BLUE MIST BBQ competed at the Swan Settlers Market - Smokin in the Valley May ‘24 last weekend and what a great weekend it was. Good to see so many regular teams and new teams getting involved to help fundraise of Lifeline.
Huge thanks to BBQS of the World for providing our Rubs, Sauces and FYRO Premium Charcoal to complement some great meats from Tenderwest Meats and The Corner Butcher.
We came 5th overall from a field of 14 teams. No trophies to take home this time but we won enough Honey to start brewing mead to drink at the next event. 😂
Thanks so much to Roger, Karina and Rob for running a perfectly polished competition and it was a blast catching up with our BBQ family.

Hey guys, BLUE MIST BBQhad a great time at Mrs'Sippy BBQ competing in the KCBS Australia sanctioned one meat competition. It was really good to catch up with all our friends in the American BBQ community, plus see some new teams competing.
Big congratulations to Cumbia BBQ Pit Bull Smokers Aussie TongMasters Chat in a Meating and D&D BBQ for taking trophies home for all their hard work.
BLUE MIST BBQ enjoyed the ancillary Burger event and was happy to take 3rd place with some other tasty options on the menu.
Huge thanks to Jules and Glenn 😘 for putting on a great event and beautiful trophies and it wouldn’t be complete without the help and support of Karina and Rob, our KCBS officials keeping them judges in line, 😀
I can’t forget to give a big thanks to Doug of BBQS of the World for providing all our sauces, rubs and coal for the event.
We really look forward to more new teams coming to try their hand at the next BBQ event with Swan Settlers Market

BLUE MIST BBQ competed at the Weemala American BBQ competition this weekend which is a great weekend that you need to add to the calendar. Mondo Community Warriors fund raising event for Lifeline has everything for the family to enjoy with all the money going to a great cause.
BLUE MIST BBQ missed Michael Johnson as he needed to work but Mal stepped up to help out. We placed 2nd in Chicken and got a call up for 4th in Pork Ribs, sorry no photos of the Ribs.
Huge thanks to Doug at BBQS of the World for supplying our BBQ equipment and coal from FYRO Premium Charcoal, plus big thanks to Cutting Edge Butchers for supplying our Rubs and Chicken. We highly recommend checking these guys out.

BLUE MIST BBQ competed at Smoking in the Valley this weekend.
We had a shuffle of the team this weekend as Michael did the prep work on Saturday, then flew out Sunday for work and My beautiful wife Venessa did a great job with the final cook and presentation on Sunday. BLUE MIST BBQ came 4th Chicken, 4th Ribs, 9th Pork and 3rd Brisket with a 4th Overall score for the day.

So BLUE MIST BBQ joined Montebello Island Safari for a 1 week fishing trip. A great time was had by all and plenty of laughs while trying to pull up some monsters of the deep.
Montebello is a beautiful part of the world and I highly recommend the visit.

Wow! What a weekend for BLUE MIST BBQ. Huge thanks to Ryan's Quality Meats Stone Axe Wagyu and The Corner Butcher for providing our meats.
We couldn’t have achieved such a great result without the help and support from BBQS of the World. All our flavours were supplied by Doug and we highly recommend getting in contact with him, for anything you need for BBQ.
We would also like to give Smokin' Steve's BBQ a big thanks for helping us to hone in our cook and techniques.
Lastly I would like to thank my best mate Michael. We have been best of friends for over 40 years and I look forward to many more laughs and good time cooking competition BBQ’s with you.

BLUE MIST BBQ had the privilege to cook for Neil’s 50th birthday party.
Stone Axe Wagyu provided some fantastic 8-9+ Wagyu briskets cooked over FYRO Premium Charcoal that were a real crowd pleaser. Fantastic marbling.
We also provided some jalapeño poppers, Garlic prawns, Chicken wings, mozzarella meat balls, Pork ribs and more.

Amongst the Cold and Rain over the weekend, we had a little ray of Sunshine, that was truly amazing and could not be fully enjoyed without sharing it with all the teams of the BBQ competition.

BLUE MIST BBQ had another great weekend at Swan Settlers Market competing in the KCBS sanctioned event for Smokin' Charity BBQ Competitions. We would like to give a big thanks to Jules and Glenn of JAGRD Wood Fired plus Karina and Rob of KCBS who are the back bone behind organizing such a big weekend of Fun and Fund raising.
It was great catching up with all the teams and look forward to sharing more laughs at Chidlow 9th-11th Sept.

BLUE MIST BBQ would like to give a huge thanks to Doug BBQS of the World, Nathan The Corner Butcher, Josh Ryan's Quality Meats, the team Stone Axe Wagyu and FYRO Premium Charcoal for providing us with the best quality produce and products we could every hope to work with. I hope the photos attached do it the justice it diverse.

We didn't manage to take any trophy's home this weekend but as always, have grown in our knowledge and team work, to edge us a little closer to the top of the leader board, next competition.

It’s that time again, another competition. If your not doing anything Sunday, come down to Swan Settlers Market to have a look at the teams competing in in the valley. For a small donation on Sunday you get to taste some of the best bbq you will ever taste.
Thanks to BBQS of the World, Ryan's Quality Meats, The Corner Butcher and most importantly our families for the support. Let’s hope the weather gods aren’t too upset with us, and the BBQ gods are great to us assist with great cooks.

Okay I know this is not BBQ so feel free to shoot me.
Picked up a Fray Bentos Steak and Kidney pie on special from Aldi the other day and threw it in the oven tonight.
I’m sure to get some haters but this small tin of deliciousness and goodness took me back to my early teenage years, working on the farm, feeding just myself in a singles donga where I lived off these Pies.
So good…..👍

Another weekend another competition. We were at Weemala Orchard for “Smokin Charities, Smokin with Weemala One Meat Competition ”. It was a great cause with all proceeds going to Lifeline, fantastic cause that is needed more and more during this time.

We entered both categories, chicken and ribs this time around. Even though we didn’t score great we where happy with our cook.

I got the ProQ set up with FYRO coconut briquettes yesterday to do a Pork Rib test cook in preparation for next weeks KCBS sanctioned BBQ competition at Weemala. Trying some new flavours and sauces to hopefully give us and edge.
All went well and the meat was super tasty and tender bite. Fingers crossed the judges like it to. Big thanks to Doug of BBQS of the World for the FYRO, that half basket of briquettes lasted 6 hours.

Tried my new injector out with Cattleman’s Butcher house brine on a small Pork Belly and rubbed with Mississippi Grit.
Big thanks to BBQS of the World for the Brine and Rub.
The end result was the bark came out a little salty, but still a tender, juicy bit of Pork thanks to the fat render and brine.
Well that’s what test cooking is all about and next time will back off a little on the rub.
Grilled the Pork, fat side up for 30minutes and continued the cook to crust the meat for another 30min. Foil boated and set the heat to 160c for another hour, till the meat was probe tender.

Played with flavours today, to baste these tender Pork Belly Burnt Ends in today and came up with Maple - BBQ sauce.
As Matt from Meat Church BBQ says, “I ain’t here to help you lose weight” and when it tastes this good, you won’t be stopping at just one.
Another perfect fire from FYRO Premium Charcoal again. With fire management being made so easy using FYRO, had time to watch a few movies while completing this cook.

Had 2 trial cooks today, but what else do you do on a Sunday. Drum had 2 racks of pork ribs on hangers. 6 hours using the 3, 2, 1 method. Not enough meat on racks so didn’t turn out too good. Taste was nice on what we had. Second cook chicken thighs on pro q bullet for 3 hours. Yes I have done chicken heaps but tried without scrapping skin this time. I can see more scrapping in my future, haha. Chicken tasted good but no bite through

Picked up some FYRO Premium Charcoal from Doug at BBQS of the World, this stuff is great. 6 hours into the cook and I still have 1/2 a basket of coal to burn. It’s so clean, the only smell is from the meat. The Bullet smoker hit 275f and flatlined. This is the best coal I have ever used.
Doug I will be heading back to collect another bag of the Coconut briquettes. Last photo is at 8 hours.
In the end, I gota full 12 hours out of one basket of briquettes, Amazing!
