This Lemon & Herb Pulled Chicken is simply delicious. Slow-roasted with fresh lemon and fresh herbs with a hint of garlic, until it's pull-apart tender. The pan juices make the base of a light sauce that the shredded chicken gets tossed in.

๐ก Serve with rice or potatoes and a side salad. Or use as a taco/tortilla/wrap filling with shredded lettuce and grated cheese. Will also be yummy as a pancake filling, with an optional dollop of mayo.

Best Classic Beef Mince is a "classic" in the sense that it tastes so familiar - nothing exotic or unusual added to it. Simply mince that's treated right and seasoned in such a way that really enhances the meaty flavour, and that's what makes it the "best". Diced onions and garlic fried until slightly sweet, ground coriander, tomato paste, a dash of Worcestershire sauce, and beef stock. Not too saucy, but definitely not dry either.

๐ก Serve with rice or mash, and veggies of your choice. But this can pretty much go with anything! With a jacket potato and veg, on toast for breakfast or in a snackwich, or as a pancake filling with some grated cheese.

These Jamaican Chicken Sosaties are so delicious, I'll definitely be making a few extra portions for myself again ๐. Tenderised chicken breast seasoned with my home-made Jamaican Jerk spice mix (my best), and skewered with pieces of onion and green pepper.

Next up, the decadently delicious ๐ Smoked Salmon & Sundried Tomato Pasta Sauce! Smoked salmon pieces and sliced sun-dried tomatoes, combined in a cream-based sauce with some golden sautรฉed onions, grilled red peppers, a touch of garlic and just a hint of chilli. The beautiful pink sauce is finished off with fresh chopped spring onions and a grating of pecorino cheese.

๐ก Serve with a flat/ribbon pasta like fettuccine, and a crisp side salad.

Of all the ๐ vegetarian dishes I made last couple of years, I still think the Lentil & Veg Curry is my favourite. A properly-made curry with layers of flavours and different textures with the addition of some vegetables.
