𝐃𝐀𝐍𝐈𝐒𝐇 𝐂𝐎𝐎𝐊𝐈𝐄𝐒 𝐑𝐄𝐂𝐈𝐏𝐄
INGREDIENTS
• 500g flour
• 400 margarine
• 240g icing sugar
• 1/4 cup liquid milk
• 1 large egg yolk.
• 1 tablespoon milk flavour

PROCEDURE
1) Cream margarine and icing sugar till fluffy.

2) Sieve in your flour gradually and add the yolk.

3) While creaming, add ur milk and flavour.

4) Put in in a piping bag and pipe with your desired nozzles into your lined tray with Parchment paper.

5) Don't bake in high heat as this will give it a brown colour. 10-20 minutes.

It gets hard when it cools down completely!

Coconut scones
Ingredients
3 cups all purpose flour
1/4 cup white sugar
3/4 cup cold butter 175g
3/4 cup milk ( I used banana flavoured milk)
1/3 cup desiccated coconut
1 Tbsp baking powder
1 egg
1 tsp vanilla essence
1/4 tsp salt

Instructions
1. In a large bowl sift in flour, baking powder, sugar and salt. Then add desiccated coconut and whisk.

2 . Add butter . Rub it in using your finger tips until you get a crumbly mixture.

3. In a small bowl add milk , egg and vanilla. Mix well. Pour this mixture in the flour mixture.

4. Use a wooden spoon or spatula to mix the wet and dry ingredients together.
Then transfer the dough to a floured surface.

5. Spread the dough and slightly flatten it using a rolling pin or your palm .

6. Dip the cookie cutter in flour as you cut out each piece.Place on a prepared baking tray.

7. Brush the top with milk or egg wash .

8. Bake in a preheated oven at 180 Degrees Celsius for 18 minutes or until well baked .

TIP ❗️: If you want the coconut flavour to really come out , roast the desiccated coconut on low heat on the stove for a few minutes before you use it .
Roast it until it’s slightly golden brown . Be careful while doing this because coconut burns very fast .

CHICKEN SOUP WITH RICE 😋
Ingredients:
250 grams of chicken breast
100 grams of rice
1 potato
2 carrots
2 tomatoes
½ onion
1 clove garlic
1 liter of water
Olive oil
Salt
Preparation:
1. We add all the chicken to a pot with enough water. Add the half chopped onion together with the garlic clove and a little salt. We do the same with potatoes and carrots.
2. Heat a frying pan with olive oil and add all the peeled and chopped tomatoes together with a little more garlic. Add a little salt and fry.
3. We add these ingredients to the first pot just when the water starts to boil.
4. Add all the rice so that it begins to cook over low heat for the next 20-25 minutes.
5. Remove from the heat and with the help of a saucepan serve this delicious chicken broth with rice.

MANDARINE CAKE 😋
Ingredients:
1 egg
2 egg yolks
200 grams of sugar
100 grams of butter
2 tangerines
1 yogurt
250 grams of flour
1 tablespoon baking powder
2 tablespoons of icing sugar
Olive oil
Preparation:
1. Wash the tangerines, dry them and grate the skin to obtain 2 tablespoons and squeeze them. Break the egg into a large bowl. Add the egg yolks and sugar and beat until you get a whitish mixture.
2. Add the melted butter, the juice and the zest of the tangerines and stir. Add the sifted flour together with the yeast. Finally, add the yogurt and mix.
3. Grease a mold with a little oil, pour the previous dough and cook in a preheated oven at 190º for 35 minutes. Remove the cake from the oven and let it cool on a wire rack. Take it out of the mold and sprinkle it with the icing sugar.

LEMON LOAF CAKE

INGREDIENTS :

◾️4 large eggs
◾️1⅓ cups sugar
◾️pinch of salt
◾️grated zest from three lemons
◾️1¾ cups cake flour
◾️½ tsp baking powder
◾️½ cup heavy cream
◾️5½ tbsp unsalted butter melted and cooled

INSTRUCTIONS

◾️Preheat oven to 180°c.
◾️Grease and flour a 9x5 loaf pan. Tap out the excess flour.
◾️In a large bowl, whisk together eggs, salt and sugar for about a minute just until the mixture is bubbly.
◾️Add the grated zest and whisk together.
◾️Combine flour and baking powder in another bowl.
◾️Sift about ⅓ of the flour mixture into the egg mixture.
◾️Whisk by hand using a wire whisk to combine.
◾️Sift the flour mixture in two more additions.
◾️Whisk just until everything is combined. No need to overdo it.
◾️Whisk in the heavy cream.
◾️Switch to a rubber spatula and fold the melted butter.
◾️Pour the batter into the loaf pan.
◾️Bake in the center rack of the oven for 50-60 minutes.

(A toothpick inserted at the center of the cake should come out clean. The top should crown and crack).

◾️Transfer to a wire rack and let the cake cool slightly in the pan.
◾️Remove from the pan and let cool completely.

Lemon Yogurt Cake Recipe

Ingredients:

1 1/2 All-purpose Flour
1 Tsp Vanilla extract
3/4 cup Sugar
1/2 cup Oil
1 Tbsp Lemon Zest (back of a lemon)
3 large Eggs
Pinch of Salt
1/2 cup Yogurt
2 Tsps Baking powder

Preparation:

1. Combine the sugar and the lemon zest using clean hands.

2. Add the yogurt, oil, eggs and vanilla extract to the sugar and lemon zest and, then mix till all the ingredients are well combined.

3. In a separate bowl, combine the flour, baking powder and salt. Mix the dry ingredients with the wet ingredients and pour the mixture into the prepared Pan.

4. Bake at 350F for about 45 to 50 minutes or till golden brown. Enjoy...

Coconut Rock Buns

Ingredients
2 cups plain flour
1/2 cup desiccated coconut
1/4 cup white sugar
1/2 cup butter/margarine(room temp)
2 eggs
1/2 cup milk
1/2 cup raisins
1 tsp vanilla essence
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon

Instructions
Preheat the oven to 180 Degrees Celsius.

1. In a large bowl add flour ,coconut, sugar , baking powder, cinnamon and salt . Then whisk well.

2. Add butter then rub it with your fingers until you get a crumbly mixture. Then add the raisins and mix .

3. Add vanilla, eggs and milk then mix until a dough is formed.

4. Use a tablespoon to scoop out the dough. Place the dough balls in a prepared baking tray.

DO NOT SHAPE THE DOUGH BALLS. THEY SHOULD LOOK MESSY LIKE ROCKS .

5. Bake in a preheated oven for 30 minutes or until golden brown.

Coconut loaf
Ingredients
1 cup all purpose flour
1/2 cup white sugar
1/2 cup desiccated coconut
1/2 cup melted unsalted butter
1/2 cup milk
2 eggs
1 tsp baking powder
1 tsp vanilla essence
1/4 tsp salt

Instructions
Preheat the oven to 180 Degrees Celsius.

1. In a large bowl mix together butter and sugar.

2. Add vanilla then mix in the eggs one at a time.

3. Sift in flour, baking powder and salt . Pour in milk and mix until the dry and wet ingredients are well combined. Then add in coconut. Mix gently.

4. Line the loaf pan with parchment paper . Pour the batter (mixture).

5. Bake in a preheated oven for 30 minutes or until well baked.

You can double the ingredients if you want a bigger batch .

*If you are using salted butter, don’t add salt to the recipe.
