Tomato chicken meatball pasta for mid-week dinner!
I used whatever I had in my kitchen and this is how I made it-
In a food processor, I minced garlic and chicken breast. Then added salt, black pepper and divided in small portion,and make balls.
In my chefpan, I heat olive oil, add chicken balls and smear them each side for a 15 to 20 seconds and remove from oil.
Then, I added chopped garlic, and chopped brown onion, fennel seeds and little bit butter, sautted everything till fragrant.
Then added store bought tomato pasta sauce and simmered for 5-6 minutes.
Oh, forgot to mention, I started boiling the pasta at the beginning. I had shell pasta in my pantry, so I used them.
By the time, my sauce was ready, Pasta was boiled too!
So, I added little bit of pasta water and all the boiled pasta, simmer for a few minutes.
Added some basil leaves and pre shaved parmesan cheese too!
The sauce was very sour, to adjust the taste, I added bit of sugar and blackpepper too.
If you read till hear, you may understood I was in a mood to cook something really effortless, quick yet tasty.
Still it took me 20 minutes to put together everything and now, after dinner, itâs Biswaâs duty to clean the kitchen and dishesđ
