My Crispy Skin / Oven baked Salmon fillets cooked on a bed of leeks , white wine, salt & pepper, fresh lime ..served with :
• duck fat roasted potatoes
• sautéed butter Asparagus
• herb salsa : parsley, tarragon, chives, shallots, chilli, while wine vinegar, a little sugar , salt & pepper and olive oil . (Refrigerate for a hr or two so it really infuses)

My home made meatballs, super tender and soooo delicious!
• Meatball mixture: lamb mince, breadcrumbs, milk, egg, fresh basil, smoked paprika, parsley, Italian herbs, onion, garlic, Parmesan cheese, salt & pepper. Cooked for 15-20 mins in the oven on 180 degrees.
• Sauce: olive oil, diced tomatoes, passata sauce, red wine, Italian herbs, diced Spanish onion, shallots, white sugar, garlic, salt & pepper.

My middle eastern Lamb Cutlets.
• Marinated with : garlic, shallots, parsley, cumin, paprika, turmeric, salt & pepper, lemon juice and a little olive oil .
Served with :
• Roasted Potatoes with lamb fat, parsley and salt
• Spanish onion , sumac and parsley salad
• Crispy potato skins seasoned with cumin, parsley , paprika and olive oil.
Finished off with :
• crispy parsley flakes , home made parsley oil & burnt lemon

• Sauce : garlic, shallots, mixed exotic mushrooms, white wine, salt & pepper, fresh thyme, fresh rosemary, cream , pasta water & truffle cheese.

• lamb mince
• onion
• garlic
• parsley
• paprika
• all spice
• extra virgin olive oil
• salt and pepper
Tomato Butter :
• tomato paste
• unsalted butter
• paprika
• pinch of sugar
• chilli oil
• pepper

My mix herb rub Lamb Rack cooked med / rare (the way I like it , also with the fat) .
Lamb Rack Rub :
Lime zest , coriander, mint, parsley salt & pepper , panko crumbs & olive oil .
Served with:
• Roasted vegetables, coated with pan lamb fat jus , drizzle of white wine , herbs and salt & pepper .
• Chimichurri Puree: parsley, coriander, shallots, garlic , lemon juice , red wine vinegar, chilli oil , salt & pepper and olive oil . Blended .
* Note : if you do not like fat you can always trim it off , I would suggest to do it after you cook it as it keeps the lamb juicy and tender when it’s cooking .

Sauce: Dijon mustard, Worcestershire sauce, sour cream , flour, beef stock , salt & pepper .
Wagyu rump sliced into strips. Mushrooms & onion , finished off with fresh parsley.

Topped with my home made pickled shallots (red wine vinegar , water and sugar) and my parsley , lemon zest and juice , garlic and Panko crumbs mixture, lightly blow torched. Finished with fresh rosemary & dried flower petals . Served with grilled sourdough baguette.

My Curry Pakorey
Mixture : Spanish onion , baby spinach, potato, cumin, coriander powder, turmeric ,paprika, salt, oil, dash of water and a pinch of baking soda. lightly fried.
Sauce : yogurt, flower and water mixed then sieve . Then fry off garlic , cumin seeds and fresh diced tomatoes. Add yogurt mixture as well as paprika, cumin, turmeric, coriander powder, salt and some water.
Served with : rice and naan bread.
* if you like chill you can add fresh chilli or chilli oil for some heat *
