When we talk about ingredients in cooking that have a long history, honey is one that tops my list.
The Egyptians were one of the first to produce honey, using them many ways not only in cooking but as well as in their medicines.
Here in Australia, we are very lucky to have a great range of fantastic honey. For this meal box's dessert, I will use a local one (specifically 6006 from @postcode_honey). It has beautiful floral notes, which matches perfectly with the lavender infused crรจme anglaise.

~~~ The Art Of Curing ~~~

Curing was a method initially used for the purpose of preservation and to lengthen the shelf life of the protein.
Now, it not only does that, it is also a way to add extra flavour to it.
A standard cure mix is a combination of salt and sugar, but I enjoy adding other seasoning, citrus or herbs to it depending on the protein used.
For FATHER'S DAY weekend, in our entrรฉe of cured beef, I'll be adding a mix of different peppercorns to give it a good kick.

What is the difference between a pie and a pithivier? It is the type of pastry used as well as the texture of the filling itself.
Whilst a pie is usually made with shortcrust, the pithivier is made with puff pastry.
The filling of a pie is generally either shredded or minced whereas in a pithivier, it usually contains chunky meat or vegetables.
What they do have in common is that they are both a delicious, hearty dish, perfect for winter!
