Excellent texture, colour and aroma. The sage is a real hit and fish sauce is a real secret weapon.

I overfilled the vessel and when I took the lid off the liquid exploded over my hands giving me a minor burn.

Pig trotters become pig stock which, with added chilli's, pork shoulder and hominy, becomes Pozole!

An absolute banger of a dish out of Mexico, the pork is so tender and the hominy so corny.

Unfortunately the homemade tortillas didn't come close to my expectations and I'm not sure what went wrong. I'm so sorry for that.
