Gourmet Guru - Entertain Differently
Last week, Chef Sonia led a team of 10 of our top chefs and food service assistants to the Melbourne Exhibition and Convention Centre, where they provided catering services for Fettayleh Foods at the Fine Foods Australia trade event.
Over the course of four days, the team prepared an impressive 9,000 charcuterie tasting plates and 4,500 hot dog samples.
It was a hugely successful and enjoyable experience, leaving the team eager to return next year. π
We were thrilled to cater Surrey Park Swimming Club's Presentation Night and 120 Year Anniversary Dinner at Box Hill Town Hall on Saturday night.
Over 320 guests enjoyed a magnificent three course meal all hand made and absolutely delicious.
It was a massive undertaking, but by being super organised and having the best of the best on our team, it was a flawless event.
Special thanks go to Lucinda, Phil, and all of the Surrey Park Support Staff on the night.

Check out the epic grazing table we created for Charlie & Melanie's wedding - our biggest yet.
The magnificent culinary display catered for over 300 hungry guests, spanned more than 6 metres and featured an array of delectable handmade finger foods, including sushi, traditional Peking duck wraps, karaage chicken bao and Tennessee-style pulled pork brioche sliders.
The bride, groom and their guests were thoroughly in awe of the presentation as well as the exceptional quality and freshness of our catering.

Our catering team provided the social club members at Fountain Court Retirement Village their special monthly luncheon yesterday.
The residents enjoyed a hearty meal featuring homemade beef and vegetable sausage rolls, baked potatoes with sour cream, crunchy tri-colour coleslaw, fresh garden salad, and soft dinner rolls with butter.
For dessert, they savoured a warm spiced apple and oat crumble, topped with creamy vanilla custard and whipped cream.

Despite handmaking all of our finger foods, the rapid growth of our business has required us to outsource production of a few items, as we simply lack the time to make everything ourselves but don't want to loose the quality or the fact it is handmade.
For nearly three years, we have collaborated with Maria at Solo Arancini. By using the Gourmet Guru recipe, Maria hand-crafts our Signature Fire-Roasted Red Pepper and Provolone Arancini.
Served with our homemade garlic aioli the golden Italian rice balls offer a delightful contrast of textures - a satisfying crunch on the outside gives way to a gooey provolone center, all complemented by the subtle sweetness of charred peppers.

POV - Setting up a grazing table for clients makes me nervous, as I'm driven to create an amazing display. I worry that if I wasn't nervous, I'd become complacent.
However, I take too much pride in my work to let that happen. I'm determined to deliver outstanding presentation each time.

While it was a significant initial financial outlay, it proved to be transformative, allowing us to retire the eleven domestic fridges and freezers that cluttered our storeroom.
