My take on almond flour pasta

2 cups of almond flour
1 and a half teaspoons of xantham gum
2 eggs
1/2 teaspoon of salt
Big pinch of black pepper

Meat sauce:
250g beef mince
1 can whole peeled tomatoes
1 carrot
1 stick celery
1 bulb garlic
1 onion
1 large handful of fresh basil

Recipe:

To make the pasta combine all the ingredients together and give a good kneed then wrap in cling film and let it rest in the fridge for an hour.

Meat sauce:
Soften onions and garlic fine dice carrot and celery and put in pan cook till tender then add mince and cook till mince is browned add the can of tomatoes and break up tomatoes with wooden spoon fill the can with water and add to the pan then get a handful of fresh basil and tear it up and mix in then let it cook and reduce.

Roll pasta out into long skinny sticks and cut off pieces like gnocchi once all cut into that shape grab each piece and squeeze with your finger a little to make an indent for the sauce to stick to get a pot of boiling salted water and cook till all floating then strain it out and add to your meat sauce and cook for a few mins and keep tossing and moving the pan to coat everything evenly.

My version of a Moroccan marinara.

Recipe:
1 zucchini
1 yellow capsicum
1 red capsicum
1 long red chilli
A few sprigs of rosemary
2 king oyster mushrooms
1 whole onion
6 cloves of garlic
4 anchovy fillets
Spring onion
Smoked paprika
Mint leaves
Basil leaves
Half a cauliflower
Saffron
Tumeric
Low carb Greek yoghurt
A few Asparagus
1kg marinara mix
Olive oil
1 X lemon

Method:
In a mortar and pestle put all your garlic, sliced onion, rosemary, saffron, anchovies, smoked paprika and a good glug of olive oil and bash and mix into a paste add a tiny touch of boiling water to help combine everything. Then place this marinade on your seafood marinara mix and place in the fridge for a few hours. When ready heat your pan and cook your marinara mix till tender. Slice up on thin slices your veggies except the cauliflower. Put into a pan with a bit of butter and start to brown and colour your veggies then grate up your cauliflower I to rice and add a teaspoon of tumeric and give a mix put into a microwave safe bowl and cook till tender. To make the sauce get a handful of fresh basil and mint and finely chop it add 4 tablespoons of Greek yoghurt to a bowl a pinch of salt and the basil and mint along with fresh cracked black pepper and the zest of the lemon and mix to combine. Once your veg are all cooked through and mushrooms soft then combine your seafood mixture and the juice of your lemon then your ready to assemble. Layer of your cauliflower rice then your seafood and veg mix then some fresh sliced red chilli and spring onion then dable some of your dressing around enjoy.

My version of a keto chicken adobo

Recipe serves 2:
4 X chicken drumsticks
1 bulb of garlic
1 whole onion
1/3 cup apple cider vinegar
1 cup of water
1/4 cup low carb soy sauce
Tablespoon black pepper corns
5 bay leaves
1 teaspoon chilli flakes

Method:
Finely slice onion and put in pan with olive oil and start sweating the onions to get then soft and translucent when the onion is half done finely slice a whole head of garlic and add to the pan cook for a little bit til fragrant add your chicken drumsticks to the pan pushing the garlic and onions to the side to lightly brown the chicken goal is to render some of the fat not fully brown then once you have done that add the remainder of the ingredients and cover with a lid and reduce to a simmer after 15 mins turn the chicken over and put the lid back on cook for a further 15 mins then your chicken is done the veggies are just frozen stir-fry veggies I pan seared in a bit of olive oil you will absolutely love this

How it all started

I was one of those people who always had a strong passion for cooking for the past couple of years i have gotten into smoking different meats and gotten really good at it . People try my food that's been cooked low and slow and they love it. So i thought i love smoking meat more than i like cooking other foods so why not turn it into a business and give people a meal that is the best they have ever had. To me smoking is a pure art form of cooking it takes skill, loads of patience and plenty of time. There is one true saying when it comes to smoking and that’s “ If your looking you ain’t cooking” in everyday cooking its OK to look but when smoking the pit temperature must consistently stay at the right temperature.

Godfather smokers will be available at market stalls and i will post locations on where you can try my food.
