~~~ A Nomadic Dish ~~~

A tagine is the perfect vessel to slow cook meat in. Typically used in North African cooking, made from clay. Its conical shape helps seal in all the flavours.

In the Moroccan dining culture, the tagine is used to show hospitality and to encourage sharing.

For this box, I will cook lamb "tagine" style, and if you are lucky to have a clay tagine at home, you too can present the main course in it! 😃

We don’t have to wait for Halloween to enjoy the pumpkin!

Originally from North and South America, its seeds travelled the world, so now we can find it nearly everywhere.

You can do nearly anything with it. It’s one the most versatile fruits available (yes, technically it’s a fruit!!)!

This week, I will pair it with goat cheese, which is, in my opinion, a great match!

~~~ It Takes Two To Mango ~~~

Can't believe we are almost already at the end of the 1st week of 2025! Hope everyone enjoyed a nice, relaxing Christmas & New Year celebrations with your loved ones!.

Every summer, I eat a lot of mangoes. I love the juicy and sweet flesh. It is even better when it is balanced with a tinge of sourness. My favourite variety is the Kensington, what is yours?

Speaking of sourness, not a lot of people think of green mangoes when we talk about this delicious fruit. It is mainly used in South-East Asian cuisine (think Thai green mango & papaya salad), but it is also perfect for chutneys. I always make a batch when mangoes are in season and keep it in my fridge as it is a great condiment, especially with seafood.

For our first meal box of 2025, I will use green mango in the entrée and ripe mango in the dessert.

South of France is well known for iconic & robust stews like cassoulet & chicken basquaise, which are very popular during their winter months.

Chicken basquaise is a rich & colourful dish made predominantly with tomato, onion, garlic & capsicum.

In next weekend's meal box, I will cook a lighter version, using chicken thigh medallions filled with silverbeet & bacon, which is hopefully better adapted to our hot summer days.

It's inevitable that holidays will always come to an end but boy, the last 5 weeks have just flown by!!! It felt like it was just yesterday when we were doing our last minute packing and heading the airport to catch our flight to Seoul to start our South Korea / Japan 2024 trip.
