Celebrating founder of birthday with a class
We had such fun at this event. Everyone enjoyed the food and the gym has such an amazing and inclusive atmosphere.
The menu was so popular and has already been duplicated at further events

Inspired by @ this dish was absolutely delicious.

Recipe :
2 aubergines sliced into rounds
2 whole tomatoes sliced into rounds
2 tomatoes blended to a puree
2 green chilies chopped
1 red onion sliced into rounds

Slice 2 aubergines into thick rounds.
Shallow fry in hot oil until crisp on both sides.

Heat 2 tablespoons of olive oil. Add 1 tablespoon of crushed garlic paste & the chopped green chillie. Add 1 tsp course salt, 1 tsp paprika, 1 tsp cumin, 1 tsp coriander powder, half a tsp tumeric
Braise that. Reduce heat. Add sliced tomato to pan. Then add sliced red onion on top of tomato. The. Add the crispy aubergine.
Close the lid and simmer till everything is cooked.

Once soft, around 10 to 12 min remove from heat.
In a flat dish spread some :
plain thick yoghurt
Salt
1 tsp crushed garlic
Mix

Top with the aubergine mix. And dollop more yoghurt on top.

Sprinkle with dried mint & chopped fine fresh coriander.
So delicious
