When in China greetings are made by asking "chi le ma?" which translates to 'have you eaten'? It's the equivalent to asking "how are you" in Australia.

The first time I encountered this, it made so much sense to me. It's a question we can act on. No matter who the encounter is between it shows a common cause and concern. If the answer is no, then food shall be sought, making the interaction more personable, if the answer is yes, then further curiosity can ensue such as 'what did you eat' and 'how was it' and the conversation can move on. I just love it!

Kunming, the capital city of Yunnan, is known as the city of eternal spring. Thanks to its steady climate which allows flowers to bloom year round. One of the most famous markets in Kunming is the bird and flower market.

Flowers are consumed in all shapes, sizes and colours in Yunnan. From 1m tall taro flowers to broom, rose and pomegranate flowers. There are over 160 varieties of edible flowers, all with distinct characteristics.

This dish comes as a welcome delight here in Tasmania as our vegetables all bolt to flower. Stir Fried with garlic and salt and tossed with tea stained quail eggs from the flowers are sweet and fragrant with hints of bitterness. The eggs bring a richness to the dish!

Salted, dried and shredded beef salad. The beef is pounded in a mortar and pestle with fresh garlic and fermented chili's. Loads of fresh mint, flowers and peanuts are tossed through. It's salty, sour, spicy and fresh.

Mint is a staple herb in Yunnan. It is always paired with beef and often with fish too. A surprisingly good combination.

This dish is from the Dai minority in southern Yunnan. Large wooden mortar and pestles line the street food markets where fresh salsas, grilled vegetable smash-ups and zesty salads are pounded together. It's quite a sight!

Tea adds depth and complexity to a meal, some teas such as puer also aid with digestion and help to cut through greasy food. Rich tannins, and bitter sweet notes excite the tongue enhancing the desire for more.

We source our teas directly from passionate and authentic producers in Yunnan. The tea cake from the second photo has been hand pressed, using cloth, a rock and the strength of man. It is a white tea and comes from an ancient tea tree some 10m tall. One family tends to this long forgotten ancient tea grove atop a wild mountain. They hike up with a wooden ladder and climb the trees, plucking new shoots and young leaves by hand to fill a basket, before processing.

This tea cake can be aged when kept in the right conditions and will develop sweet, soft characteristics and a pleasant fragrance with no bitterness. This tea oxidises as it ages meaning the colour and depth of flavour will get stronger as time passes
