Emmanuel “Manny” Cohergne was born and chef trained in France.

As a young chef with a passion for fine food and travel, Manny soon moved across the channel to England, working under the watchful eye of celebrity chef Gordon Ramsay. Not long before his 21st birthday Manny succeeded in securing a position at the prestigious Restaurant Patrick Guilbaud, a 2 Michelin star restaurant in Dublin, Ireland.

After spending over 3 years as a chef onboard luxury cruises, Manny returned to Ireland and became head chef of Castle Grove Hotel in Letterkenny, winning awards for the hotel and became the weekly food writer for the Donegal news at the age of 24. Wanting to explore the world further, Manny arrived in Sydney in 2012 and became head chef of The Winery, a busy restaurant in Surry Hills before taking on a bigger challenge as head chef of the Lorne Beach Pavilion, running both a café kitchen during the day and a fine dining restaurant at night. Here again, Manny flourished winning multiple awards and secured a final spot on the Golden Plate Awards in the Best Chef and Best Casual Dining Competition. Manny moved interstate to Queensland after securing a job as Chef de Cuisine at the internationally renowned 5* hotel PALAZZO VERSACE on the Gold Coast, before family commitments saw him return to France indefinitely.

Returning from France to the Gold Coast, Manny set his sights on small business. Starting L’ESCARGOT French Cuisine, offering a range of boutique products such as French Provencal Vinaigrettes and French Marinated Olives. It wasn’t long before Manny had made a name for himself throughout the Gold Coast “Foodie” community, where he continues to produce and sell his own French Vinaigrette and Famous Marinated French olives. Chef Manny comes to Gainsborough Greens with a passion for fine food and culinary expertise. After a career filled with excitement and worldly adventures, Manny is looking forward to the more relaxed atmosphere of Gainsborough Greens, where he can offer our diners a world of culinary experience with the serenity of a lagoon and garden views. As Manny settles in you can except casual and modern new menus to emerge, using French techniques with only the best Australian products.
