Hello everyone ! It's been a while since I have "posted" on this social media thing haha.
I have been forced out of semi retirement by a young French girl in town called Sara, we thought it would be fun to combine the cultures and cook up a fusion of flavours.....hopefully not confusing...!!
We have even got live Italian music.

Well it has been a long while since posting anything on my site....life just took over so this sort of stuff just goes by the wayside.
A lot of cooking and more cooking,growing tomatoes,eggplants ,cucumbers and loads more.
I am a happy little Italian Nonna, the little things in life....I was really hoping to show off my tomato crop but alas can't find the photo..grrr
Well hello every body, it has been a long time coming, I am elated to announce the next Italian Degustation on the 8th December at 7 pm @ Dorrigo Showground. Perfect night to bring your staff for your xmas party or with friends or by yourself it's all done for you food,entertainment you just bring the bottle !! So get in early and avoid being hungry !!
Here"s a little story about how cold it gets in Dorrigo, I know it"s not about food but it"s good to have variety. Down Moonpar Road on Saturday morning around 7 am..very.very.very frosty minus 4 friends getting in their car noticed something green on the inside of the door....it was a green frog frozen solid, poor frog. So when someone asks how cold does it get in Dorrigo,,,cold enough to freeze a frog !!🐸
Well what more can I say apart from a picture says a thousand words. It really was a fabulous night. thank you to all for the support in coming, in the kitchen, these nights can only happen with everyone's support. There will be another......thinking a long Sunday lunch !!
What a weekend on top of the Dorrigo mountain ! There were people,there was music,art and there was FOOD !! The second Italian degustation was a night of talking,eating,singing and stories. These nights not only feed the bellies they feed the soul !! Thank you to Giri for the brilliant entertainer that you are, thank you to my friends Kate,Penny and Matt C.for helping in the kitchen, and daughter in law Alissa for the meanest washer upper there is !! I had 2 of my nieces come up from Sydney for the weekend and to have them involved and loving every minute of it....well...it made me cry..what a surprise !!!! and Michael, I lead the dance next time OK. Carlo for saving my shoulder and slicing the finest salami..yeah A very big thanks for the support from all of you who came. Photos will follow in the near future. until the next one, can't wait !!
PASQUE or EASTER 31st is the next Italian Degustation. Remember the last one was booked out very early..so don't hesitate !
Putting it out there for the next Italian degustation.....March 31st.....that's Easter weekend......watch this space.
Isn't it a satisfying feeling when you put yourself out of your comfort zone and then it all works out !! Well this is what happened to me when I agreed to cater for a wedding for 90..all good....but then I said yes to making the three tier four layered wedding cake !!!!! oh lala......but look....it worked and tasted amazing.....oh I also cut the dowels for the supports between each tier.....The layers were chocolate,double coconut, with raspberry in between each, covered with white chocolate ganache.
Hello, it's been a little quiet on the public face of FingerPinch but busy at home catering for the traditional mob who come very new year to hang out and chat,laugh,eat,chat,eat.drink,eat....got the picture. Here are some little pics of the Italian high tea I did at the Uniting Church hall on Sunday for the amazing Italian band that played. This type of cooking is generally out of my comfort zone,,,,,but.....I did it. Just so you know what you missed out on.....Crostoli,Ricotta & chocolate pastries,Almond,pinenut,apricot cake. Balsamic,olive oil,citrus mini muffins. A savoury dish sage,zucchini flower and copa fritters. Some cold fruit drinks to top of an excellent afternoon.
And the night began....food..song..laughter...a tear or two of joy......
Next was the preparation for the big night.....mixing a little roasted capsicum...making the breadcrumbs....from scratch so drying the unused bread in the bottom of the combustion stove then in the processor.....Kate folding the serviettes..into fans mind you !! Joh doing a little Madge work....
I have now found a bit of time to put up some pictures from last Saturday night which was the launch of Italian degustation long table. I do have plans to do another one but not as soon as I had planned...other plans get in the road !! I have a wedding to cater for on the weekend that I had planned to do the next one..oh well......watch this space...Here I am loaded up and ready to go....more to come..soon...nothing like a bit of suspense.

It has been a little time since my last writings but last nights salad inspired to share and hopefully make some of you drool!! All these ingredients came straight from my garden,the oranges from friends down the road. The salad was dressed simply with olive oil vincotto from Italy......just a little skite.
Here is a pic of on of many dinners at the long table at home,when I do my pop up eating experiences at the Dorrigo show grounds the theme will be "long tables" so it will give the feel of one big happy family !!!

An exquisite tomato and bread dish I salivated over in a tiny family run eatery on top of a mountain in Italy. This is a dish I hope to replicate in a pop up Eating Experience happening soon in Dorrigo.
