn on the cob
- Butter, melted
- Aromat seasoning, to taste

Method:

Pork Belly:
1. Rub the meat side of the pork belly with the meat spices. Score the skin side in a diamond pattern and rub it well with salt and olive oil.
2. Pat the skin dry with paper towels and sprinkle more salt and olive oil over the skin.
3. Roast the pork belly slowly in a preheated oven at 140°C for 2 hours to tenderize the meat.
4. In a small bowl, mix Jissie Sussie Hot Honey and soy sauce. After 2 hours of cooking, increase the oven temperature to 240°C for about 30 minutes, allowing the skin to crisp. During the last 10 minutes of cooking, brush the hot honey-soy glaze over the pork belly.
5. Continue cooking for 10 more minutes, allowing the glaze to caramelize while the crackling becomes crisp.

Bread Salad:
1. Cut the bread into cubes and fry in hot oil until golden and crispy. Let it cool completely.
2. Just before serving, mix the finely chopped onion, sweet mustard, and jalapeño mayo with the bread cubes for a deliciously crunchy salad.

Corn:
1. Boil the corn until tender.
2. Brush the hot corn with melted butter and sprinkle with Aromat seasoning for extra flavor.

Serve:
Plate the crispy, glazed pork belly alongside the bread salad and Aromat-seasoned corn for an irresistible meal bursting with flavor!

Tip:
If you want even crispier crackling, place the pork belly under the grill for 1-2 minutes right after glazing.

Started the morning off right with breakfast at The Rose Cottage, and wow, what a treat! I went for the freshly baked croissant with chicken livers, with some sriracha sauce on the side. Mom opted for the classic bacon, egg, and hollandaise croissant.

The croissants were perfection—crispy and flaky outside, with a soft, pillowy inside. The chicken livers were an absolute delight, bursting with a mild yet rich flavor, and that sriracha sauce gave it just the right amount of zing! We washed it all down with a delicious cappuccino.

The restaurant is a gem, not just for its food but also for its history. As one of the oldest establishments in Dullstroom, Mpumalanga, it carries a charm that’s hard to find elsewhere. We were there bright and early, soaking in the peaceful atmosphere before the crowds rolled in. By the time we were done, the place was buzzing with life!

But let me tell you about the bakery—it’s an absolute treasure trove of fresh delights. The aroma of freshly baked bread and pastries hits you as soon as you walk in, making it impossible to leave empty-handed. They have a little bit of everything, from buttery shortbread that melts in your mouth to rich, decadent chocolate fudge that’s hard to resist. And for those who love a good spread, the variety of preserves on offer is something else—jars of fruity goodness just waiting to be enjoyed.

I'll definitely return soon to take photos when the roses are in bloom. This place is a sea of color in the summer when it is surrounded by all the different roses in the garden.

We couldn’t leave without grabbing some of their sourdough bread, which looked too good to pass up. Now, I'm on a mission to figure out the best way to serve it up with our braai tonight… Any ideas?
