I started cooking for hubby’s big birthday party on Saturday at the beginning of the week. We have 65 guests coming! The chicken wings were scheduled to start prepping today so stage 1 is done. They are now happily marinating in the fridge waiting to be cooked again in the oven. They are looking a bit #droolworthy already!
prepping for a huge party and spreading out the cooking over a week means that only a few things need to be done each day and on the night it’s more about heating and serving. Leaving more time for the hostess, me, to mingle and look fabulous 😊

lockdown cooking can be a challenge but it’s a great way to go through the fridge/freezer/pantry and have a good old clean out! I have some leftover fruit mince from Christmas so I think a fruit cake is in order 😃

to accompany our Parmesan encrusted fillet steak we had for dinner last night, I made a red wine jus with #nativethyme. It’s such a beautiful complex flavour that you don’t need much of it to take the sauce to the next level. I am loving cooking with bush tucker, it’s giving my taste buds a surprise 😊
this is what you make when you have some leftover roasted tomato soup, a bit of mince that I made into meatballs, chorizo sausage and some extra vegetables - soup hotpot! I served it with some leftover scones that I sprinkled with Parmesan cheese. It was delicious 😋
