This week, try this bowl of comforting and flavourful Sweet and Spicy Tahini Veggie Noodles!
Ready in just 30 minutes, this vegan dish is packed with everything you crave in a weeknight dinner.
The star of the show is a homemade sauce that bursts with sweetness, spice, and the rich nuttiness of tahini.
This recipe is also incredibly customizable! Add tofu, chicken, or your favourite protein for a complete meal. Plus, it’s a hit with kids – my daughter especially loves the touch of spice!
Here is the recipe:
Ingredients:
(Sweet & Spicy Sauce)
3 tablespoons soy sauce
⅓ cup tahini (homemade or store-bought)
2-3 tablespoons brown sugar or honey
½ tablespoon rice vinegar
1 tablespoon fresh grated ginger
2 cloves garlic, minced
1-2 tablespoons hot chili paste (like sambal oelek)
2-4 tablespoons water
(Veggies)
1 tablespoon sesame oil (preferably toasted)
1 large head of broccoli, chopped into florets (about 4-5 cups)
1 cup sliced peppers
Salt and pepper to taste
(Noodles)
1 packet Rice Noodles out Linguine pasta
(For Serving)
Red pepper flakes (optional, for extra spice)
Toasted sesame seeds
Instructions:
In a bowl, whisk together soy sauce, tahini, sweetener, rice vinegar, ginger, garlic, chili paste, and water. Aim for a pourable consistency (like salad dressing). Set aside.
Heat sesame oil in a pot over medium heat. Add broccoli and peppers, season with salt and pepper. Cook for 6-8 minutes, stirring often, until slightly tender-crisp and slightly charred.
Meanwhile, prepare rice noodles according to package instructions. Drain and set aside.
Add the noodles and tahini sauce to the cooked veggies. Toss to coat everything evenly. Garnish with sesame seeds and extra red pepper flakes (if desired).

Quick and Easy weekend recipe🤩
Delicious pear puff pastry tart with cheese, chilli,toasted walnuts, and a drizzle of honey.
This gorgeous, easy pear tart recipe makes the perfect appetizer for any dinner party.
Impressing friends & family will take just 15 minutes!
Pear Walnut and Cheddar Puff Pastry Tart
Ingredients:
1 sheet frozen puff pastry
1 cup Sharp Cheddar Cheese grated
a pinch of chilli flakes (optional)
1 pear thinly sliced
honey to drizzle on top
roasted walnuts to sprinkle on top
egg wash for the puff pastry
Method:
Preheat the oven to 200 deg c
Place the puff pastry on the prepared baking sheet
Sprinkle grated cheddar cheese, leaving 1 inch layer on the sides.
Add the sliced pears
Use a pastry brush to brush egg wash on the edges of the pastry .
Bake in tho oven for 20-25 mins or till golden crust
Remove from the oven and sprinkle honey and walnuts
Transfer tart to a cutting board and cut into pieces and enjoy warm

Everyday I am trying to add more iron rich foods to my diet .
Dates are so delicious , rich in fibre and a great source of iron 😊
Tahini and Walnut stuffed dates are truly delicious and really help to curb those sugar cravings .
The nutty and slightly savoury flavour of tahini really balances the sweetness and caramel flavour of the Medjool date.
These are so easy to make and store with just a handful ingredients.

Ingredients:
Medjool Dates
Walnut halves
Tahini
Flaked Sea salt
Method:
Place all your pitted dates in a tray.
Stuff these with Walnuts and top up with tahini and flaky sea salt
Refrigerate

A Sunday Reset!!!
We are back to school this week..Really Exciting and Busy weeks ahead.
My son starts school this year and my daughter goes to Grade 4…Cant believe they are so big already.
I gave myself 30 mins of meal prep time today.hoping this will give me a chance to get a head start to the week.

Healthy and Easy School Lunches..Save and Share
Quesadillas are such a fun and easy school lunch.
And I get an opportunity to sneak in lots of veggies through this roasted Veggie sauce..
Always make a large batch of this versatile veggie sauce and use it in pastas, burgers or wraps…Perfect for freezing.
So Try this recipe And remember to share with another busy mum who wants healthy and easy school lunch options for their kids.
Here is the Recipe:
Roasted Vegetable and Cheese Quesadilla
Ingredients:
6 tomatoes sliced in half
1 red bell pepper chopped into chunky pieces
1 medium zucchini chopped into chunky pieces
1 large red onion peeled and sliced into 8 wedges
1 carrot thinly sliced
2 cloves garlic peeled and minced
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
1 tsp dried oregano
1 tsp paprika
1 cup sweet corn kernels
1/2 cup mozarella cheese
Tortilla wraps
Method:
Preheat the oven to 200 deg and prepare a tray with baking paper
Arrange the prepared vegetables on the tray and sprinkle salt,pepper,dried oregano and Olive oil
Roast till the veggies are cooked through and nicely charred (about 20 mins)
Take the vegetables out of the oven and let them cool a bit.
Once Cool,Blend to a fine sauce .I use a nutribullet for the same
Adjust the Seasoning.
The Sauce is ready
You can use this sauce for pizzas, pastas and quesadillas
Place the Tortillas on a work surface.Add a large spoon of the veggie sauce .Add some sweet corn if you like
Add cheese and fold the Tortilla
Set a nonstick skillet over medium heat. When hot, place an assembled quesadilla in the pan and cook, flipping once halfway through, until both sides are browned and crispy and the cheese is melted. Repeat this process with the remaining quesadillas.
