Any chefs or venues throughout the south coast interested in breaking into the private chef side of the industry? We are currently turning away a lot of bookings for the remainder of the year already so there is plenty of opportunities here to increase your business offering or to look at supplementing your income - happy to run people through the process and help get the ball rolling.
This review speaks for itself. While everyone else is doing flashy socials we are banging out some of the best food on the coast.

Wanting the perfect carbonara? Practice getting your consistency right with your cream and egg yolk. You donโt want a soup but you need enough sauce to coat your pasta. Our method may not be truly authentic but it is surely damn tasty. P.s practice getting your seasoning of salt and pepper just right. Iโve been saying for years now the difference between a home cook and a chef is simply how we use salt and pepper. Itโs the simple things.

Itโs been over 3 years now. 3years since I was last in commercial kitchens full time after 15 years of spending almost every day in them. Although I would never go back to the painstaking hours chefs have to put in to barely make minimum wage, there are something I feel I miss. The pressure, the rush and the comradery that binds chefs together. Iโm grateful I still get to cook food on occasions, work with some great friends that I have dragged into this business with me. But I think itโs more then just food, services and making sure your clients are happy. The chef trade is dieing and I completely understand why. Maybe itโs time for it to change? Wanting some tips for hosting the best dinner party? After catering dinner parties and private events for a good 3 years now Iโve learnt a couple of things that just make the night go well! Tip 1 - donโt over complicate your menu. Being a domestic kitchen there is only so much anyone can do to make sure all your guests get fed at the same time and with hot food. Tip 2 - donโt get drunk too early, we all know how fun it is to be celebrating and I mean who hasnโt done the old party too hard too early trick. But you really want to enjoy your event so make sure you can remember the night and enjoy the company of all your friends and family. Tip 3 - take plenty of photos or ask your caterers too. Everyone that you have hired to help organise your event should be more then happy to take photos of you and your guests at times. Itโs one thing we are trying to make sure we do more often to share our experiences and journeys.

Not sure how to get your risotto just right?! Chef Will shares his fool proof recipe 2 cups Arborio rice 2.5 cups mixed wild mushrooms 125 grams butter 3 tablespoons of vegeta stock 5 cups water I brown onion fine diced 1 clove garlic crushed 1 cup White wine Parmesan to serve . Method Fry onions til translucent Add garlic and Arborio til rice turns a little crispy on the edges add mushrooms til brown . Deglaze with white wine slowly add vegeta stock a ladle at a time. Cook for around 40 minutes. Arborio should be al dente . Serve with shaved fresh Parmesan
