My take on almond flour pasta
2 cups of almond flour
1 and a half teaspoons of xantham gum
2 eggs
1/2 teaspoon of salt
Big pinch of black pepper
Meat sauce:
250g beef mince
1 can whole peeled tomatoes
1 carrot
1 stick celery
1 bulb garlic
1 onion
1 large handful of fresh basil
Recipe:
To make the pasta combine all the ingredients together and give a good kneed then wrap in cling film and let it rest in the fridge for an hour.
Meat sauce:
Soften onions and garlic fine dice carrot and celery and put in pan cook till tender then add mince and cook till mince is browned add the can of tomatoes and break up tomatoes with wooden spoon fill the can with water and add to the pan then get a handful of fresh basil and tear it up and mix in then let it cook and reduce.
Roll pasta out into long skinny sticks and cut off pieces like gnocchi once all cut into that shape grab each piece and squeeze with your finger a little to make an indent for the sauce to stick to get a pot of boiling salted water and cook till all floating then strain it out and add to your meat sauce and cook for a few mins and keep tossing and moving the pan to coat everything evenly.
