Our winemaking team, led by Paul Bridgeman, uses the meticulous 'méthode assemblage', where grapes are vinified separately by block, varietal clone, picking or viticultural treatment, to produce many smaller barrels of wine, that are then carefully blended before bottling into the perfect wine. The result is a wine that is classically Levantine Hill - elegantly restrained, where flavour, palate and weight can co-exist.
