PREPARATION TIME | THE 7 P's

Time for reflection, to unpack the past 18 months, to appreciate those who supported us, time to remember our journey - the path we choose to take, time for understanding, time to grow stronger, adapt, change, win, lose, pivot they say, survive, learn, teach, love, family, our children, their survival, their purpose.

Time to draw strength from all of those kind words of support, time to remember the haters, the key board warriors, the gutless, the kickers and let them inspire us, to motivate us, to give us that fire in the belly to wake up each day and remember the past 18 months and the pain, the uncertainty.

It has been a long road to get here and in eleven days SYDNEY we open our doors.

SUNDAY LOCKDOWN COOKING
Grilled cinnamon-sugar bananas + vanilla ice cream + rock n roll bourbon

Ingredients:

Vegetable oil [for the grill]
4 bananas, ripe but not overly soft
1 tbs granulated sugar
1 tsp ground cinnamon
A good quality vanilla ice cream
1/2 to 3/4 cup toasted pecan pieces
2 tbs “Rock n Roll” bourbon – suggest Maker’s Mark OR Jack Daniels

Method:

Prepare your BBQ. Brush the grill grate clean and brush with oil.
Slice the bananas, still in their skin, in half lengthwise and then crosswise so that each banana yields four pieces. In a small bowl, combine sugar + ground cinnamon.

Lightly sprinkle the cut sides of the bananas with some of the cinnamon sugar.

Let sit 5 minutes so the sugar can start to dissolve, infuse!
Put the bananas cut side down on the chargrill. Grill until marks appear, 2 to 3 minutes. Using tongs, flip the bananas, cover the grill, cook until the skin starts to pull away from the banana, about 5 minutes – keep your eye on it!

Remove from the grill and let cool for 2 to 3 minutes. Peel and serve the bananas on top of vanilla ice cream, sprinkled with the pecan pieces and drizzled with rock n roll bourbon.

TIPS:

To grill bananas perfect every time, leave them in their skin to hold them together and protect them from the flame.

You know that your bananas are done when the skin starts to separate from the flesh.

Did you know?

There are over one thousand dim sum dishes in existence today.

In the tenth century, when the city of Guangzhou (Canton) began to experience an increase in commercial travel, travelers concurrently began to frequent teahouses for small-portion meals with tea called yum cha, or "drink tea" meals.

Yum cha includes two related concepts. The first is "yat jung leung gin", which translates literally as "one cup, two pieces". This refers to the custom of serving teahouse customers two pieces of delicately made food items, savory or sweet, to complement their tea. The second is dim sum and translates literally to "touching heart", the term used to designate the small food items that accompanied the tea drinking.

The terms "mushroom" and "toadstool" go back centuries and were never precisely defined, nor was there consensus on application. During the 15th and 16th centuries, the terms mushrom, mushrum, muscheron, mousheroms, mussheron, or musserouns were used.

The term "mushroom" and its variations may have been derived from the French word mousseron in reference to moss (mousse). Delineation between edible and poisonous fungi is not clear-cut, so a "mushroom" may be edible, poisonous, or unpalatable. The word toadstool appeared first in 14th century England as a reference for a "stool" for toads, possibly inferring an inedible poisonous fungus.

SARDINES - also known as pilchards are an inexpensive and nutritious fish which are high in omega-3s. So whether you prefer them grilled, fried or out of the tin, they are simply delicious!

Grilled sardines with lemon salsa

THE INGREDIENTS:
24 medium sardines, butterflied

THE SALSA:
2 large lemons
2 small Spanish red onions
Small bunch of continental parsley
Small bunch of mint
125ml extra-virgin olive oil
Juice of ½ lemon

THE METHOD:

Preheat the BBQ, all the way, HOT!
Peel the lemons by cutting off the tops and bottoms, then sit them upright and cut away the zest and pith from top to bottom with a sharp knife, turning as you go.
Roughly chop the flesh and place in a bowl.
Chop the onions, parsley and mint, by hand, being careful not to bruise these soft herbs.
Add the chunks of lemon and stir in the olive oil and lemon juice, Maldon sea salt and black pepper.
Leave the salsa to infuse while you cook the sardines on the BBQ
Sardines, on to a hot grill, this will be quick, turn, remove and transfer to a waiting plate, season with sea salt and lemon cheeks – drizzle the salsa over the top of the sardines….be generous!
