Lots of techniques on this dish. smoked beef rib marinaded in ginger and dates with Crispy sweet potato on sweet potato puree with pineapple and red onion pickled on mint labneh.
I really like the sweet potato pairing of making the perfect sweet potato slice to roast and then puree the scraps, super flavourful. Also pineapple in every pickle ever ๐Ÿ๐Ÿ

Pepper berry kangaroo carpaccio with mint, parsley, almond and soy cured egg yolk.
I always thought kangaroo richer flavour would make great carpaccio and I'm pretty happy with it. Super rich and super flavourful.

Prosciutto with grilled yellow fleshed plum, chicken liver pate, fejoa jam, super fruity aged soft cheese and fresh bread.

First time I've made anything with fejoa and it is such a compliment to pate.

From start to finish. Using up some spent basil and parsley from the garden to make a pesto for some homemade gnocchi. Add some prosciutto and roasted tomatoes and shallots and you have a classic delicious meal. I always try incorporate something from my garden for private dinners ๐Ÿฝ ๐Ÿ˜‹
