Fennel cured salmon, potato kugel, pickled mushroom, dill cream

Question for our Polish friends - do you know what Kugel is? Imagine placki ziemniaczane (potato pancakes), but oven baked in a deep dish!
It's originally a Polish-Jewish dish, so many post-war Polish people are not so familiar with it, for the saddest of reasons :(
BUT - omg it is delicious and I would love to revive the love of this dish!

The humble beetroot... I'll be transforming it into the most elegant starter: "Beetroot vichyssoise, garlic chive, quail egg".

It’s been a while since I knocked the taste buds off Pete Evans and Manu Fieldel when my sister and I won My Kitchen Rules in 2011.
Since then, I've worked as resident chef on The Morning Show for 4 years, kept busy as the home cooking expert for Lifestyle Food, and most importantly produced and hosted my own TV show Kitchen Rescue which aired on Channel 10 for 2 series and is now aired on Netflix Internationally.
But it’s not media that drives this passionate foodie... I love to eat, but more important than that, I LOVE to feed!
I've been working in commercial kitchens for almost 10 years, owned my own catering business for 8 years, and recently moved to the countryside near Canberra. Although I still service the Sydney region alongside sister Sammy, much of my work is now based in the country's capital.
Bella's Feast Catering Canberra services multiple locations, including events and conferences at Kambri @ ANU, weddings and functions at Tallagandra Hill Winery, as well as offsite locations in Canberra and regional NSW.
My team and I recently opened a new restaurant, Rolling Hills Kitchen, located at Gundaroo Colonial Inn, where you can enjoy good country home style cooking.
