So Wednesday nights are Shane’s schnitty nights with the boys.

I was craving some JFC and came up with this grain, egg, nut, soy, and wheat free fried chicken recipe (buttermilk, tapioca starch, home grown chili powder, pure sunflower oil)

Totally naughty, but so good!

The Sprout garden is in full swing, plentiful Chili harvests over the past couple of weeks with some spicy results.
Chilis are hardy AF and grow like crazy in late summer here in the Snowy Mountains

Here I have dehydrated and ground some Thai Green Chilis and Jalapeños (not enough Jalapeños for a full serve just yet.. but I got impatient and simply had to pick a couple for that bouncy and peppery taste!)

The combination is wholesome and peppery and full of flavour - as well as that good old fashioned burn to punch you in the mouth hole.

Chillis are a fantastic anti-oxidant, stuffed with potassium and a promote a great metabolic boost.

Slide a bit of chili into your breakfast before a big hike or run, to get ya metabolism kick started and ready to absorb the rest of the days nutrients.

Cracking yield of Chilis this weekend. Getting ready to batch up some firey hot sauce 🔥

Stock take!

Every day when I cook, I throw my chops and entrails (veggies only!) into a big old freezer bag.

For meat and fish versions, just add whole chicken carcass or prawn heads and tails… or both.. depends on how carnivorous your household is!

When that bag is full, I throw it’s contents into a ziplock bag and just keep adding to it until said bag is full.

Once full, I throw it all into a large slow cooker with some water (and herbs from the garden) a pinch of salt, a generous amount of black and white pepper.

Leave to go to work for the day, come home to an awesome homemade stock.

Ready to be used in soups, curries, anything that requires boiled water.

Healthy, cheap and economic.

All leftover cooked bits can be thrown into your compost bin (best to remove ’bits’ before adding salt if you plan to compost)

EDIT -

Whenever I am at the coast, I buy fresh prawns and fish and use the heads, tails and shells to add to this mix for a fish stock and this is AMAZING.

Roasted Pumpkin & Pepitas with Kale Chips, Ghee Tempered Cumin seeds, sprouted green mung beans, fresh Chili and spring onion.

All topped off with our Sprout Signature Kimchi.
